Cooking a steak perfectly can seem overwhelming. Which type of steak? How long to cook? What about seasoning and pan heat?Im going to answer all of those questions, and more, to get you cooking steak like a pro!Plus I’ve got some fantastic sauces to serve with your steak.

It took me a long time to figure out how to cook the perfect steak, consistently well, every time.I’ve served up many overcooked, chewy steaks in our early dating days! For something that seems so simple, there are lots of variables, which can be confusing!

Now I’ve got great steak cooking under my belt, I’ve come up a no-fail, step-by-step plan, covering each of those variables, so you can be confident in the kitchen to cook beautiful, juicy steak.

What Do We Need

  • Let’s start with the steak of course. I recommend a good quality thick ribeye or sirloin steak with some fat running through it.
  • Ribeye tends to have a chunk of fat in the middle and some smaller veins of fat .
  • Sirloin just tends to just have the smaller veins of fat.
  • We’re going to concentrate on those cuts, but I’ve also got a note on cooking fillet steak in the notes section of the recipe card.
  • DON’T be scared of seeing fat on your steak – some of the fat renders down to help ensure a juicy steak. We also crisp up that fat when it’s in the pan. Fat is GOOD!
  • What you do need to look out for is gristle – these are streaks of chewy/rubbery cartillage, that aren’t broken down during cooking. You sometimes find gristle as little wriggle lines of of-white in the steak. A little bit is fine, but any more than that makes it a far less enjoyable steak.
  • For cooking the steak, we also need a high smoke point oil , plenty of salt and freshly ground black pepper, a little butter, and if you want to to add some extra flavour, a few cloves of garlic and some fresh thyme or rosemary sprigs.

    I love steak as much as the next guy, but I have to admit that it can be a bit one-dimensional.

    Theres only so much you can do with a medium-rare hunk of meat, and if you serve the same side dish with every steak like mashed potatoes or baked beans you can get bored pretty quickly.

    This is why you should always serve a vegetable with your steak.

    It complements and balances out the flavor. It also adds color and texture to the plate.

    Finally, it gives you another chance to show off your culinary skills and make use of fresh seasonal produce.

    What Are The Different Grades Of Beef

    Sirloin Steak with Fresh Herbs

    There are three grades of beef steak that you will find in a US supermarket: Select, Choice, and Prime. Select is generally the grade of sale-priced, or advertised meat. Select grade is just above what the USDA deems edible. So if you buy Select grade meat, dont be surprised when it isnt that great. It will always be worth it to pay the extra money per pound for the Choice grade. If it is choice grade, it will be advertised as such and marked somewhere on the label or packaging. If your supermarket carries Prime grade, lucky you!

    Preparing Your Steak And Pan

  • 1Use a boneless cut of steak about 1 in thick. For best results, use a thinner cut of steak, so you can cook it thoroughly on each side. Additionally, the steak will taste best if it’s fresh, though you can also defrost a frozen steak in the refrigerator prior to frying.XResearch source
  • If your steak is very wet and moist, pat it dry before you cook it.
  • Some good cuts for frying or pan-searing include rib-eye steak, New York strip steak, and filet mignon.XResearch source
  • 2 your steak in advance to add additional flavor . Place your meat in a bag or glass container, and cover it in a marinade of your choice. Then, seal up the bag or cover the container and place the steak in the fridge for at least 2 hours.XResearch source
  • Use about 12 c of marinade per 1 lb of meat.
  • For best results, marinate your steak overnight.
  • If your marinade has acid, alcohol, or salt, don’t marinate for more than 4 hours, since these ingredients denature the food.
  • If your marinade has citrus juices like lime or lemon, don’t let it sit for more than 2 hours. Acidic marinades can change the color of your meat.

    Grill-marinated steak tips at different temperatures can vary greatly in taste and texture. Here are three tips to help get the best results:

  • Start with a cold steak. When grilling, keep your meat chilled by wrapping it in foil or putting it in a cooler for a few minutes before cooking. This will help to reduce the risk of bacteria growth and preserve the flavor of your steak.

    How Do I Cook Steak

    • First start out by letting the steaks rest at room temperature for 30 minutes .
    • Heat vegetable oil in a 12-inch cast iron skillet over medium-high heat . I like to turn on vent fan above stove.
    • Dab both sides of steak dry with paper towels then season both sides with salt and pepper .
    • Place steaks in skillet and using metal tongs press down across top surface of steaks to ensure the entire bottom surface is making direct contact with skillet.
    • Let cook until browned on bottom, about 3 minutes.
    • Flip and continue to cook until steak is about 10 degrees away from desired doneness approximately 3 minutes longer.
    • Reduce heat to medium-low, add butter, garlic and thyme. Using an oven mitt grasp pan and tilt pan so butter pools to one side, spoon butter over steaks and continue to cook until steaks registers temperature of desired doneness, about 1 minute longer.
    • Transfer to a plates, let rest 5 minutes before slicing.

    • Blue: Should still be a dark colour, almost purple, and just warm. It will feel spongy with no resistance.
    • Rare: Dark red in colour with some red juice flowing. It will feel soft and spongy with slight resistance.
    • Medium-rare: Pink in colour with some juice. It will be a bit soft and spongy and slightly springy.
    • Medium: Pale pink in the middle with hardly any juice. It will feel firm and springy.
    • Well-done: Only a trace of pink colour but not dry. It will feel spongy and soft and slightly springy.
