Want a recipe for grilling the perfect steak that you can try out for dinner tonight? You can do this with rib eye, porterhouse steaks, boneless strip, or whatever other cut delights you the most. You can also use a steak marinade overnight and grill the steaks the next day. This recipe serves four.

Oven Temperature And Time

I suggest a 400° oven. For a final internal temperature of about 145°, it usually takes 7-8 minutes. However, you can use a little lower or higher oven temperature, with or without convection, and get about the same resultsremember, you are cooking to a final temperature, not by time.

For rare, it may be almost no time in the oven if you did a strong sear with a rest to room temperature or if you steaks are thinner.

If your steak is thicker or was not rested to room temperature, or you want it more in the well-done range, it may take 12-15 minutes.

There are several variables that will determine the cooking time. The initial temperature of the steak, the thickness of the steak, the temperature of the oven, the length of the sear, and your desired finish level.

A final word to the wise, NEVER COOK BY TIME ALONE, cook to your target internal temperature.

Heres a quick recipe on how to cook a New York steak on the grill. If you have a good steak, this is a pretty simple thing to do: just a little salt and pepper and the right technique, and you have a great steak. We like to let the flavor of the New York stand out, so serve with simple sides like a salad or in this case some simple fried green beans and onions.

Now that grilling season is finally back in swing, I thawed out a New York steak that had been sitting in the freezer for a while just begging to be eaten. For those of you who havent tried one of our New Yorks, this is a full-flavored and quite tender steak that stands on its own without the help of seasonings or marinades. Just a little coarse salt and pepper does the trick. And the fat rind along the edge of the steak caramelizes beautifully to an almost bacon-like texture.

If you manage to have any leftovers, I like to slice very thin then quickly caramelize in butter and serve for breakfast with a slightly runny fried egg.

To serve this steak for dinner, try a light salad on the side, or as in the photos, a quick green bean stir fry. For the stir fry, just pan fry fresh green beans in butter with salt, pepper, and rosemary leaves until about half done, then add chopped onions and fry til caramelized. About three minutes from done, add some chopped mushrooms and garlic and a little more butter as needed to fry the mushrooms.

  • Allow steaks to sit at room temperature for 20 to 30 minutes. In the meantime, fire up your charcoal or gas grill . Make sure the heat is high before beginning to grill.

    Summer’s here and I’ve got a brand-new backyard to grill in, so now seems like as good a time as any to reexamine some of the things we know about grilling beef.

    Sure, we can all agree on what our goal is: A perfect steak should have a crusty, crunchy, well-browned exterior surrounding a core of perfectly pink, juicy, tender meat that spans from edge to edge.     I get a cast iron pan smoking hot and then sear the steak on one side, turn it over and stick it in the oven. Make sure you put on your exhaust fan and open windows or your smoke alarm will probably go off.

    • Salt the steak 24 hours in advance. It goes into the meat overnight, adds moisture and enhances flavor
    • Dont cover steaks in the fridge. The outside of the steak should be dry if you want to sear them. Put them on a rack so both sides dry.
    • Make sure the steak is dry, before searing. When ready to cook, I used to think my steak needed to come down to room temperature, but I now find that I get a better sear with a cold steak, as long as the steak is dry. Its the water that comes out of the steak that prevents that nice sear, also known as the mailard effect.
    • Start with a very hot cast iron pan.
    • Do not add oil until pan is hot.
    • Use a round grill press, if you can, but no worries if you dont have one.

    Should You Boil Steak Before Grilling

    Never, never, never boil steak before grilling. Boiling the steak will give the exterior an unpleasant grey color, and it will probably be overcooked before it gets to the grill.

    There is a technique called sous vide cooking where you immerse steak in warm water to cook it to a desired temperature, then finish cooking it on the grill. But the water temperature is kept closer to 130 degrees Fahrenheit, never as high as the boiling point of 212 degrees.

    How To Grill The Perfect Ny Strip Steak

    Serves: 2 | Prep Time: 15 minutes | Cook Time: 5 Minutes

    Ingredients2 tbsp compound butter

    Step 1: Place the steaks and compound butter on the counter and allow them to come up to room temperature for about an hour.

    Step 2: Light grill and set up for high direct heat. Youll want to get the coals as hot and as close to the cooking grate as possible. If using a gas grill, allow the grill to preheat with the lid closed for at least 15 minutes.

    Step 3: Evenly coat strip steaks with olive oil and season them liberally with coarse sea salt. Put two pats of compound butter on each plate and set aside.

    *Tip I dont recommend putting pepper on at this point as the extreme heat will burn it, producing a bitter flavor. I also dont recommend using a premixed rub as many of them contain sugar which will also burn. Trust me on this one, just use the salt and let the meat shine through.

    Step 4: Place steaks directly over hot coals and flip every 20 seconds. With each flip, place the steaks in a different spot on the grill grate. This allows the best searing to take place through conductive heat. The steaks below have been on the grill for about 2.5 minutes total, and you can already see that nice crust forming.

    Step 5: After about five minutes of total cook time, use a reliable quick read meat thermometer to check the internal temperature of the steak. Remove steaks from the grill when the internal temperature reaches 115° F for a medium rare steak.

    What To Serve With Traeger Grilled New York Strip Steak

    This steak is wonderful with a Caesar salad, but any salad works. You can also serve with something like grilled asparagus or zucchini. Here are some other suggestions for sides that you might want to give a try as well.
