How To Grill Steak Using The 2

2-zone grilling is key to getting juicy, meltingly tender steaks on the grill. Fun fact! I recipe tested two steaks side-by-side, one with a 2-zone approach & one cooked solely over direct heat. Even with the same doneness & flavor, the grilled steak that started over indirect heat was much more tender. TL DR? 2-zone grilling is definitely the best way to grill steak!

Full Recipe Directions, including step-by-step photos, are included in the Recipe Card, below.

Before you begin! Take a moment to clean the grillgrates so no other charred flavors interfere. At this point, take the steaks out of the fridge so they can come up to room temperature, too. Room temp steak is also essential for getting a perfect char.

Light the grill with 2 zones of heat. The best grill temp for steak is actually 2 temperature zones! Preheat your grill with one zone of low indirect heat & one zone of high direct heat. If you have a gas grill, simply light half of its burners to the highest setting. If you have a charcoal grill, distribute the lit charcoal to one side of the grill. The half of the grill over the heat source is in the direct high heat zone, while the other half is in the indirect heat zone. Related Reading!Learn all about 2-Zone Grilling.

    Lighting Your Charcoal Grill

    Pin on Furniture

One of the most important aspects of grilling steak on a charcoal grill is the charcoal heat and placement. Its best to cook steak hot and fast, so purchase lump wood charcoal because it burns faster than briquettes. There is also less ash that could block the grill air vents and lower the cooking temperature.

The easiest way to light your fuel is in a charcoal chimney. Place some newspaper in the bottom of the cylinder, and add your coals at the top end. When you light the paper, the fire moves upward to ignite the charcoal. After approximately 10 minutes, you should see a light covering of ash on the coals. The charcoal is now ready to go in the firebox.

Rather than tipping the coals in one spot, spread them evenly so each grill section receives an even amount of heat. This step is essential when grilling steak because it prevents hot and cold spots on the grill that could affect the cooking process.

    • Grill 6-8 minutes for a rare steak , which will be the pinkest and not warm all the way through.
    • Grill 7-10 minutes for a medium rare steak , which will be very pink but warm in the center.
    • Grill 10-12 minutes for a medium steak , which will be slightly pink and still very juicy.
    • Grill 12-15 minutes for a well done steak , which will be brown and warm all the way through.

Its not recommended to cook steak any higher than 145°F because it tends to get tough. The FDA recommends cooking whole cuts of beef to an internal temperature of 145°F.

    • Medium-rare is 7 to 10 minutes
    • Medium steak for about 10-12 minutes

Avoid Individual Steaks If Cooking For A Crowd

“Don’t be afraid to go with one large steak, like a 32-ounce rib eye or a one-kilo porterhouse, for a group as opposed to multiple individual steaks,” says Prentiss. “One large steak is easier to manage and monitor on a grill than multiple smaller ones, and armed with a good thermometer, any cook can nail a perfect medium-rare every time.” Because of the inherent internal variation of cooking times within one steak, Prentiss says, you can accommodate diners who prefer medium rare and medium well with just one piece of meat.

Helpful Tips For Grilling To Keep In Mind

Once you have a good grill sear over high heat, you can move your steaks to a lower temperature to make sure they dont dry out quickly. This is known as indirect grilling. To do this, sear both sides over high heat for a couple of minutes on each side, and then move to low heat. Only turn your steaks once the full time for one side has been reached. Flipping too often on the grill can ruin the cooking process and dry out your steaks faster.

Also, always allow your steaks to rest. You should plan to rest your steak for 5 to 10 minutes to allow the juices to move back through the meat for ultimate flavor and tenderness.

If you do use a digital meat thermometer to better gauge your time for steaks on the grill, make sure you remove your steaks when its internal temperature reaches about five degrees below your desired temperature, since it will continue to cook a bit after you remove it from the grill. If you want your steak to cook to 135 degrees, then remove it when it hits about 130 degrees.

Its summertime, which means grilling season is in full swing. If youre looking to up your grilling game, a sirloin steak is a great option. Heres how to cook a sirloin on a charcoal grill. Start by prepping your grill. If youre using a charcoal grill, light the coals and let them get to a medium-high heat before adding your steak. If youre using a gas grill, heat the grill to a high heat. Next, its time to season your steak. Generously season both sides of the steak with salt and pepper. If youre using any other seasonings, now is the time to add them. Once your grill is prepped and your steak is seasoned, its time to start grilling. Place the steak on the grill and let it cook for about 4-5 minutes per side, or until it reaches the desired level of doneness. Once the steak is cooked to your liking, remove it from the grill and let it rest for a few minutes. This will allow the juices to redistribute, ensuring a juicy and flavorful steak. Now, its time to enjoy your perfectly cooked sirloin steak. Serve it with your favorite sides and enjoy!

Total cooking time for a 2 inch boneless top sirloin is about 18 minutes, which results in a medium rare result. Make certain that the meat thermometer you use has instant-read capabilities. Im going to tell you five quick and easy steps to grilling the perfect steak on your charcoal grill!

Step 1 Prep and season the steak

The first thing you will want to do is take your steak out of the fridge and season it on both sides with your favorite rub or the one we used below. After you have seasoned the steak let it sit for 30 minutes. Seasoning the meat and letting it sit for this time will help it cook faster and more evenly while holding the seasoning better.

Also, if there is any excess fat please trim that off to avoid flare ups while grilling the steak.

Step 2 Fire up the grill

For steaks you want your charcoal grill to be as hot as possible. Ideally anywhere for 550-650 degrees F.

You can either use a chimney for your charcoal or light a pile of about 100 Kingsford Hardwood Charcoal Briquettes.

When the coals are ready you will want to arrange them into two zones. Essentially you want all the coals on oneside of the grill for direct heat and then the otherside that doesnt have any coals will be your indirect heat.

Replace your top grate, allow the great to heat up. Place cover on the grill. Remember all vents on the grill should be fully open.

When ready to grill pour cooking oil onto a folded paper towel and oil the grate using a long-handled tongs.

    Step 3 Grilling the Steak

Flip the steak over and sear the other side.

After the steak is properly seared move it to the warm side where there are no coals.

Step 4 Check Steak for Doneness
