Montreal Steak Seasoning Ingredients
The actual recipe he used is a bit of a mystery, but after digging a little bit I found the key players are salt, pepper, garlic, onion, dill, and coriander. The amounts and any additional seasonings are basically just creators choice, so I took some liberties with my recipe and adjusted amounts until I created a blend that I think is absolutely delicious! Savory but still bright from the dill and coriander.
For my homemade Montreal seasoning, I wanted the flavors to really pop and I absolutely love the bigger pieces of spices mixed into the seasoning, so I used a mortar and pestle to grind the whole spices fresh. If you dont have one, you can use a small coffee grinder You can also just use the pre-ground versions of any of the whole spices included in the ingredients list, but they may not be as vibrant so you may want to season your meat a little more liberally with the finished Montreal seasoning.

This homemade spice blend is a copycat version of the incredible Montreal seasoning you can find in most markets and in volume at Costco. The added bonus here is you made it and know exactly whats in it, no ingredients you cant pronounce.
I think Ive come close and if anything, its one I enjoy adding to grilled meats, especially a juicy grilled flank steak or a grilled ribeye topped with herb butter.
I make it large batches to have around if pinched for time. This recipe makes 2 1/2 cups and doesnt last long. Store in a sealed jar and keep with your other spices and seasonings.

Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes.

I never promise that store bought mixes are gluten-free, because you never know if they are adding wheat or other ingredients as fillers or anti-caking agents. Thats why I studied labels of several brands to see what spices are in them, and then developed my own version.

How Much Steak Seasoning To Use
The amount of steak seasoning per steak will depend on the size of your steaks and the seasoning you are using. You can always eyeball it and just season generously, but I often measure to ensure I truly have the right amount the ideal amount is often more than you think you need!
The most critical component in seasoning is salt, so I always determine the amount to use based on how much salt is in the recipe.
TIP: Julia Childs rule of thumb is 1 teaspoon of salt per pound of meat. So for steak seasoning, youd use the amount of seasoning needed to include that much salt.
Of course, this Montreal steak seasoning recipe has other ingredients besides salt, so the rule of thumb for this one is 1/2 tablespoon Montreal steak seasoning per 8-oz steak.

Montreal Steak Spice Origin
Over 70 years ago, Morris Sherman, a skinny man nicknamed The Shadow, created a sensation by accident.
Sherman worked as a grill man at Schwartzs, a smoked meat deli in Montreal, Canada. A Jewish immigrant from Romania by the name of Reuben Schwartz owned the deli.
Schwartz allowed his employees to eat liver steak for free. Sherman The Shadow wanted to make his meat more appetizing, so he seasoned it with a concoction of spices. He had Jewish pickling and pastrami spices, salt, and pepper at his disposal.
As legend goes, Sherman unassumingly added Schwartzs Jewish pickling spices to the liver steaks as he grilled them.
Since he was grilling right in front of the customers, people noticed what he was doing. They requested the same seasoning on their food too. And with that, Montreal steak seasoning was born.
The seasoning became so popular in the community that Schwartzs deli began selling the seasoning mix to its customers.
Soon other Montreal delis and steakhouses began duplicating the recipe for their customers.
At first Montreal steak seasoning was only sold locally. But that changed when the flavor experts from McCormick Canada visited Montreal in the late 1980s.
They fell in love with the seasoning and decided to bottle and sell it. Originally, they intended to sell the spice blend to restaurants only.
But even after distributing samples to chefs in restaurants, no orders came.
Why Is There A Shortage Of Mccormick Seasoning Packets
The continued Old Bay Seasoning shortage is happening despite McCormicks efforts to keep up with demand. Lesser-performing items were cut in order to help ensure that the most popular items, including Old Bay, stay in stock. The company also added 1,400 additional employees in its supply chain manufacturing process.

When Should I Season My Steak
Moral of the story: If youve got the time, salt your meat for at least 40 minutes and up to overnight before cooking. If you havent got 40 minutes, its better to season immediately before cooking. Cooking the steak anywhere between three and 40 minutes after salting is the worst way to do it.
How Do You Apply A Dry Rub
Applying a rub is easy!
- Start by blotting the meat with a paper towel to remove excess moisture.
- Next generously coat the meat with olive oil.
- Now with one hand sprinkle on the seasonings, dont forget to season the second side and the edges if its a thick cut of meat! Sprinkling with one hand and rubbing the spices in with your other hand will eliminate cross-contamination and be less messy.
Dont be afraid to rub it in well to completely flavor the meat!

It worked perfectly! There are quite a few recipes on the Internet for Montreal Steak Seasoning, so I sort of combined them to suit my tastes.
I do love the coarse texture of the store-bought version, so rather than using all ground spices, I opted for things like peppercorns, mustard seed, and coriander seed.
If you have a mortar and pestle or spice mill, thats great! If not, you can put your spices in a zip top bag and crush them with a heavy rolling pin, or the edge of a cast iron skillet. Thats what I did, and it worked great.
Now that I know how easy it is to make my favorite steak seasoning at home, I might just keep doing it this way. And this would be a great gift for the grilling aficionado in your life!
And heres a little secret my brother recently shared with me. This stuff is amazing on hash browns! I dont know why I never thought of it myself, but trust me, youve got to give it a try!
