    Another easy thing about this recipe , is that it all goes in the crockpot. I cooked most of the stew for a few hours before adding the squash at the end. If its added at the beginning it will disintegrate by the end of the cooking time, so I added it about 30-45 minutes before the stew was ready. It was perfectly cooked that way and not mushy.

    Im not big on reheating and eating leftover steaks but I make them into stew all the time. Almost any leftover beef can be made into a stew and Ive done it with pot roast and brisket. For those trying to stretch their dollars this is a great way to do it. Almost any veggie will work too. Try adding corn, asparagus, green beans, peaswhatever you have on handin addition to any that Ive used.

    What Is It Made Of

    Montreal Steak Seasoning is a combination of the following 6 spices.

    • Coarse Kosher Salt
    • Coarse Ground Black Pepper
    • Paprika while I use a mild paprika to make this steak seasoning, if youd like to add a little smokiness to the flavor, feel free to use smoked paprika instead.

    Moral of the story: If youve got the time, salt your meat for at least 40 minutes and up to overnight before cooking. If you havent got 40 minutes, its better to season immediately before cooking. Cooking the steak anywhere between three and 40 minutes after salting is the worst way to do it.

    How Much Steak Seasoning To Use

    The amount of steak seasoning per steak will depend on the size of your steaks and the seasoning you are using. You can always eyeball it and just season generously, but I often measure to ensure I truly have the right amount the ideal amount is often more than you think you need!

    The most critical component in seasoning is salt, so I always determine the amount to use based on how much salt is in the recipe.

    TIP: Julia Childs rule of thumb is 1 teaspoon of salt per pound of meat. So for steak seasoning, youd use the amount of seasoning needed to include that much salt.

    Of course, this Montreal steak seasoning recipe has other ingredients besides salt, so the rule of thumb for this one is 1/2 tablespoon Montreal steak seasoning per 8-oz steak.

    Montreal Steak Stew is a fantastic way to use up leftover steak! Its filled with leeks, mushrooms, onion, celery, carrots, bell peppers, zucchini and yellow squash, potatoes and tomatoes. I seasoned it with marjoram, thyme and a seasoning blend of lavender, sage & rosemary. The steaks already had Montreal Steak seasoning on them for flavor, and I added Worcestershire and liquid smoke to amp up the flavors even more. I used a gluten free flour to thicken the stew, but regular flour can be used if youre not gluten intolerant. It was one tasty stew.

    How Long To Season Steak

    This answer depends on when you plan on cooking your steak, and also the method, but essentially you have two options:

    • Cook the steak right after seasoning OR
    • Let the seasoning sit on the steaks for at least 40 minutes, up to 24 hours

    If youd like to read up more on the science behind this, check out this article, but the quick version is that between 3-40 minutes, the salt from the seasoning draws out moisture from the steak, then starts breaking down the fibers, before it is eventually reabsorbed after around 40 minutes. The in-between phase is what you want to avoid, so that you dont end up with tough or dry steaks.

    The method you use to cook the steak actually has an impact on when to season steak, too:

    • If you are using the reverse sear steak method, youll want to season the steak and let it dry brine in the fridge at least overnight, to allow the outside to dry out, so that it gets that perfect browned crust when you sear it.
    • If you are making simple sirloin steak in the oven , this matters less, and cooking steak right after seasoning is just fine.
    • If you are making a tougher cut of meat, like flank steak, I find that a steak marinade works best.
