Gas Grill Steak, How To Cook With Gas – GardenFork Cooks

How long do you grill a 1-inch steak? A 1-inch sirloin generally takes about 4-5 minutes on each side for medium rare doneness or 5-6 minutes for a medium steak doneness.

How do you cook a tender steak on a gas grill? Preheat gas grill to medium-high heat, or about 500° F. Place steaks on the grill, close lid and immediately reduce heat to medium. Cook 4-6 minutes until bottoms are seared. Rotate, close lid, and cook about 5 minutes more or to an internal temp of 135° to 140° F for rare to medium rare.

How hot should gas grill be for steak? Brush your cooking grates clean and adjust your grill for direct, high heat. The best temperature for steaks is 450°F to 500°F. 4. Put your steaks on the grill, close the lid, and set your timer for 2 to 3 minutes, depending on the thickness of your steak.

Cooking On A Dirty Grill

Yes, youre supposed to season your grates before you start cooking, but they should never, ever be dirty. Not only can leftover food on the grill make your new food taste funny, but its also a serious health hazard to cook over bacteria thats been sitting there since last weekend.

Clean your grill after every use. It only takes a few minutes to brush down the grates while the grills still hot and itll make for a much simpler cleanup when your cookout is over.

Fourth Position And Testing For Doneness

As you prepare to turn the steak for the last time, it’s time to start checking for doneness. The steak should show no red around the side and the top side should have a rich brown color. As you pick the steak up to rotate it 45 degrees , feel the density of the steak. A medium-rare steak should be firm but still have a good amount of give. Close the lid of the barbecue and continue grilling.

After this last position, turn down the heat on your grill and, if needed, test the temperature of the steak. The internal temperatures for different levels of doneness are:

  • Rare: 120 to 130 F
  • Medium Rare: 130 to 135 F
  • Medium: 140 to 150 F
  • Medium Well: 155 to 165 F
  • Well: 170 F or higher

If your steak needs more cook time, leave it where it is and continue grilling on medium heat until done.

Mistakes To Avoid When Grilling Steak According To Chefs

It’s never too early to start prepping for barbecue seasonso go ahead and bookmark this.

Purists assert that a good-quality cut of steak is done ill justice at the hands of an overzealous grill. Contrast that to cheaper cuts like chuck roast, for example, which come to their prime slowly and forgivingly when slowly cooked. Cooking steak, therefore, is a paradoxically delicate matter for a powerfully primal affair. So its understandable that many diners and home cooks err on the side of overcooking it, especially if the quality of the meat might not be top shelf.

Regardless of what your preferences areand were not knocking any of emhere are eleven mistakes to avoid on your next steak night.

Salt The Steak At Least 30 Minutes In Advance

How to Grill Steak

Salting is the very best thing you can do for a large steak. You dont need much salt just a nice sprinkle of kosher salt over the entire surface. Then, place it on a rack inside the fridge.

For best results, youll want to salt the steak a day in advance. If youre running short on time 30 minutes will workbut when it seasons longer, the salt can work its way deep into the meat. As the salt seasons the meat, it also pulls out moisture. Given only 30 minutes, youll have to blot off that excess moisture off with a paper towel. But, with more time, the brine will reabsorb into the meat and create a super flavorful steak.

Setting The Temperature To Grill Steak On A Gas Grill

How to Grill Steak – Weber Grill Knowledge

Tips For Grilling The Perfect Steak

  • Season, then chill: I apply the same technique I use for getting crispy chicken and turkey skin to grilling this steak: season, then let it chill in the fridge uncovered for up to 48 hours. This essentially dry brines the steak while also letting it air-dry. This approach allows the surface moisture to evaporate while the seasoning has time to penetrate the meat resulting in deeply flavored steak that sears beautifully and develops a nice crust on the grill.
  • Start with clean grates: Just like you use a clean skillet with a little oil to cook dinner on the stovetop, you want to start with clean and oiled grill grates.
  • To flip or not to flip? Flip your steak to your hearts content. Harold McGee, food science writer and author of On Food and Cooking, discovered that frequent flipping creates a steak that cooks more evenly and quickly than those flipped only once.
  • Grilling directly on coals: Raichlen seemingly knows an infinite number of ways to grill meat, and theres one in his new book, Project Fire , that I particularly like: he cooks steak directly on hot coalsno grill grates necessary. I love the idea, and its on my list of things to try in the near future.

How To Grill Steak On A Flat Top

With a Blackstone flat top grill, cooking a steak is simple. For the most part and for most steaks, you just get the grill to a nice high temp, between 450 and 500 degrees, and when you throw the seasoned steaks on and let them sear and develop that nice signature crust that everyone loves.

With steak, like most other meats, you should never cook according to the clock. Always cook according to the internal temperature of your meat.

Remember to let your steaks rest after they come off the grill for about 5 minutes to let the moisture redisburse. The meat is still going to keep cooking for this time as well so take that into account for cooking times.

