    When it comes to basic cooking, grilling a steak over a hot grill should be the easiest thing in the world.

    How many times have you gone to a barbecue at a friends house, and the steaks have been tired and dry and lacking in flavor. Too many times I hear you cry.

    Well, here are some surefire tips on taking the uncertainty out of grilling a steak on a charcoal barbecue.

    How To Grill A Steak On Charcoal Grill

    Im going to tell you five quick and easy steps to grilling the perfect steak on your charcoal grill!

    Step 1 Prep and season the steak

    The first thing you will want to do is take your steak out of the fridge and season it on both sides with your favorite rub or the one we used below. After you have seasoned the steak let it sit for 30 minutes. Seasoning the meat and letting it sit for this time will help it cook faster and more evenly while holding the seasoning better.

    Also, if there is any excess fat please trim that off to avoid flare ups while grilling the steak.

    Step 2 Fire up the grill

    For steaks you want your charcoal grill to be as hot as possible. Ideally anywhere for 550-650 degrees F.

    You can either use a chimney for your charcoal or light a pile of about 100 Kingsford Hardwood Charcoal Briquettes.

    When the coals are ready you will want to arrange them into two zones. Essentially you want all the coals on oneside of the grill for direct heat and then the otherside that doesnt have any coals will be your indirect heat.

    Replace your top grate, allow the great to heat up. Place cover on the grill. Remember all vents on the grill should be fully open.

    When ready to grill pour cooking oil onto a folded paper towel and oil the grate using a long-handled tongs.

    Step 3 Grilling the Steak

    Flip the steak over and sear the other side.

    After the steak is properly seared move it to the warm side where there are no coals.

    Step 4 Check Steak for Doneness

    Remove the steak from the refrigerator and set it aside to come to room temperature before cooking it on the grill. Heat a grill or charcoals to a high temperature before placing the meat on the grates. Grill for approximately 10 minutes each side, flipping every few minutes, until grill marks are achieved.

    “Finding the best product you can get your hands on is always the hardest part of cooking a great steak,” says Ryan Prentiss, former executive chef at Detroit’s Prime + Proper steakhouse. “Fat is flavor, so look for beef that is plump, bright red, and has the most marbling.     Use a meat thermometer to check the temperature of beef steak. Insert the thermometer into the center of the steak or roast away from bone and fat. If youre checking a large cut such as a prime rib, insert the thermometer from the side, not from the top.     You can also use a finger test method to ensure your steak is cooked to perfection. This method works best with beef steaks. Press your finger on top of the steak. A rare steak will give very little and feel spongy, a medium-rare steak will be soft to the touch but still have some resistance, a medium steak will be moderately firm to firm and spring back from your finger quickly when you press it, and well-done steak will feel rock hard with no give.

    Also, always allow your steaks to rest. You should plan to rest your steak for 5 to 10 minutes to allow the juices to move back through the meat for ultimate flavor and tenderness.

    If you do use a digital meat thermometer to better gauge your time for steaks on the grill, make sure you remove your steaks when its internal temperature reaches about five degrees below your desired temperature, since it will continue to cook a bit after you remove it from the grill. If you want your steak to cook to 135 degrees, then remove it when it hits about 130 degrees.

    Resting steak?

    Some people swear you have to rest a steak to allow the juices inside to settle. I tend to disagree.

    While technically yes, you may lose some more juice from your steak if you remove it from the grill and immediately slice it into a dozen or so pieces, that is likely not what will really happen when you are cooking a steak to serve and eat.
