How To Season Your Steak
Once youve chosen the right cut of meat, its time to season it. There are endless ways to season steak, but here are a few tips that will help you create a delicious, flavorful steak:
- Salt and pepper are a must. Be sure to season your steak generously with salt and pepper both before and after cooking.
- Try using a spice rub or marinade. A simple spice rub or marinade can add tons of flavor to your steak.
- Add some herbs. Fresh herbs like thyme, rosemary, and parsley will add a delicious flavor to your steak.
Once youve chosen a seasoning combination, sprinkle it generously on both sides of the steak.

Recommended Books For Steak Lovers
Before we jump to the recipe, there are two cookbooks that I recommend:
First, Franklin Steak cookbook. Not so much a recipe book, but rather about the love affair with beef and steaks. Aaron Franklin not only teaches you how to buy steaks, but he goes through stories of beef, various cuts, different cooking methods, types of wood, and if you are up for it, how to fabricate his hybrid hibachi grill. A very interesting read for anyone who grills.
The second book is Kenji Lopez-alts The Food Lab. Its one of my favorite books to read for fun and if you are curious about the science of cooking, youll be fascinated by the broad range of topics he covers. For each recipe, he backs them up with, you guessed it science. In the steaks section, he covers when to season the steaks and why, the various tests he did for resting the steak after cooking, dry-age steak, and many recipes to go with various cuts of beef.

Qualities Of A Good Smoked Steak
When it comes to smoked steaks, there are a few things we expect. First, as the name implies, we want them to be smokybut we dont want them to taste like an ashtray. Smoke should be treated as a seasoning and applied correctly. Undersalted and oversalted foods are no good, and over-smoked steak isnt great either.
Second, we want it to be perfectly cooked. A well-cooked steak will have the most uniform doneness possible throughout its entire thickness. A grey band around the edge with a perfectly rosy interior is okay, but not as good as a steak that is rosy from edge to edge.
Finally, as with any steak, a smoked steak ought to have a good sear so that those delicious Maillard-reaction flavor compounds can be formed.

How To Reverse Sear A Ribeye
It all starts with smoking at a low temperature for flavor and then finishing on high heat for that sear. This is a similar concept to sous vide cooking , only done on the smoker . This is also a similar method to these friggin amazing smoked burgers with chorizo and smoked poblanos. Those burgers were smoked at low heat and then finished on a hot grill for that irresistible sear.

What Exactly Is Reverse
Reverse-searing is simply the process of finishing a piece of meat with a high-heat sear after initially bringing the internal temperature up very slowly. The low-and-slow portion can take place in an oven or smoker, while the searing is typically done with a grill or cast iron pan. The versatility of a pellet grill allows you to handle the whole process with one piece of equipment, and your steak will end up with a deliciously subtle kiss of smoke.

How To Make Traeger Steak
Step One: Preheat your Traeger or pellet grill to 500 degrees F. This might take up to 20 minutes depending on how cold it is. Preheating will also give nice grill marks on the steak.
Expert Tip: I highly recommend making sure that your grill has been recently cleaned. If not, cooking at this high heat will be sure to start a grease fire that will ruin your steak and could create other safety issues.
Step Two: Once the Traeger temperature reaches 500 degrees Fahrenheit, place your well-seasoned steak into your preheated grill directly onto the grill grates. Place directly on the grate and be sure to insert the temperature probe to monitor the internal temperature of the steak. Cook at 500°F for five minutes. Then turn the steak over and continue to cook for another five minutes. Make sure you keep the lid closed when you are cooking this to allow the Traeger to maintain the high heat.
Step Three: Once the internal temp of the steak reaches 120°, remove it from the grill and allow it to rest for five minutes before slicing.
Expert Tip: The resting time will allow the steak’s internal temp to rise to about 130°F. Adjust cooking time to achieve your desired doneness. I like my steaks medium rare.
Step Four: Slice against the grain and serve. Enjoy!

