Another easy thing about this recipe , is that it all goes in the crockpot. I cooked most of the stew for a few hours before adding the squash at the end. If its added at the beginning it will disintegrate by the end of the cooking time, so I added it about 30-45 minutes before the stew was ready. It was perfectly cooked that way and not mushy.
Im not big on reheating and eating leftover steaks but I make them into stew all the time. Almost any leftover beef can be made into a stew and Ive done it with pot roast and brisket. For those trying to stretch their dollars this is a great way to do it. Almost any veggie will work too. Try adding corn, asparagus, green beans, peaswhatever you have on handin addition to any that Ive used.
Give Montreal Steak Stew a try the next time you have leftover steak on your hands and you dont know what to do with it! If you havent previously added Montreal Steak Seasoning to your steaks, then add about 1/2 tsp. to the stew during cooking. Otherwise, just sit back and enjoy this delectable soup with a few slices of your favorite Crusty Bread.
Montreal Steak Stew is a tasty way to use up leftover steaks!
Add your favorite French Bread and you have a main dish meal thats hearty, filling and very satisfying.
Heres what I did.
I used these ingredients plus gluten free flour.
I had 2-3 lbs. of leftover steak. Cut beef in cubes.
Does Montreal Steak Seasoning Go Bad
As seasoning makers like McCormick point out, spices do not actually spoil. But when it comes to quality, the story is different. Over time, spices will lose their potency and not flavor your food as intended. To find out storage times for specific herbs and spices, you can consult our Keep It or Toss It database.

What Is It Made Of
Montreal Steak Seasoning is a combination of the following 6 spices.
- Coarse Kosher Salt
- Coarse Ground Black Pepper
- Paprika while I use a mild paprika to make this steak seasoning, if youd like to add a little smokiness to the flavor, feel free to use smoked paprika instead.
- Minced Garlic some steak seasoning recipes will use garlic powder or onion powder, but I much prefer the texture of minced garlic and onions in my steak seasoning!
- Minced Onion
When Should I Season My Steak
Moral of the story: If youve got the time, salt your meat for at least 40 minutes and up to overnight before cooking. If you havent got 40 minutes, its better to season immediately before cooking. Cooking the steak anywhere between three and 40 minutes after salting is the worst way to do it.

How Much Steak Seasoning To Use
The amount of steak seasoning per steak will depend on the size of your steaks and the seasoning you are using. You can always eyeball it and just season generously, but I often measure to ensure I truly have the right amount the ideal amount is often more than you think you need!
The most critical component in seasoning is salt, so I always determine the amount to use based on how much salt is in the recipe.
TIP: Julia Childs rule of thumb is 1 teaspoon of salt per pound of meat. So for steak seasoning, youd use the amount of seasoning needed to include that much salt.
Of course, this Montreal steak seasoning recipe has other ingredients besides salt, so the rule of thumb for this one is 1/2 tablespoon Montreal steak seasoning per 8-oz steak.
The photo below shows this seasoning on a beef tenderloin. Notice that there is a lot of seasoning on it this is what you want for maximum flavor!

How Much Seasoning Do I Put On Steak
Season your steak with about ¾ 1 teaspoon of salt per pound, applying on both sides. Since you obviously cannot salt to taste, its sometimes hard to know how much salt is enough. Many chefs recommend this benchmark as a good guide for pre-seasoning meat. Salt your steak at least 40 minutes before you cook it.

Ways To Enhance Flavor In Steaks
Seasoning can take the form of a marinade, dry or wet rub, brine, or collection of spices. Seasoning has become so instrumental in preparing beef and other meats that many rubs and spice collections have names.
- Brine Another method used for tougher cuts, brine has a saltwater base. An alternative is a deep seasoning whereby you salt the steak and refrigerate uncovered for three days.
- Seasonings/Dry Rubs Dry rubs can add surface texture or a flavorful crust to steaks. Crumbled spices highlight flavors that are naturally present in various foods. Apply both rubs or homemade seasonings to your steaks before grilling.
- Sauces Whether sweet, tangy, or spicy, you want to apply sauces lightly in the last five minutes of grilling or after cooking.
The difference between dry rubs and seasonings is subtle. Seasonings are finer in texture and applied more sparingly than dry rubs. Many use the terms interchangeably.

History Of Montreal Steak Seasoning
Popularly nicknamed Canadian steak spice or seasoning, Montreal steak seasoning is widely used on steaks, potatoes, vegetables, salmon, and poultry.
Did you ever wonder where one of the most popular steak seasonings originated? Montreal steak seasoning is actually the same blend used in Pastrami, and originated in Romania. Reuben Schwartz brought his Pastrami along with the seasonings to Canada when he immigrated. He used the spice blend to cure beef brisket before smoking it in his deli. On a whim, he sprinkled it on his liver steak lunch one day, and the fashion caught fire in all of North America.

Montreal Steak Seasoning: Tips & Tricks
Heres a few extra tricks to make your seasoning just a little more special.
- Yield: Recipe makes roughly 1 cup.
- Strong Smell: Beware that once you toast and blend the peppercorns its going to give an intense smell of pepper. Try to keep your face away from the blender when you initially open the lid. Trust me, youll be sneezing for a minute straight!
- Label & Storage: I find that I like to store my seasoning in a glass jar. I also use paper washi tape to write on using a permanent marker, and stick on the mason jar. It is a removable tape that wont be forever stuck on your jar making it ideal for spice mixes that are store in glass jars.
- Additions: Theres no one true Montreal steak seasoning recipe. Everyone puts their own twist on it, it seems! If youre looking for inspiration, try adding
- Cayenne: For a true spicy kick.
- Rosemary: To flavor, if youre a fan of the herb.

Montreal Steak Stew is a fantastic way to use up leftover steak! Its filled with leeks, mushrooms, onion, celery, carrots, bell peppers, zucchini and yellow squash, potatoes and tomatoes. I seasoned it with marjoram, thyme and a seasoning blend of lavender, sage & rosemary. The steaks already had Montreal Steak seasoning on them for flavor, and I added Worcestershire and liquid smoke to amp up the flavors even more. I used a gluten free flour to thicken the stew, but regular flour can be used if youre not gluten intolerant. It was one tasty stew.

How Long To Season Steak
This answer depends on when you plan on cooking your steak, and also the method, but essentially you have two options:
- Cook the steak right after seasoning OR
- Let the seasoning sit on the steaks for at least 40 minutes, up to 24 hours
If youd like to read up more on the science behind this, check out this article, but the quick version is that between 3-40 minutes, the salt from the seasoning draws out moisture from the steak, then starts breaking down the fibers, before it is eventually reabsorbed after around 40 minutes. The in-between phase is what you want to avoid, so that you dont end up with tough or dry steaks.
The method you use to cook the steak actually has an impact on when to season steak, too:
- If you are using the reverse sear steak method, youll want to season the steak and let it dry brine in the fridge at least overnight, to allow the outside to dry out, so that it gets that perfect browned crust when you sear it.
- If you are making simple sirloin steak in the oven , this matters less, and cooking steak right after seasoning is just fine.
- If you are making a tougher cut of meat, like flank steak, I find that a steak marinade works best.
