For a 1 1/2-inch thick steak, here are the general cooking times:

  • 6 to 8 minutes for rare
  • 7 to 10 minutes for medium-rare
  • 10 to 12 minutes for medium
  • 12 to 15 minutes for well done

Note that the USDA recommends cooking whole cuts of beef to an internal temperature of 145°F.

Keep in mind that the thickness of your steak, the heat of your grill, and your desired level of doneness will all impact the time it takes your steak to grill. Use Temperature To Check For The Perfect Steak Doneness

This is where your thermometer becomes the rock star. You leave your steak on this indirect or cool side until you reach your desired temperature. The temps I provide here are a little below the normal doneness temps, but since were going to go back to the hot side, Id rather be under than over done! Here are the temps you need to look for:

  • RARE 118f
  • MEDIUM RARE 125f
  • MEDIUM 135f

If you like your steak well done, you can actually skip this entire two zone thing. Just keep flipping over the direct heat until your steak registers at least 150f internal temperature.

How Long Do You Sear A Steak For

For a 1-inch thick piece, the steak should cook for about 3-4 minutes on each side for medium rare on a relatively high heat gas stove.

While the steak is cooking, dont touch it or move it at all. The steak should only be flipped one time, after that first 3-4 minute period when you check that the bottom is a beautiful golden brown color.

Pat Dry The Steak And Season It

The frozen meat is sure to release water at room temperature when the ice is melting in it. So, the time is to pat dry it with the paper towel until all the water has gone. What if you dont?

First, seasoning with salt will cause an annoying dripping to get more water out of the steak.

Second, it will require more temperature to reach the boiling point without drying the steaks until it fully evaporates and let the meat begin searing/cooking.

Third, the dripping on the grill can damage the grills exterior.

So, make sure your meat is fully melted and then completely dried.

Seasoning the steak is straightforward. Just get your favorite seasoning and salt. Pour a generous amount of salt and seasoning on the meat and rub it.

Is It Necessary To Cook The Steaks More After Searing Them

The most important part of reaching the level of doneness you like is the internal temperature. Searing is largely for flavor. If your steak is thicker, it probably wont reach the desired doneness as fast as a thinner one. One thing that helps ensure you dont overcook your steak, is to leave it out at room temperature for 30 minutes before cooking. If raising the internal temperature needs to take longer because the steak was too cold, it will cause the steak to get overcooked.

Ill be the first to sport a parka and boots and face the elements on a cold winter night if it means a juicy steak for dinner. However, there are times when you just want steak without having to bundle up.

The classic method of pan-cooking a steak involves searing it for about two minutes per side in a hot pan, then sliding that pan into a hot oven to continue cooking. This method works reasonably well, but when dealing with thicker cuts they tend to cook unevenly dry on the outer edges and undercooked in the centre. In order to correct this, its time for a little rethink.

The method below begins in the oven and finishes in the pan. Slow-roasting the steak first allows heat to evenly penetrate the meat, giving the interior a chance to begin cooking without overcooking the outside. Its crucial that the meat is roasted on a rack, allowing all the surfaces to be exposed to air. This helps to dry the surface in preparation for pan-searing, which will result in an unbelievably delicious crust on the steak. Give it a try, youll love it. Turn the steak every 45 seconds or so, until you have built up a nice starting color and the fat has started to render. On your first flip, the steak will look underwhelmingly pale.
