Is Grass Fed Synonymous With 100 Percent Grass Fed

To begin with, the term grass-fed beef refers to meat from animals that have been fed only grass. So, what do you think of grass-finished? It may appear that the two are interchangeable. But no, thats not the case.

Simply explained, grass-finished beef comes from cattle who have spent their entire lives eating only grass and forage. Grass-fed, on the other hand, is a term that can be used to describe meat from cattle who were raised on grass but were either supplemented with grain feed or ended on a grain-based diet. On fact, many grass-fed cows spend the last several months of their life in feedlots ingesting grain to help them gain weight quickly.

The bottom line: To get the grass-fed label on your beefs packaging, cattle do not have to be on a completely grass-fed diet. Furthermore, pasture-raised cows are not necessarily grass-fed. This means that grass-finished beef can be sold as grass-fed meat in the grocery store, but not the other way around. Also, keep in mind that pasture-raised cows are not necessarily grass-fed.

Our grass-fed, grass-finished, organic, and free-range beef is 100 percent grass-fed, grass-finished, organic, and free-range. There are a lot of compelling reasons to choose 100% grass-fed, grass-finished beef, including a number of major health advantages. Grass-finished beef has 20% fewer calories and greater levels of Omega-3 fatty acids, CLAs , and Vitamins A and E than grain-finished meat.

What Should I Cook My Steak In

Fat is an essential element of the whole process, whether in the meat itself or in the cooking. Nigel Slater suggests brushing the meat with clarified butter just before it hits the pan Fearnley-Whittingstall would rather that you greased the pan beforehand. Ducasse uses butter, lots of it, but adds it to the pan once the meat is browned instead of slipping it in at the start. He then uses the melted butter, flavoured with crushed garlic, to baste the steak as the cooking comes to an end. This basting, Ducasse believes, adds a savoury punch to the crust.

How Do I Season My Steak

Grass Fed Beef – Everything You Need To Know And Where To Buy It

Some caution against seasoning with salt. However, Ducasse, and Iglesias, are both strong advocates of salting, in the belief that a generous salting helps the steaks cook evenly. Hugh Fearnley-Whittingstall, however, advocates salting about halfway through the cooking process. We prefer salting at the outset and quite generously as it helps build up a delicious salty crust.

What Cut Should I Go For

Its often a question of budget and whilst the obvious names are right up there sirloin, fillet, rib-eye, T-bone and rump all renowned for their tenderness- its worth looking at some of the cheaper cuts like minute and skirt. These cuts are all available from the Dorset Meat Company in our grass fed, free range meat boxes.

Fernando Larroude, the master steaksman Gaucho, recommends flank and skirt as two great cuts. The marbling on these cuts means theyll be succulent and juicy, perfect for a summer barbecue. he says. A lot of chefs opt for rib-eye. The cut has excellent fat marbling and holds together well.

Recipes And Cooking Tips

  • Be sure your steak is completely thawed.
  • Bring the meat to room temperature. Remove your steak from the refrigerator 30-40 minutes before cooking.
  • Resting steak is also important because the heat of cooking pulls the juices in the meat toward the surface if you slice into it immediately after cooking, those flavorful juices will end up on your plate, not in your steak. Allowing your steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful.
  • We recommend cooking your steak to no more than medium rare.
  • Use a meat thermometer – and remove from heat at 125 degrees.

What Is Grass Fed

We have all heard of the virtues of Alberta beef, but why demand the grass fed and grass finished beef?

We grass feed and finish our animals as a commitment to your health and eating experience, as well as sustainability of our ecosystems.

  • Our cattle are grazing on pasture from birth to the time they are butchered, creating full-flavour, local meat that reflects the diverse and rich grasslands of Alberta.
  • Grass-fed and grass-finished beef contributes to a diet rich in essential vitamins, minerals, and a healthy ratio of Omega-6 to Omega-3 fatty acids.
  • Our grazing practices are designed to build on the soils, and contribute to the ecology and ecosystems. Using rotational and intensive grazing techniques we look to mimic the bison that so deeply defined the soils and ecology of our area.

Do you love to eat beef? Who would not anyway? Beef is so tender, and if cooked well, expect that it can truly make you so happy and satisfied. But of course, if you want to enjoy the most of this dish, it is strongly recommended that you stick with grass fed beef. Agrass fed beef butcher have so many reasons why they focus on this type of beef and not the normal or usual beef options.

To help you understand where they are coming from, and to possibly make you change your mind about grass fed beef, read the reasons why organic is a perfect choice:

This type of beef is free from added hormones, antibiotics and other known drugs to make the beef grow faster and free from diseases. Everything that is consumed by the beef will be consumed by the person who eats them, so expect that if they took steroids, it is like you take steroids too.

They are fed with only organic feed. Some beefs today are fed with nasty things or things you never know are possible for the beefs to eat, like newspaper, animal bits and other non food because these non food options are not only filling but cheaper too.

These beefs are raised humanely, they are not squeezed in a small space, as they are raised in the field or in a free range.

Sells Their Grass Fed Beef At Affordable Prices

Yes, 100% grass fed beef is more expensive than regular beef, but even if they are more expensive, the benefits it can provide you is more than enough reason for you to add a little more on your budget to enjoy beef.

But needless to say, there are butchers that are selling their beef cheaper than its counterparts. You just have to be resourceful and patient when looking for one.

What Temperature Should I Cook My Steak At

Here, it can quite tricky. Slater and Ducasse like a very high heat, while Iglesias and Fearnley-Whittingstall prefer something more moderate. The debate is between those who like it more on the charred side and those who believe over browning is simply a distraction from the wonderful natural flavours of the beef. The higher heat brigade accept that this works a lot better for thick cut pieces of meat than thinner ones. Ducasse says that too thin a cut, and youll cook it through before youve had a chance to enact any of the crucial caramelisation.

Should I Flip My Steak And If So How

Grass

Again, this is a real area of contention. McGee is convinced that frequent flipping is what keeps the best steaks moist: frequent turns mean that neither side has the time either to absorb or to release large amounts of heat. The meat cooks faster, and its outer layers end up less overdone.

For Ducasse, there is another advantage to flipping: it allows you to keep a track on the progress of charring. Just to confuse matters, Slater suggests pressing down on the steak with a spatula to improve thermal contact. This, he believes, gives a superior caramelised crust.

We would advocate letting the steak rest for a short while before serving