Z Grills Pellet Grill Pork Steaks
Z Grills pellet grill pork steaks are a delicious way to cook pork. The pork steaks are marinated in a special blend of spices and then grilled to perfection. The result is a juicy and flavorful pork steak that is sure to please any appetite.
This cook should use McCormicks Pork Chop Dry Rub Alabama BB. The rub contains a lot of garlic and buttermilk powder, which makes it look and feel like ranch dressing. If you dont have a dry rub on hand, there are other rubs and marinades that can be used instead. Chops are cooked at 145 degrees Fahrenheit by measuring their internal temperature with a digital thermometer. Youll need about an hour to cook the chops, depending on how thick they are and the temperature of the cooker. What Is Reverse Sear Cooking
Let me explain. When you google perfectly cooked steak, what you will typically see is the more traditional restaurant method, which is where the meat is seared hot and then finished in the oven to finish cooking. But what I want to share is something that adds incredible flavor and allows you to finish with that beautiful crusted texture. The reverse sear. And better yet, the SMOKED reverse sear.
And here you thought you couldnt achieve a perfectly cooked steak on a smoker?!
The idea is, instead of sear first then finish in the oven, you smoke it first at a low temperature to get the smoky flavor, and then finish it by searing for the beautiful and flavorful crust. But first, lets talk about
Be Careful On A Pit Boss Pellet Grill
If you are cooking on a Pit Boss pellet grill, or any pellet grill with a Flame Broiler, then place the pork steaks away from the Flame Broiler. There is no heat distribution shield between the fire pot and the grease tray on these grills and you can get some significant hot spots near the Flame Broiler even when it is closed.
These steaks turn out best when they get the chance to cook slowly at low temperatures. Additionally, you dont want to risk burning the sugar in the rub by placing the steaks on a hot spot.

Whats A Tomahawk Steak
A tomahawk steak is a thick and tender beef ribeye, connected to a long bone. Its called a Tomahawk because the steak with the long bone looks like an axe. This steak is also known as a cowboy steak. Liz called it a Flintstones steak.
The steak is pretty expensive, but when you consider that one steak can feed several people, you realize that its really not unreasonable. It was plenty for our family, and weve spent a lot more than that when weve gone out to a steakhouse restaurant for dinner, so it was well worth it.

Why I Wrote This Steak Recipe
Youve probably noticed that mastering all different sorts of steaks with various kitchen appliances is a hobby in my house. This cut of meat ranks right up there with other favorites like this grilled skirt steak, smoked flank steak, and coulotte.
So it wasnt long before perfecting how to cook ribeye on outdoor pellet smokers made it onto our bucket list.
I was so eager to see how tender the smoker would make the meat the first time I tried it. It was a difficult debate to choose between the reverse-sear method, where for a portion of the time, the ribeye smokes at a high heat, to give it a seared crust.
But actually, I find the brown crust of this recipe to be perfect. Its a pretty easy set it and forget it smoker recipe, and one I definitely recommend for an upscale BBQ menu, served with a side of smoked mashed potatoes or smoked mac and cheese.

Can You Smoke The Steak On Your Traeger
Absolutely you can. A different recipe will cover that. Here we are using the Traeger as a high heat grill. I have smoked a large ribeye steak on the Traeger smoker at low heat for about 45 minutes, and then reverse sear it on high heat in the preheated cast iron pan to give it a nice sear. This way does give more of a smoky flavor and is delicious. But it does take more time. I recommend trying to cook them both ways to determine which you prefer. I like variety, I go back and forth between both depending on the time I have and what else I am cooking.

How To Reverse Sear Smoked Steak
Many people love the crispiness of a seared steak and wonder if they can achieve the same results after smoking steak. The good news is that you can, thanks to the reverse sear method. This cooking method allows you to blend the smoky flavor you get from a pellet smoker or charcoal grill with the tasty sear that you get when you pan-sear a ribeye steak.
To reverse sear smoked steak, first season the steak with kosher salt and cook it in the smoker or using the at-home method above. Alternatively, you can use a grill to smoke steak. To do this, place a foil pouch filled with wood chips over direct flames. Add the steak to an area of indirect heat, cooking at around 250 degrees until it comes to your ideal temperature.
Then, use a grill to complete the sear. Turn the grill to a high heat and place the steak directly over the heat. Sear for about 1-2 minutes or until a golden brown crust forms. Then, flip to the other side and sear. Alternatively, you can use a pan with one tablespoon of olive oil over medium high heat to sear your perfect steak.
Allow the steak to rest for 5-10 minutes before serving. Finish with a sprinkling of salt and pepper. Now, you have a seared and smoked steak with tons of smoke flavor and a delectably seared crust!
