Is It Necessary To Cook The Steaks More After Searing Them
The most important part of reaching the level of doneness you like is the internal temperature. Searing is largely for flavor. If your steak is thicker, it probably wont reach the desired doneness as fast as a thinner one. One thing that helps ensure you dont overcook your steak, is to leave it out at room temperature for 30 minutes before cooking. If raising the internal temperature needs to take longer because the steak was too cold, it will cause the steak to get overcooked.

What Spices Go Well With Steak
The most common flavoring agents for steak are salt and pepper. While theres nothing wrong with this simple preparation, I find that a blend of herbs and spices really complements the natural flavor of the meat. I recommend using a mix that includes any of the following seasonings.

Bolners Fiesta Uncle Chris Gourmet Seasoning
We couldnt go on without sharing this classic from Fiesta Brand.
This is an 11oz bottle, but you can also purchase it in multi-packs if you want more than that. And trust us, you probably will!
Its a reliable gourmet steak seasoning. The flavor is savory with a touch of citrus that doesnt take away from the steak.
If youre looking for a short and sweet ingredient list, this one could be better, but its not overly concerning.
It does contain corn starch, which is something many people prefer not to see, but the flavor is fantastic and you wont be consuming much at a time anyway.
The flavor-enhancing ingredients include salt, spices, garlic, onion, bell pepper, lemon, and more.
The result is a very robust flavor that is somewhat light so that it isnt overwhelming. Its also a great option if you dont want a spicy kick.

Montreal Steak Seasoning Ingredients
Though recipes will vary, the spices listed below are the basics for a good Montreal Steak Seasoning. As with all of my recipes, be sure to scroll to the bottom of the post to get the full measurements.
- Garlic Powder: Be careful that you are using garlic powder and not garlic salt.
- Kosher Salt: If you dont have kosher salt on hand, you will want to start with only 1 tablespoon of table salt and adjust from there.
- Red Pepper Flakes: Even if you are opposed to heat, I would suggest using the red pepper flakes in this recipe. They add a great layer of flavor.
- Coriander: These are the seeds of cilantro plants, and when ground up add a great depth of flavor to recipes. Even if cilantro makes you taste dish soap, you can enjoy this great spice.
- Dill Seed: While this may not be an ingredient you have on hand, you can buy it in small quantities and it is a great addition to this recipe. It would also be great to throw in with my Pickled Eggs.
- Black Pepper: The original steak seasoning called for black peppercorns, as most pickling spices do. That said, I love using ground black pepper in this.
- Onion Powder: Another great layer of flavor, even if you arent an onion lover, you will appreciate this great flavor in the recipe.

Whats In Steak Seasoning
Steak seasoning varies by region, sometimes spicy, sometimes sweet, but the one were talking making is the classic blend of kosher salt, black pepper, garlic powder, onion powder, chili powder, smoked paprika, thyme, and ground coriander generally considered to be a pretty traditional steak blend.
Consider this recipe as your essential steak spice blend. Then you can level up to create your own unique creations adding cayenne for spice, dill or oregano for herbal notes, or even brown sugar for sweetness.
Lets talk about the salt its essential for a solid steak rub. If you cant find kosher salt it tastes just the same if you substitute sea salt or coarse Himalayan pink salt . Make sure not to use traditional table salt since it has a much saltier flavor and lacks that signature crunch you want in a good steak rub.
Can I Use A Rub Or Marinade On My Steak
Whether you are cooking a ranch or Denver steak, you can use a BBQ rub or marinade to season it.
It is worth noting if you marinate your steak, moisture will cling to the surface, which is not compatible with cooking at high temperatures.
The moisture will cause it to cook slowly and team instead of sear.
Make sure you dry your steaks to remove the excess moisture before placing them into a skillet or onto your portable pellet grill.

