If your steak is thicker, it probably wont reach the desired doneness as fast as a thinner one. One thing that helps ensure you dont overcook your steak, is to leave it out at room temperature for 30 minutes before cooking. If raising the internal temperature needs to take longer because the steak was too cold, it will cause the steak to get overcooked.

What Spices Go Well With Steak

The most common flavoring agents for steak are salt and pepper. While theres nothing wrong with this simple preparation, I find that a blend of herbs and spices really complements the natural flavor of the meat. I recommend using a mix that includes any of the following seasonings.

Though recipes will vary, the spices listed below are the basics for a good Montreal Steak Seasoning. As with all of my recipes, be sure to scroll to the bottom of the post to get the full measurements.

  • Garlic Powder: Be careful that you are using garlic powder and not garlic salt.
  • Kosher Salt: If you dont have kosher salt on hand, you will want to start with only 1 tablespoon of table salt and adjust from there.

  • Black Pepper: The original steak seasoning called for black peppercorns, as most pickling spices do. That said, I love using ground black pepper in this.
  • Onion Powder: Another great layer of flavor, even if you arent an onion lover, you will appreciate this great flavor in the recipe.

Paprika is another one of the savory elements you want to add to the spice blend. Not only does paprika add flavor, but it also helps the steak to caramelize for a superbly colored steak.
