Top Sirloin comes from the primal cut loin, sub-primal sirloin on the beef animal. The top sirloin is a boneless muscle that is located between the short loin and round sections, towards the rear of the animal. Top sirloin is known for having a strong beef flavor. The top sirloin is comprised of two muscles, with the triangle shape muscle commonly called a culotte. We separate the muscles and send out a true center cut steak.
The term sirloin is derived from the Old French term surlonge, meaning above the loin. Other terms that are used for top sirloin are baseball steak, top butt steak or center cut sirloin. Top sirloin is a very versatile cut that can be grilled, broiled, pan-fried or cut into small strips and sautéed. The top sirloin is a lean cut, with little marbling that should be prepared to medium, or medium rare. This cut takes rubs and marinades well, which will improve the eating experience if extended cooking is desired.

Cooking Baseball Steak Cut
When you want to cook this type of beef, there are two ways you can go about it. The reason for this is that this type of meat is better when its cooked medium-rare.
Anything more than this and the beef just wont taste good when you eat it. Some people still prefer to pan sear this type of meat. To do this isnt wrong. Its just that this type of beef is so thick that youll still have to finish it in the oven.
The best way to cook this type of beef is on the grill. Grilling is the right choice for this type of meat because it helps bring out the meats juices.
You can choose to cook the meat in your oven or on your grill. The choice depends on what works better for you.

The key thing to picking a good steak is look for good streaks of fat in the middle. This is a leaner cut but that doesn’t mean it’s devoid of all fat. Choose steaks with nice steaks in the middle.

After seasoning your sirloins and giving it a good sear in some butter in your skillet , transfer it to a baking dish in an oven preheated to 450 degrees. The high temperature will cook your steak quickly without letting its juices escape and drying it out. Your steaks will need between eight to ten minutes to cook in the oven.
Use a meat thermometer to check your steak if youre not sure. For medium rare, remove steaks when they reach 120-125 degrees. Allow it to rest between five and ten minutes before serving.

What Is A Top Sirloin Filet Steak
Most people are familiar with the Top Sirloin – a long, tasty steak, that can be found at most steakhouses. It’s one of my favorite steaks to toss under the broiler.
Sirloin comes from the Short Loin of the cow, which is located toward the middle of the cow’s back. It’s the part of the cow where we get tenderloins, ribeyes, porterhouses, and t-bones.
The Top Sirloin Filet steak is a cut of the leanest, most tender part of the top sirloin. It is boneless and similar in appearance to a filet mignon without the hefty price tag. It has the flavor you would expect from a top sirloin.
What Is Beef Grading
The U.S. Department of Agriculture administers the beef-grading program and certifies the score given each cut of beef.
USDA inspectors determine the quality rating of beef by considering the following characteristics:
- Amount of marbling in the ribeye muscle portion
- Maturity of the beef carcass
Typically, younger beef with greater ratios of marbling score higher grades.
Harris Ranch beef is available in all three beef grades:

Best Cast Iron To Cook A Steak On
Of course cooking a steak on a grill outdoors is a special thing. Sometimes the weather won’t allow for that. So when cooking a steak indoors I always do it on cast iron.
I always recommend the american company Lodge for their cast iron. High quality, American made, and won’t break the bank.
Here are 3 different options of cast iron to cook your steak on.
- Griddle – For small steaks like these ones, a grill works perfectly fine. A grill is always the perfect vessels for hamburgers. Both steaks and burgers are easy to flip on a griddle because the sides are so shallow.
- Skillet – A skillet will have high sides. Good for making cornbread in. And can be do a steak proud as well. Not as easy to flip as in a griddle but a skillet is more versatile.
- Grill Pan – If you want those nice grill marks turn to a grill pan. They have ridges that will give you that very appetizing looking grilled appearance.

Cooking Baseball Steak Sirloins
A medium rare top sirloin steak is the most common doneness for this cut because it helps preserve the texture and juice within. You can reach a medium rare cook the best by cooking in the oven or on the grill. If your heart is set on a pan sear, dont worry you can still sear your steak in your cast iron skillet. But, since its so thick, youll need to finish it off in the oven.
Cooking Baseball Steak Cut In The Oven
The first way were going to look at is in the oven. Before you do this, youll want to ensure that you have defrosted your meat thoroughly and added seasoning.
If youve already defrosted your meat and added your seasoning, you can place it in a skillet to sear with some butter. Youll want to sear it on each side for about four minutes.
While youre searing the beef, turn the oven on and heat it to 450ºF. At this temperature, you can cook the meat without drying it out. A dry out piece of baseball meat isnt something you want.
Once youre finished with searing the baseball steak, youll then place it in a pan so it can finish cooking in the oven. Give your beef about 8 to 10 minutes to cook. Grab your meat thermometer so you can check the beefs internal temperature to make sure its cooked properly.
If youre going for medium-rare, then removing your beef when the temperature is 120 to 125 degrees is the way to go. Once it reaches 125ºF, you can take it out of the oven and let it sit for about 10 minutes.
Its essential to do this as it helps the meat to soak up the juices. When youve allowed it to rest for a bit, its now time to serve and enjoy.