What Makes A Great Steak Seasoning
A good quality steak really only needs salt and pepper, but the addition of a few other herbs and spices can bring out the best flavors of your steak!
The best steak seasoning always has salt and pepper as the core ingredients. I suggest coarse ground pepper and either kosher salt or Himalayan salt depending on what you have on hand .
The other herbs are used in just the right amount, so as to not overpower or take away from that wonderful steak flavor! Onion powder and garlic powder just go with steak.
If you like to pan sear your steaks with fresh garlic cloves, you can omit the garlic powder or drastically reduce the quantity.
The additional dried herbs, rosemary and thyme, are also herbs that are a classic pairing with steak. Either fresh or dried, both herbs highlight the steak flavors and add a lightness that works well with all of the savory elements in the seasoning.
Paprika is another one of the savory elements you want to add to the spice blend. Not only does paprika add flavor, but it also helps the steak to caramelize for a superbly colored steak.
I use smoked paprika. It’s a spice rack essential for me, and has become readily available at most grocery stores in recent years. If you don’t have smoked paprika, see my notes below on paprika vs smoked paprika and smoked paprika substitution.
How Long Should I Marinate Steak
How Long Should Steaks Be Marinated? Steaks should be marinated in the marinade for at least 30 minutes and up to 8 hours in the refrigerator. After that, I dont advocate marinating since the acidity of the marinade will begin to break down the proteins and render the outer layer where the marinade penetrates mushy, which is not desirable.

Seasoning For Grilled Steak
Steakhouse flavor is not to everyones liking. Flame-grilled, peppery steak can be a little overwhelming and smoky. Thats not to say that you cant grill a steak without it tasting like it came from a steakhouse.
Instead of brushing the steak with barbecue sauce, brush it with some groundnut oil. It has a mild flavor and can withstand high temperatures. Olive oil will heat too quickly over a flame and potentially ruin your steak. Always make sure your meats are cooked to safe temperatures by using a good meat thermometer!
The Organic Depot produces excellent cold-pressed groundnut oil, which is perfect for grilling steak. Its mild taste wont overwhelm the steaks natural flavor. If you like, you can add to it your own blend of ground pepper, kosher salt, and your choice of spices. As a tip, paprika always goes well on a grilled steak, as does chilli powder if you want a spicy kick!
Make Ahead Steak Seasoning
Another plus about this recipe is that it can be made ahead or made in large batches and saved for later. That way youll always have the tastiest seasoning ready for any BBQ or steak night.
Or in my case, once a week for Lt. Dan.
In fact, its a great edible gift to share with friends. Its a thoughtful and flavorful gift that keeps on giving.

Preheat The Gas Grill
To cook the perfect steak tip, your grill needs to be hot I mean really hot! You want to sear the outside of the meat so it holds the flavorful juice inside until you bite into it. Therefore, your grill needs to be preheated on high for 10-15 minutes.
The objective is to preheat your grill until it reaches 500°F.

Can I Make This Steak Seasoning Ahead
You sure can! If you know youre going to be running short on time, just make it up and mix it together. That way when its time to add it to the steak, its all ready to be done!
We like having this on hand, mixed up, in our pantry so whenever we want a perfectly seasoned steak we can just rub it on and prepare our steak!
Ideal Thickness For Sous Vide Steak
The thickness of a steak is not just about portion control. Without an adequately thick steak, its very difficult to get that perfect contrast between exterior and interior. Very thin steaks will tend to overcook before they can finish developing a nice crust, even over the hottest fire you can build. With sous vide in particular, using a thicker steak will help you maintain more of that perfectly cooked interior during the searing process.
I try to get steaks that are at least an inch and a half thick, if not a full two inches. This does mean that each steak ends up weighing between 12 ounces and a poundâthats big, even for someone with a healthy appetite for red meat. But remember this: Its better to cook one large steak for every two people than to cook two smaller steaks. Learn how to share.

How And When To Properly Season Steak
To season your steaks, place them in a rimmed baking sheet and pat them dry with a paper towel. Sprinkle kosher salt evenly over the surface of the meat and let it rest at room temperature for 30 minutes to one hour.
We like to use ¾ teaspoon of salt per 8-ounce steak. Feel free to season your steak with a few turns of freshly ground black pepper, or another seasoning of choice. After your steak is cooked and ready to serve, dont be afraid to add an extra sprinkle of salt. It enhances the seasoning and adds a nice little crunch.
