Cooking Steak On A Pellet Grill

When you cook steak on a pellet grill, you have the best of both worlds. You can grill steak in a hurry using the direct heat method. Or, you can use the oven capabilities of the pellet grill to do the increasingly-popular reverse sear method. With this method, your steak will get a nice dose of wood smoke while it cooks.

Direct heat method : To grill over direct heat, set the grill to high, close the lid, and allow it to preheat for 15 minutes. Place the steaks on the grill grate and cook for approximately 3.5 minutes per side until the internal temperature of the steak is 135 degrees Fahrenheit .

Reverse-sear method : To do the reverse-sear method, set your grill to 225 degrees Fahrenheit, close the lid, and preheat for 15 minutes. Put the steaks on for 60 minutes, or until they reach an internal temperature of 110 degrees Fahrenheit.

Take the steaks off the grill, then set the temperature of the grill to high. Allow it to preheat with the lid closed for about 10 minutes, and put the steaks back on the grill. They’ll sizzle and brown, getting that terrific Maillard reaction aroma and color. Cook for approximately 4 minutes per side to allow the sear to form, and to get the internal temperature of the steak to 135 degrees Fahrenheit . Generally, you will need to wait for about 12 to 15 minutes to cook a steak on this cooker. This amount of time is used if you set the grill at 450 degrees Fahrenheit.

So you normally dont want to cook a steak straight out of the fridge you want to get it up to room temperature so that it doesnt take as long to actually start cooking.

Its just a little bit harder to get a crust on the outside and the proper cook on the inside if you starting at a lower temperature stop.

How To Make Pellet Grill Steak

Step One: The biggest key to cooking a steak on the pellet grill is to preheat the grill. Crank it up to the high temperature that you can. My grill gets up to a scorching 500°F. It may take up to 15 minutes for your grill to achieve its high temperature. It is important to make sure that your grill is pretty clean before you do this. If there is a pan that catches drips, maybe clean that out and brush off the grill grates first. The last thing we want is to start a grease fire or make a steak that absorbs the flavor of burning off old grease.

Step Two: While your grill is preheating, take that time to season your steak. Once your steak is properly seasoned, place it on the grill and insert the meat thermometer probe so that you can have a constant read on the internal temperature. This is very important if you want to cook the perfect steak. When you cook steak on high heat, 60 seconds too long can turn your desired medium rare steak into a medium or even medium well steak. So use the thermometer to keep an eye on your internal temperature. I flip my steak over halfway through cooking.

Step Three: Once your steak is cooked to your desired temperature. For me, it was medium rare at 125°F. Remove the steak from the grill and let it rest for two minutes. Then you can serve it whole to your guest or if you are serving family style or on top of a salad, slice and serve immediately.

Reversing Sear Steaks On The Grill

Traeger Pellet Grill Steak Test in Northern Ireland

The Reverse sear method is nothing new, but I didnt notice it on pellet grills until my friend Jim Ross showed me how he did it on his Green Mountain Grill. It works by cooking the outside of your steak at a lower temperature first while closing the lid, and then increasing the heat to finish off by getting a nice char or crust on either side of the meat.

-Preheat a smoker to around 250 degrees fahrenheit.

-Season your steaks with salt and pepper to taste.

-Place seasoned steaks in an aluminum pan just large enough to hold them flat, cover tightly with foil, then place in smoker for 12 minutes. This will cook them through without burning outside before searing them over the high heat.

-Remove the steaks from the smoker, uncover, and let them rest for 8 minutes.

-Place grill on high heat with lid closed for 5 minutes to get a nice sear.

-Carefully flip steaks over without burning yourselfthis is why its important not to have flare ups when searing!

-Cook another three minutes per side or until desired doneness is reached.

You may need to adjust cooking times depending on how thick your steaks are, but that will give you good starting point in order to achieve perfectly cooked steak every time!
