How Long To Marinate Steak

Beef usually needs at least two hours to adequately tenderize and soak up the flavors of the marinade. However in many cases, the longer you marinate, the better the flavor and texture of the steak will be.

This depends on what cut of beef you are marinating, of course. The tougher the meat is, the longer you should marinate it.

I usually let my steaks marinate overnight at least, and sometimes up to 24 hours.

The ribeye steaks I used in this recipe only marinated for 2 hours. Ribeyes are a more tender cut, and marinating isnt necessary we just love the flavor!

A Treasured Special Occasion Meal Steak Dinner

One of my most favorite traditions that Chris & I have established for our life together is celebrating special occasions & significant moments with a special meal. The one special occasion meal we always come back to is steak dinner. Its probably in part due to nostalgia, as several of our first dates were at different steak houses throughout the Milwaukee area, but I also think theres something inherently special about a beautiful steak dinner.

Over the years Ive learned that its pretty darn easy to make a beautiful steak dinner at home. Thats exactly what were doing today. Now, Im the first to admit that cooking nice steaks at home can be kind of intimidating. But honestly? It couldnt be simpler once you get the hang of it. The secret? A trusty ol cast iron skillet!

This Herb Butter Basted Cast Iron Skillet Steak is a recipe Ive been tinkering with for years. It leans on a really straight-forward pan-sear to result in what I think is the perfect steak one that is juicy & melt-in-your-mouth tender with a gloriously crusty hard sear & has tremendous rich flavor thanks to an herb & garlic butter baste.

Absolutely perfect, every single time. Read on to learn more about this Cast Iron Skillet Steak, or jump straight to the recipe & get cookin!

  • First, be sure to remove the steaks from the refrigerator and marinade 1 ½ to 2 hours before cooking. For optimal tenderness, they should be at near room temperature prior to searing.

  • Next, add butter and oil. Melt and swirl it together for another 2-3 minutes until it is shimmering and sizzling.
  • Then, carefully set the steaks in the skillet. Cook them for 2 minutes, then flip and repeat on the other side.
  • Reduce the heat to medium-low. Continue flipping the steaks every 2 minutes for a total of 8-12 minutes, until it reaches your desired doneness.

Key Ingredients For This Cast Iron Steak Recipe & Tips For Choosing The Right Steak:

Note: full ingredients list & measurements provided in the Recipe Card, below

One of the awesome things about making cast iron skillet steak is that you just need a couple of simple ingredients:

    • Steak, of course! More info on choosing the right steak below.
    • Seasoning I like keeping things simple, using just kosher salt& freshly ground black pepper.
    • Oil Its crucial to use an oil with a high smoke point since the goal is to maintain consistent high heat as you sear the steak. I like using avocado oil or grapeseed oil, but any neutral vegetable oil should work just fine.
    • Flavor-boosters Namely fresh herbs, garlic, & butter, which are added at the very end to create rich flavor.

Choosing the right steak: The pan-sear method used in this recipe will work well with a variety of different steaks, so you have some freedom here to choose the steaks youll love most. A couple of things to keep in mind:

Putting The Sizzle In The Steak

Most people love steaks, but these slabs of meat often lack the sophistication that other dishes have. Giving a steak extra sizzle is one of the best ways to dress it up and enhance its taste thats why many restaurants today will serve steaks in a sizzling plate.

The Plate that Gives the Sizzle

Most sizzling plates need to be seasoned, particularly if they are made if cast iron. In Proper Use of a Sizzling Plate, Pinoy Kitchenette gives detailed instructions on how a sizzle plate can be prepared for successful use. The blog says, Before using the sizzling plate, it must be put directly to the burner of the stove to remove the carbon. Let the plate cool down before washing it with water, then wipe the plate using clean cloth. After drying the plate, it can now be used. After using the plate, wash using steel wool pads/scrubbers and soap. Rinse with water. After washing, wipe the plate using a clean dry cloth. After wiping with a clean cloth, wipe again using cooking oil to avoid rust during storage. You may also use a tissue to wipe off excess oil

Following these instructions will prevent your sizzle plate from rusting. These steps are to be followed each time the plate is used, but the effort is well worth it when you hear the sizzle as you serve an otherwise boring steak.

Baker reminds sizzle plate users to make sure the food has some moisture when it is placed on the sizzle plate this is what allows it to sizzle.
