These chicken sandwich melts are scrumptious and they are an easy company-ready dish that takes minutes to put together. They will win over a crowd every time! The first time I tried them , I was scribbling down the recipe before I finished chewing.

Im always on the lookout for recipes that are great for unexpected visitors or even expected ones. You dont have to spend hours in the kitchen for your friends and family to love what you cook.

Depending on your grocery stores, some of them have pre-sliced ribeye steaks. I know that I recently found Trader Joes carrying some! Additionally, you can also ask your local butcher to slice it for you as well. However, if all else fails, getting razor thin slices of your ribeye steak is easy. For best results, place your steak in the freezer for at least an hour. This will firm up the steak and allow you to slice it better as opposed to it being in the refrigerator. Of course, it will also help you tremendously to use a super sharp knife!

Expert Tips For Thinly Slicing Beef:

Firstly, it is important to start with thinly sliced steak, the best way to get evenly thin slices is to use a ham slicer or Mandoline slicer. The secret is to freeze the beef before running it through a meat slicer. Freeze the steak in its original package for about 40 minutes to one hour depending on how thick your steak is. If youre starting with frozen beef, simply thaw it for about 1-2 hours until the edges soften and it is still partially frozen.

The key is to make it easy enough to slice, not make it rock solid or too soft because it will then get too rubbery when slicing. You can attempt to use a sharp knife, but slicing 2 pounds of frozen steak can get tiring so, invest in a mandoline slicer or ask the local butcher to use a deli slicer to cut your beef. The Best Cut Of Beef For Cheesesteaks

Its important to use a cut of beef that does not require a long cooking time to get tender. Ribeye is a common choice but the cost is beyond what Im willing to spend, especially considering this recipe calls for 2½ to 3 pounds of beef.

My favorite cut of beef for this Philly Cheesesteak recipe is sirloin, specifically petite sirloin. Top sirloin is a wonderful choice but petite sirloin is less expensive and still plenty tender enough to create a fabulous Cheesesteak. Its also a thinner cut so there is a bit less slicing involved. Ive been able to pick up value packs of petite sirloin for less than $4 per pound at my local Safeway. You just cant beat that!

The process is easy! Youll need a large, deep sauté pan to start. If you dont have any large sauté pans, a Dutch oven will do the trick.

I love to add bell peppers and onions to add a burst of color and a ton of flavor to these tasty cheesesteaks.

Heat vegetable oil over MEDIUM-LOW heat and sauté thinly sliced onion and bell pepper. You want to avoid browning the peppers and onions so if they do begin to brown, reduce the heat under the pan a bit. When they are nice and tender, transfer them to a large dish and set aside.

Add additional oil to the pan and then add half of the chopped sirloin to the hot pan. Season with a little Lawrys Seasoned Salt, or your favorite all-purpose seasoning, and a little garlic pepper. Cook and stir until browned and then transfer this first batch of browned beef to the dish with the peppers and onions.

Repeat the process with the remaining beef and seasoning. Transfer the second batch of browned beef to the dish and drain any juices from the pan.

Return the pan to the heat and transfer the cooked veggies and beef to the pan. Place sliced provolone over the top and cover the pan to allow the cheese to melt

Use tongs to mix the melted cheese throughout the beef and veggie mixture and its time to load up those hoagie rolls!
