Which Is More Tender Tri Tip Or Sirloin

Both tri-tip and sirloin are fairly tender cuts of meat. However, tri-tip is usually considered to be more tender than sirloin. This is because tri-tip has less connective tissue, which makes it more tender when cooked. So, if youre looking for a really tender piece of meat, go with tri-tip. Enjoy!

Size And Internal Temperature For Tri Tip

Tri-tip roasts range from 1 1/2 pounds to 4 pounds. A 1 1/2 lb roast will serve around 3 people, depending on appetite. I try to buy a 2 1/2 to 3-pound roast so theres some left overs.

The cooking time will vary based on the size of the roast. The best way to make sure the meat is cooked to your preference is to use a thermometer to test the meat.

If you have a digital oven thermometer that can be left in the meat while it cooks, thats the best way to ensure it doesnt over cook.

For medium-rare you want 135° F. For medium its 145° F. Be sure to take into account the 5-10 degrees from carryover cooking . I dont recommend going over 145° for this cut, but if you like well done meat, thats up to you.

How To Grill A Tri Tip

You want to slow grill your tri tip for the best texture. It benefits from a slower cook. Doing this is really easy if you have a grill with a two-sided heating element. You can set the left side to medium high and keep the right side turned off.

You will sear the meat on the hot left side grill and then remove it to the right side where it will receive indirect heat.

During the slow cooking, you dont want the heat of the grill to go over 375° to 400° F with the lid down. This will keep the heat low enough to slow cook the tri tip.

Once the grill is preheated to at least 375° F, set the tri tip on the hot side of the grill and close the lid. Cook the roast for roughly 5 minutes per side to sear the meat all around and get some nice dark grill marks. Searing ensures the rub forms a nice crust and locks in all the juices and flavor.

Once the searing is done, move the roast to the cooler side of the grill, off of the direct heat. If you have a leave-in grill thermometer probe, stick that into the thickest part of the meat and close the lid. Watch that the temperature in the grill doesnt go above 400° F.

The tri tip is done when the instant-read thermometer reads 130° F , for medium-rare. If you want medium, continue cooking to 135° F.

Take the meat off the grill and let it rest for at least 10 minutes wrapped in tin foil. This allows the meat to come up to the proper temperature.

To serve, slice the roast against the grain in thin slices.

    How Do You Tenderize Tri

Tri-tip doesnt need to be tenderized because its already a naturally tender cut. If you want to enhance its flavor, you can marinate it for two to three hours before cooking it. Adding acidic ingredients like lemon juice or vinegar to the marinade will help break down the muscle fibers, making the steak more tender.

Instead of trying to tenderize tri-tip, the best way to ensure your steak tastes tender is to slice it against the grain before serving. Slicing meat against the grain shortens the muscle fibers, making each bite easier to chew.

What Is A Tri Tip Cut

    Grilled Tri

Tri tip is a triangular cut from the bottom sirloin, with 3 tips. Grilling it became a thing in the 50s in Santa Maria, California, and its getting more popular nationwide, but some still havent heard of it. Sometimes outside of California its called a triangle roast. If you ask your butcher for a tri tip roast and he gives you a blank stare, try calling it the California cut.

Its a unique cut that is part steak, part roast. When grilled, you get that perfectly tender, pink center with a browned-to-a-crisp, caramelized exterior, but it doesnt take as long to cook as a full roast. Its also cheaper than if you were to buy an equivalent amount of steak.

    What Is Tri Tip

If you arent familiar with tri-tip, it is a small triangular piece of beef cut from the sirloin. Tri Tip is one of my favorite cuts of beef for feeding my family, especially when it comes to steaks.

It turns out perfectly on the grill every time we make it. My kids like their steak a little more well done than Sean and I do, so I slice theirs from the narrow tip and I slice ours from the center.

There is only one tri-tip cut on each side of beef so it can sometimes be difficult to find. I make sure to grab one anytime I see it. Tri tip is hands-down the best, most underrated and inexpensive steak for grilling.

    How To Grill Tri Tip

Grilling tri tip is a fairly easy process when all is said and done. All it takes is keeping an eye on the steaks and monitoring the internal temperature of the meat for doneness.

Before putting your tri tip cut on the grill, make sure to let it come to room temperature. This step helps ensure the steak cooks evenly and achieves the desired tender texture.

Once the meat is room temperature, its time to blend the spices. My favorite spice blend for tri-tip includes salt, black pepper, cayenne pepper, granulated garlic, granulated onion and just a little sugar to bring it all together.

Preheat your grill then rub your spices all over the steak. When coating the meat in your spice blend, do your best to get as much of the beef covered as you can. I usually end up having a little bit of the spice blend leftover, so dont worry if you wind up with extra.

You want to place your tri tip on the grill fat side down and let it cook for about 5 minutes on the first side. This may take more or less time once you see a dark brown crust develop youre ready to flip the meat.

The second side of the steak will take a little longer, about 8 minutes. After both sides are beautifully brown and crusted, take them off of the grill and let them continue cooking on indirect heat until they reach desired doneness.

When Im cooking a medium rare steak, I remove it from heat when its internal temperature has reached 130. This is where your meat thermometer will come in handy!

    Complimentary Side Dishes And Drinks

    Grilled Tri

Steak isnt an everyday dish, so its important that when you do grill it, you have the perfect combination of side dishes. Youre not short of options and you have the room to experiment. While the steak might be the main attraction on the lunch or dinner menu, you cannot live on meat alone. Make sure your side dishes have a bit of everything: color, nutritional content, and wholesomeness. Since the meat is protein, add some vegetables such as asparagus, green beans, and tomatoes. For starches, you can have potatoes or butternut squash for a truly all-round meal.

For drinks, red wine or a beer is usually the ideal partner, but you also need something for the non-alcoholics. Steak has a particularly rich flavor profile that is deep, sometimes sweet, and subtle in other instances. Cocktails offer a good and wide range of options. Pairing a delicious drink to the steak will enhance the taste experience for both while giving you a blend of flavors that work well together on the palate.
