Costco Vs Sams Club Brisket Which Is Better

Most people prefer the brisket at Costco, although both are very similar and high quality. Costcos brisket is perceived to have slightly better flavor and texture.

As weve seen in previous sections, meat is graded, and most good stores offer good quality meat.

To decide which club has the better brisket, wed have to get started knowing two things: whats termed brisket and how to tell which one is better. Brisket is the Holy Grail of meat.

The name brisket derives from old Norse, and it means cartilage. Its cut from the breast or lower chest of veal or beef. Its the pectoral muscle and weighs between 12-20 pounds. You can see that it can be large.

This is why its usually cut into two pieces: the flat and the deckle point.

The first is leaner and cuts easily, while the second is marbled. The flat is carried by most grocery stores. Both are called packer briskets and offer you greater value if you can afford it.

Go for Select grade if youre on a budget.

But Prime is ideal. Go for one whose flat is at least 1 inch thick at the end. Flat or point? You always want meat thats marbled.

But, if you dont want a lot of fat, flat is better. Costco or Sams club? Taste is subjective. But, many experts give it to Costco. Here is an example of a test.

Below is a perfect recipe for a grilled tri-tip sandwich. One tri-tip can serve at least 6-8 adults or make about 12 sandwiches, making the cost of the cut a true value to any BBQ you will have at home or at the campground. Beer Braised Brisket With Mustard Sauce Recipe:

What Youll Need:

  • USDA Prime Brisket Whole Cryovac
  • 1 tablespoon olive oil
  • 1 bottle beer or pale ale
  • Mustard Sauce:
  • 2 tablespoons chopped fresh parsley

Directions:

  • Heat oil in large stockpot over medium heat until hot. Place beef Brisket in stockpot brown evenly. Remove Brisket from stockpot season with salt and pepper.
  • Add onions to stockpot cook and stir 3 to 5 minutes or until onions are tender. Return Brisket, fat side up, to stockpot. Add beer. Bring to a boil. Reduce heat cover tightly and simmer 2-3/4 to 3-1/4 hours or until Brisket is fork-tender.
  • Remove Brisket keep warm. Skim fat from cooking liquid. Increase heat and bring cooking liquid to a boil. Reduce heat and cook 15 to 20 minutes or until mixture is thickened and reduced by half.
  • Meanwhile combine Mustard Sauce ingredients in small bowl. Stir in 2 tablespoons thickened cooking liquid.
  • Carve Brisket diagonally across the grain into thin slices. Pour remaining onion mixture over beef. Serve with Mustard Sauce.

    How Do You Prepare Angus Beef Ribeye Steaks In The Oven

    USDA Choice Angus Beef Ribeye Steak is ideal for preparing in the oven or on the grill. For medium-rare steaks, coat the meat with oil and your favorite seasonings. Since these steaks are flavorful, salt and black pepper are ideal for bringing out its true flavor. Sear the steaks over high heat in a cast iron skillet for 30 seconds per side. Bake them in a 500°F oven for two minutes per side. For optimal juiciness and flavor, let the steaks rest before serving. For a medium steak, add one extra minute per side in the oven. For rare, have a meat thermometer available and cook in the oven until the internal temperature reaches 125°F.

    Background On My Meat Knowledge

    Much of my meat knowledge has come from reading the Niman Ranch Cookbook. Besides having amazing recipes it has a lot of information on everything you wanted to know about meat and how it is produced.

    I cannot recommend this book enough. It changed the way I looked at meat and helped me turn out some mouth watering meals in my kitchen. If you are interest in some really top notch beef and other meat recipes, I highly recommend picking up the Niman Ranch cookbook.

    Is Boneless Or Bone In Ribeye Better

    Conventional wisdom says bone in meat is generally better however, I find that there are pros and cons to each. While a bone in steak will often be juicier and arguably slightly more flavorful, a de-boned piece of meat will be easier to cook evenly.

    I know it is contrary to what most experts recommend, but for this reason I usually purchase boneless rib eye steak.

    Costco and Sams Club seem like theyre pretty much the same storeyou go there to buy things in bulk, grab a cheap snack at the food court, and score great deals on their signature in-house brands. It seems like customers pick one over the other simply based on location, but if you dig a little deeper, driving a few miles out of your way to go to one over the other might save you some money.

    Lets start with the membership. To shop at both stores you need to pay an annual fee. The Gold Star membership at Costco will cost $60. That includes one free household card and your membership is valid at all Costco locations. The basic membership at Sams Club costs $45. Right off the bat, Sams Club takes the lead as the cheaper option. If you want to avoid the membership altogether, this is how you can shop at Costco and Sams Club without a membership.

    Now, lets compare the prices of a few basic store brand items at both of the warehouses. Keep in mind that prices may vary slightly depending on the location.

    Smoke Em If You Got Em

    Although it is non-traditional, you can absolutely smoke a tri-tip, and it is delicious. Season the beef, make your fire out of oak wood, and cook it at about 225 degrees for around 3 hours or when the beef reaches an internal temperature of 135 for medium-rare. Once the meat is at temp, allow it to rest, then slice and serve. The pink smoke ring will be somewhere around ½-inch because tri-tip is a low-fat cut, so the smoke penetrates it perfectly.