Use A Meat Thermometer

Indirect Cooking on a Gas Grill

Professional chefs cook so many steaks in their career that they know the level of doneness just by touching the meat. You might feel pretty comfortable with this technique on thinner steaks, too, but its harder to estimate the temperature of a really thick steak. Take the mystery out of it by investing in an instant-read meat thermometer .

Your meat thermometer doesnt care how thick the steak is, so take advantage of its precision. Youre aiming for 130° F for rare, 140° F for medium-rare, 150° F for medium, and 160° F for well done. The steaks temperature will continue to rise the additional 5 degrees as it rests.

Is It Better To Grill Steak With Lid Up Or Down

If youre grilling quick-cooking foods such as burgers, thin steaks, chops, fish, shrimp, or sliced vegetables directly over the flames, you can leave the grill open. But when you grill thicker steaks, bone-in chicken, or whole roasts youll want the lid down, especially when youre cooking with indirect heat.

Salting Your Steak Early Pays Off

There is a belief that salting meat too far in advance of cooking can draw out moisture. While its true that salt can draw moisture towards itself, it’s also true that over the course of 20 or 30 minutes that can actually be a good thing as the salt will begin to dissolve into that little bit of moisture that’s been drawn out.

So, when you drop the steak onto the hot cooking grate, all the sugars and proteins in the moisture will mix with the salt, and any other seasonings you’ve added, which creates a perfectly crisp crust. The flavor of that delicious crust is worth any moisture you may lose.

How To Grill The Perfect Steak

Making the perfect steak on the grill is easier than you think, but it requires a little practice and good timing.

Given the differences between grills, cooking surfaces, and cuts of steak, there aren’t specific cook times for grilling steak. Meat changes in texture and density as it cooks, so it helps to know how each steak feels before it hits the grill. A meat thermometer is also helpful when checking doneness.

Take note of the thickness of the steak since it will affect the cooking time.

  • : it is so nice to add in that little extra flavor!
  • Pierce with fork : this isnt necessary, but piercing the steak with a fork to create some tiny holes allows either your salt and pepper or your marinade to penetrate the meat much faster.
  • Sear on both sides: The sear is the key and then you can move to indirect heat to finish cooking. This seals in all those juices and leaves a nice char on the outside.
  • Do NOT over-cook: remember that your steak will continue to cook after you take it off the grill, so really you should shoot for about 5 degrees under where you ultimately want to be when you take the steaks off the grill.
  • Let rest: Your steak will continue to raise about 5 degrees while resting and this allows the juices to redistribute evenly throughout the piece of steak so when you do cut into it, it will be juicy and perfect!

Dont Forget To Let The Steak Rest

Cooking the steak to ten degrees below your desired temp and then resting it allows for the collagen in the meat to thicken the juices as it cools slightly, says Prentiss. This creates a way juicier steak than just cooking straight to temp.

Sharp agrees. Let it rest. This is crucial, he says. Just because the steak is out of the pan doesnt mean it stopped cooking. Keep it in a warm placeyou don’t want a cold steakand rest it for about as long as you cooked it.

Chef Carlos recommends allowing the steak to rest for half the cooking time before servingso if your steak takes 10 minutes to cook, youd let it rest for five.

If youre not able to keep the steak warm while it rests, or you want to eat it quite hot, Prentiss recommends returning the steak to the grill after its rested and bringing it up to the internal temperature of your preference before eating.

To Season Before Or To Season After

The age-old question when it comes to cooking steak centers on what seasonings to use if any. Some say marinate. Others have spent years perfecting their spice and herb mixtures. Still, the purists insist the steak go bare or maybe just sprinkle it with a little salt. If you decide to go with a seasoning, you are faced with another question: Should you season the meat before or after cooking?

We decided to conduct our own impromptu experiment and put both methods to the test. It shouldn’t come as a surprise that our taste testers enjoyed both ways. But they did come to a conclusion: If you want a stronger burst of flavor from your spices, season after cooking. If you would prefer to taste steak with just a hint of kick, season before cooking.

Finding the best product you can get your hands on is always the hardest part of cooking a great steak, says Ryan Prentiss. Hes executive chef at Prime + Proper steakhouse in Detroit, Michigan. There’s really only three things in my opinion that make for a good grilled steak: Beef, salt and fire.

He goes on to explain: We only work with USDA Prime beef, which is the highest grade of beef available, and accounts for only 1.5% of the beef in the nation. Fat is flavor, so look for beef that looks plump, bright red and has the most marbling. Marbling is the intramuscular fat present in high quality beef that gives it a marbled appearance. Grain-fed or grain finished beef will have more marbling than a grass-fed beef.

    On aged steak:

If you’re lucky enough to be able to find a butcher that has dry-aged beef,” Prentiss says. “I highly recommend trying anything aged from 15 to 30 days until you become acquainted with the flavor.

Chef Joe Cervantez agrees, specifying that steaks eat best at 23 to 28 days. Hes executive chef at Brennans of Houston. Most steaks from the grocery store are aged 14 days, he says. If youre up for trying your hand at aging and are lucky enough to have access to a cryovac, he recommends packing the meat in an airtight seal until it hits at least 23 days.
