Snake River Farms American Wagyu Tri Tip 2.5 pounds for $79 If you have never had the opportunity to taste American Wagyu beef these American Wagyu tri tips are a great way to experience it. I recently had one of these for the first time and the marbling was crazy for a tri tip.

If you look at these tri tip slices you can see how much fat is interwoven between the meat fibers. This was a very succulent, decadent piece of beef. It is quite a bit more expensive than most other tri tips but it is quite evident why it costs more. At over $30 a pound it isnt a piece of meat most people will eat on a regular basis but it is an awesome choice for a special event meal like an anniversary, Fathers Day, or a birthday.

If you arent familiar with American Wagyu here is the quick overview: Wagyu cattle from Japan are well known for their intense marbling. Snake River Farms has bred those cattle with Angus cattle. The result is a great piece of meat that combines the great marbling of Wagyu with the beefiness and great flavor of Angus beef.

How To Cook Tri Tip

Rich and meaty in flavour and low in fat, tri tip cooks like a tender steak but slices like a brisket perfect for people who want to do a brisket-like cook up but dont have the time. It can be smoked, barbecued, grilled or roasted, but its always best when cooked to a nice medium rare, before letting it rest and slicing.

Cook the tri tip in a low oven at 275ºF / 135ºC or smoke it with indirect high heat for about 45 minutes, letting the meat cook evenly the whole way through. For best results when cooking, always use a meat thermometer. Insert the thermometer horizontally into the thickest part of the tri tip and aim for an internal temperature of 125ºF130ºF/51ºC54ºC. Remember that its triangular shape will mean that the tail or tip will be more done, while the centre will be slightly pinker.

Once you have achieved your desired doneness, transfer the tri tip directly onto charcoal or onto a hot pan to give it a final sear on the outside.

Allow the meat to rest for 510 minutes before slicing.

A Final Tip For Your Tri Tip

Take care when slicing your tri tip an incorrect cut can take the meat from tender and juicy to tough and chewy. Tri tip has two distinct grain patterns: one vertical and one horizontal. For best results, cut the steak in half where the two grains intersect. Then slice each piece against the grain, to ensure you get the most tender slices of meat.

Perhaps the biggest benefit of cooking tri tip is its simplicity. As David Somerville from BBQ Dry Rubs says, It is much simpler to cook a tri tip than a brisket. As long as you have a digital thermometer and are remotely familiar with how to grill a steak then you will do great with a tri tip. Briskets, on the other hand, have been known to make grown men cry.

This cut benefits from quick cooking methods, such as grilling, broiling, and pan-searing. Since it is a lean cut, if you are going to take this steak beyond medium, then you should probably it two to three hours before you plan to cook. You can also season the steaks with a spice rub, such as an herbes de Provence steak rub. Grill 1-inch steaks 15 to 17 minutes and broil for 11 to 12 minutes for medium. If using the stovetop, heat a heavy skillet with a little oil until hot add the steaks and cook, turning over once, for about 12 minutes for medium.

What Internal Temp Is Ideal For This Tri

  • Rare: Remove from heat at 115-120°, the meat will rise in resting to an internal temp of 125°
  • Medium Rare: Remove from heat at 125-130°, the meat will rise in resting to an internal temp of 135°
  • ****Medium: Remove from heat at 135°, the meat will rise in resting to an internal temp of 140°

**** Although I provide the temps from Medium.I highly recommend rare or medium-rare at the most for the internal temp to maintain tenderness and have it be juicy and not dried out. If you have people who prefer more well done, you can serve them the smaller tip of the triangle which will be a little more done.

This grilled meat is excellent on its own but we often make a full meal in the Santa Maria style by serving it as tacos with fresh homemade guacamole and fresh tomato salsa.

A few years ago I got hooked on tri tip steaks and had a bountiful supply from my local Costco. It was quickly turning into my favorite steak when, without any warning, Costco stopped carrying the cut.

The butcher said Costco stopped carrying it because there wasnt enough demand which absolutely blew my mind!

Since then I have found four excellent online suppliers of tri tip and between them the cut is almost always available. The four places are:

Unfortunately, in many areas across the country, the tri-tip steak is not available. This is because this part of the cow is typically cut differently by regional butchers. If you cannot find tri-tip in the meat section, talk with your butchersome may have it, but know it by another name. Any good butcher should be able to cut tri-tip steaks for you, and if they don’t do that kind of cutting, you need to find a different butcher.

The Santa Maria Tri tip according to the Santa Maria Valley website was created by a local butcher in the 1950s from the triangle section of the lower sirloin. Before this time most butchers would cut up that section for ground beef. Its typically served with beans, salsa and often even garlic bread.

This tri tip roast cut is very well known in California and the west coast. If youre having trouble locating it where you live I go over several different names that you might be able to explain to your butcher what you want in my easy seasoned tri tip recipe.

How To Slice A Tri

So, youve seasoned it, cooked it and rested it dont ruin it now!

How you slice your tri-tip is essential to its texture and can make a huge difference to how it tastes. Heres how to slice your tri-tip correctly.

The tri-tip actually has two grains running through it. As you always slice against the grain, youll have to locate these grains and where they meet. Approximately half of your steak will contain horizontal muscle fibers, the other half will run vertically.

  • With your rested tri-tip in front of you, locate the two different grains. You are looking to slice into where they intersect.
  • Cut your steak in half along this intersection line. This should give you two halves, each with one distinct grain.
  • Slice each of these halves against the grain. In other words, perpendicular, in the opposite direction, to the grain. This will ensure your slices have great texture and are mouth-wateringly tender.
  • If you dont want to cut your tri-tip in half, you could try this alternative slicing method:

  • Turn the thinner tail end towards you.
  • Start slicing against the grain.
  • Continue until youre at the area where the grain starts to change, or around halfway into your steak.
  • Rotate your tri-tip 90 degrees, or a quarter turn, and continue slicing against the new grain.

    How To Grill Tri

    Follow these tips to get the best results when cooking your steak.

    • Score the fat layer with a sharp knife about 1/8 of an inch through the fat. Do not cut through the meat if you can help it.
    • Season it on both sides in advance to give the seasoning time to penetrate the meat and enhance its flavor.
    • Let the steak come to room temperature before cooking for more even doneness.
    • While searing the tri-tip on the grill, watch it carefully. As the meats fat heats up, it can drip down and cause flare-ups. Keep moving the tri-tip away from the flame if flare-ups occur.
    • Use a meat thermometer in the thickest part of the steak to check for your desired level of doneness .
    • Rest and tent the meat with foil 5 to 10 minutes after cooking to allow the juices to redistribute.

    Remember that its triangular shape will mean that the tip will be more done, while the center will be slightly pinker.

    Is The Tri Tip A Good Cut Of Beef

    A tri tip can be one of the best steaks you have ever had if you treat it right. They typically weigh between 2 and 3 pounds and, since there is almost no waste fat or gristle, will feed between 4-6 people.

    The tri tip comes from the bottom of the Sirloin which makes it full of flavor. The ones sold at Costco are usually Prime grade which means great marbling and increased tenderness.

    Costco usually prices this cut about 30% lower than their ribeyes which makes this a nice value.

    If you look at the label for this steak you will see that Costco has blade tenderized the meat which is a double edged sword.

    On the positive side, blade tenderization basically involves punching it with a bunch of needles to break up the meat fibers. As a result you should expect this tri tip to be more tender than usual.

    On the negative side, the process of punching the meat with needles has the potential to introduce bacteria into the meat which is why the minimum recommended internal temperature is 145F. I consider 145F to be over cooked as far as steaks are concerned.
