How To Thaw Frozen Fish

I bought my ahi tuna steaks frozen, but you may be able to find fresh. If you use frozen, just make sure its completely defrosted before cooking.

I usually take mine out of the vacuum sealed plastic and leave it on a plate, covered in plastic wrap, in the fridge for 24 hours before I plan on cooking. Then, I make sure to pat them dry before cooking, as this will create a better sear.

What Is Ahi Tuna

Ahi tuna is type of tuna that is divided into two different species: yellowfin and bigeye. And its often cheaper than bluefin tuna, with a very similar flavor profile and texture. You can usually find it frozen at Trader Joes or your local grocery store for very inexpensive.

While I love salmon, it can be a bit pricey. And tuna, like salmon, is healthy and has an array of serious health benefits .

A seared tuna steak is a bit different than the canned tuna everyone is used to. For one thing: it comes in a whole, beautiful raw steak that holds its form much easier than other kinds of fish, which may tend to flake apart.

For another thing: it is usually cooked medium-rare: seared on the outside, red on the inside.

It actually looks very similar to a beef steak in this regard. It. Is. AMAZING.

What To Serve With Ahi Tuna

I like sprinkling some sliced green onions on top of the sliced ahi tuna, along with some toasted sesame seeds and a squeeze of fresh lime juice.

Its DELICIOUS served in a rice bowl with green beans or broccoli and a drizzle of spicy mayo or other sauce.

Or, for a super healthy and low-carb meal, serve it on a bed of greens with an Asian-style dressing. .

Alternatively, this would be great in a seared tuna poke bowl. Poke bowls are usually made with raw fish, but I think this fish, seared perhaps for a little less time than normal, cut up into cubes, would be excellent in a poke bowl.

Because tuna has a fairly robust flavour, you can easily add herbs, spices and flavours to it without worrying about overwhelming the taste. The key to flawless tuna steak when your preferred method is stovetop cooking is a blazing hot skillet that allows you to sear the outside while keeping the inside raw. Because it will only be on the stove for 2½ minutes, it must be scalding.

You can follow these easy steps to cook your tuna steaks on the stovetop:

  • Season the tuna steak with salt and pepper after rubbing it with oil. Olive oil is preferred because of its flavor, although any oil would suffice.
  • Use a heavy-bottomed skillet that may be warmed until smoke is visible coming from the pan. Use a non-stick skillet instead. You will destroy the non-stick coating if you use these for high-heat cooking. Before preheating the skillet, do not oil it. If you need to oil a pan , wait until its scalding before brushing it lightly with oil. Use a heat-resistant basting brush or a paper towel lightly dipped in oil, or remove the pan from the heat and lightly spritz with oil.
  • Place the tuna in the skillet once it is very heated. To get a lovely sear on the exterior while keeping it rare on the inside, grill a 2.5cm tuna steak for 90 seconds on the first side and 60 seconds on the other side.

The interior temperature should be 48°C . As a result, the inside will remain rare and delightfully warm rather than cold.

Grill The Tuna Quicky

Your goal when grilling is to get a sear on the exterior as quickly as possible, while minimizing how much heat penetrates to the center. Even with all of the preparations we’ve made, the fish will still likely stick to the grill grate at first, so do your best to refrain from attempting to lift or move the steaks prematurely. They should release on their own once they’ve browned well.

If the fish has adhered to the grill grate at all, the best way to release it isn’t to try to force a metal spatula underneath. Instead, slide a thin metal tool, like the tines of a carving fork, large culinary tweezers, or even the spatula blade itself, down between the grill grates and under the fish. Then gently lift from below, being careful not to force it if it’s stuck on tight.

Because of how rare I think grilled fresh tuna should be served, I don’t bother with thermometers. There’s nothing to measure: Just sear both sides and then pull it off the grill right away.

When it’s done, remove it from the grill and slice it with the sharpest knife you have, ideally a thin-bladed one like a slicing knife. I think it’s good simply drizzled with fresh olive oil and a sprinkling of salt and fresh black pepper.
