For a long time Ive preached theRule of Threesfor explaining how long to grill a steak on a charcoal grill. The method is basically 3-3-3-3. That means:

  • grill steak side 1 over direct heat for 3 minutes
  • grill steak side 2 over direct heat for 3 minutes
  • Flip steak and grill on side 1 over indirect heat for 3 minutes
  • Finally turn steak and grill on side 2 over indirect heat for 3 minutes
  • Ive gotten a lot of positive comments about the method but Ive also caused a bit of confusion. Lets re-examine the method.

    How To Cook A Ribeye Steak On The Charcoal Grill Quick View

    To unveil how to cook a ribeye steak on the charcoal grill, you need to follow the following simple steps. So, lets get started:

    • Firstly, season the ribeye steak with kosher salt and freshly powdered black pepper adequately.
    • Then take a plastic wrapping sheet and wrap the steaks in it, set aside for 12 hours or overnight.
    • Next is to start the cooking process of steaks. Similarly, the charcoal grill must be hot before putting the steaks on it. Then, place the steaks on the hot charcoal grill and let the steaks grill properly. Cook the steaks until your thermometer starts showing 130 to 135 degrees Fahrenheit for medium-rare and 135 to 140 degrees Fahrenheit for medium.
    • Then, its time to take out the charcoal grill and keep the steaks resting for at least 10 minutes to seal in the juice. After resting for 10 minutes, you can make slices and serve the steaks to the guests or homies.

    • Medium-Well : 145 155 degrees
    • Well-Done : 160 degrees

    2-zone grilling is key to getting juicy, meltingly tender steaks on the grill. Fun fact! I recipe tested two steaks side-by-side, one with a 2-zone approach & one cooked solely over direct heat. Even with the same doneness & flavor, the grilled steak that started over indirect heat was much more tender. TL DR? 2-zone grilling is definitely the best way to grill steak!

    Before you begin! Take a moment to clean the grillgrates so no other charred flavors interfere. At this point, take the steaks out of the fridge so they can come up to room temperature, too. Room temp steak is also essential for getting a perfect char.

    Im going to tell you five quick and easy steps to grilling the perfect steak on your charcoal grill!

    Step 1 Prep and season the steak

    The first thing you will want to do is take your steak out of the fridge and season it on both sides with your favorite rub or the one we used below. After you have seasoned the steak let it sit for 30 minutes. Seasoning the meat and letting it sit for this time will help it cook faster and more evenly while holding the seasoning better.

    Also, if there is any excess fat please trim that off to avoid flare ups while grilling the steak.

    Step 2 Fire up the grill

    For steaks you want your charcoal grill to be as hot as possible. Ideally anywhere for 550-650 degrees F.

    You can either use a chimney for your charcoal or light a pile of about 100 Kingsford Hardwood Charcoal Briquettes.

    When the coals are ready you will want to arrange them into two zones. Essentially you want all the coals on oneside of the grill for direct heat and then the otherside that doesnt have any coals will be your indirect heat.

    Replace your top grate, allow the great to heat up. Place cover on the grill. Remember all vents on the grill should be fully open.

    When ready to grill pour cooking oil onto a folded paper towel and oil the grate using a long-handled tongs.

    Step 3 Grilling the Steak

    Flip the steak over and sear the other side.

    After the steak is properly seared move it to the warm side where there are no coals.
