When it comes to basic cooking, grilling a steak over a hot grill should be the easiest thing in the world.

How many times have you gone to a barbecue at a friends house, and the steaks have been tired and dry and lacking in flavor. Too many times I hear you cry.

Well, here are some surefire tips on taking the uncertainty out of grilling a steak on a charcoal barbecue.

How To Grill A Steak On Charcoal Grill

Im going to tell you five quick and easy steps to grilling the perfect steak on your charcoal grill!

Step 1 Prep and season the steak

The first thing you will want to do is take your steak out of the fridge and season it on both sides with your favorite rub or the one we used below. After you have seasoned the steak let it sit for 30 minutes. Seasoning the meat and letting it sit for this time will help it cook faster and more evenly while holding the seasoning better.

Also, if there is any excess fat please trim that off to avoid flare ups while grilling the steak.

Step 2 Fire up the grill

For steaks you want your charcoal grill to be as hot as possible. Ideally anywhere for 550-650 degrees F.

You can either use a chimney for your charcoal or light a pile of about 100 Kingsford Hardwood Charcoal Briquettes.

When the coals are ready you will want to arrange them into two zones. Essentially you want all the coals on oneside of the grill for direct heat and then the otherside that doesnt have any coals will be your indirect heat.

Replace your top grate, allow the great to heat up. Place cover on the grill. Remember all vents on the grill should be fully open.

When ready to grill pour cooking oil onto a folded paper towel and oil the grate using a long-handled tongs.

    Step 3 Grilling the Steak

Flip the steak over and sear the other side.

After the steak is properly seared move it to the warm side where there are no coals.

Step 4 Check Steak for Doneness

Remove the steak from the refrigerator and set it aside to come to room temperature before cooking it on the grill. A rare steak should be warm through the center, lightly charred on the outside, and bright red in the middle. The meat should be soft to the touch, like raw meat, but browned on the surface. For a 1-inch steak, place steak on a hot grill for 5 minutes. Turn and continue grilling for another 3 minutes. For a 1 ½ inch steak, it will be approximately 6-8 minutes grilling time. Cook to an internal temperature of 120-129°F

Choose The Right Piece Of Steak The Quality Of Your Final Product Depends On Your Starting Ingredients

“Finding the best product you can get your hands on is always the hardest part of cooking a great steak,” says Ryan Prentiss, former executive chef at Detroit’s Prime + Proper steakhouse. “Fat is flavor, so look for beef that is plump, bright red, and has the most marbling. Marbling is the intramuscular fat present in high-quality beef that gives it a ‘marbled’ appearance. Grain-fed or grain-finished beef will have more marbling than a grass-fed beef.”

    How To Check Steaks Temperature

    • Rare steak: 125° F
    • Medium rare steak: 135° F
    • Medium steak: 145° F
    • Medium-well steak: 150° F
    • Well done, steak: 160° F.

Use a meat thermometer to check the temperature of beef steak. Insert the thermometer into the center of the steak or roast away from bone and fat. If youre checking a large cut such as a prime rib, insert the thermometer from the side, not from the top. The chart above will give you a general idea of what temperature your steak should be at for its doneness level.

You can also use a finger test method to ensure your steak is cooked to perfection. This method works best with beef steaks. Press your finger on top of the steak. A rare steak will give very little and feel spongy, a medium-rare steak will be soft to the touch but still have some resistance, a medium steak will be moderately firm to firm and spring back from your finger quickly when you press it, and well-done steak will feel rock hard with no give.

Is It Better To Cook A Steak On A Gas Or Charcoal Grill

When seared properly, the surface will be evenly browned with a slightly crunchy outside. Charcoal grills often provide better searing than gas grills because more direct infrared heat is produced. Some gas grills also have special sear burners that provide nearly the same effect you could achieve through charcoal…. continue reading

Should You Salt Steak Before Grilling

Charcoal Grilling Basics: Lesson 3 – Steaks

When should you salt your steak? Balistreri says to always salt your steak right before cooking. Salt will begin to cook the steaks surface and release moisture from the muscle if salted too far in advance. Ideally, we want to keep the juices in the steak by salting right before we cook, Balistreri says.

Clean the cooking grate with a stiff brush. Using a cover, grill the steaks over direct high heat, flipping once, until they are cooked to your desired doneness, 6 to 8 minutes for medium rare and 6 to 8 minutes for well done. Remove the steaks from the grill and allow them to rest for 3 to 5 minutes before cutting into them.

Helpful Tips For Grilling To Keep In Mind

Once you have a good grill sear over high heat, you can move your steaks to a lower temperature to make sure they dont dry out quickly. This is known as indirect grilling. To do this, sear both sides over high heat for a couple of minutes on each side, and then move to low heat. Only turn your steaks once the full time for one side has been reached. Flipping too often on the grill can ruin the cooking process and dry out your steaks faster.

Also, always allow your steaks to rest. You should plan to rest your steak for 5 to 10 minutes to allow the juices to move back through the meat for ultimate flavor and tenderness.

If you do use a digital meat thermometer to better gauge your time for steaks on the grill, make sure you remove your steaks when its internal temperature reaches about five degrees below your desired temperature, since it will continue to cook a bit after you remove it from the grill. If you want your steak to cook to 135 degrees, then remove it when it hits about 130 degrees.

How To Grill The Perfect Steak On A Gas Grill

In the world of backyard grilling, nothing tastes better than a grilled steak. There is a lot of controversy over the best way to grill, i.e., using charcoal, wood pellets, or gas. All three will deliver heat, the pellet and gas maintain a constant temperature, and the charcoal and pellet add smoke. You can also add smoke with a gas grill by making a smoking packet and placing it above the burners or by using a smoke tube. But there are some things that you can do with a gas grill that you cannot do with the pellet grill, and you can do it with a charcoal grill with some tools to move the charcoal.

Tips For The Perfect Grilled Steak

How to Cook Ribeye Steak on the Grill | Kingsford

Outside of the tips and methods Malcolm shares above, here are some simple tips to ensure you serve a steakhouse quality steak, every time.

    Use a dry brine

Dry brining is the process of applying salt to meat prior to cooking it.

When you salt the exterior of your meat, the salt draws moisture out of the meat that then dissolves the salt, before finally being reabsorbed back into the meat. This gives us an ultimately juicier, more flavorful steak.

You can use just salt, or you can do like Malcolm did in the video and use a rub that contains salt.

    Use a thermometer

I cant say this one enough. Use a quality digital instant-read thermometer. I have a Thermapen Mk4 and I cant recommend it enough.

Check your steak while you are cooking it to make sure you know when it is almost done and to ensure you do not overcook it.

    Resting steak?

Some people swear you have to rest a steak to allow the juices inside to settle. I tend to disagree.

Meathead from AmazingRibs.com did an amazing job debunking this myth on his website.

While technically yes, you may lose some more juice from your steak if you remove it from the grill and immediately slice it into a dozen or so pieces, that is likely not what will really happen when you are cooking a steak to serve and eat.

    To sum it up
