My pick for quality, consistency, price, and availability is Whole Foods Market. After all, they operate over 400 stores in multiple countries. While some place like Wegmans on the East Coast also has great steaks, I cant give them the win since they dont operate in most parts of the country.

Small butcher shops, of course, could be well worth checking out too if you have one. But anywhere you can find USDA Prime or at least Choice beef, ideally organically grown and grass-fed, get it! Youll have a great steak!

I would steer clear of buying meat from places that only sell USDA Select beef and also steer clear of places that dont have butchers on staff who cut their meat fresh. Trader Joes and Aldi come to mind there.

Is Organic Beef Grass

Organic beef does not necessarily mean it was grass-fed.

Organic means that the animal was not given added hormones or antibiotics or pesticides in the food. The feed can be grass, corn or soy .

Grass-fed meat means that the animal was pasture-raised and was not fed corn or soy. Grass-fed meat is often organic, but organic does not necessarily mean grass-fed.

Because cattle that are fed grain are inherently less healthy, organic does not necessarily mean better. Studies show that grain-fed cattle have unhealthy omega 6 to omega 3 fats. They have higher saturated fat and tend to be pro-inflammatory.

Grass-fed cattle have a much healthier omega 6 to omega 3 fat ratio.

They also tend to contain more vitamins, are less likely to have E. coli, less saturated fat, and fewer calories than commercial grain-fed meat.

So, if you are looking to purchase the healthiest steak, look for organic grass-fed beef with a USDA rating of at least Choice.

What Are The Usda Meat Grades

The United States Department of Agriculture grades meat at the request of the meatpacker.

The grading system determines the quality rating based on the amount of marbling in the muscle and the age of the beef.

There are generally three USDA grades of beef that you would buy from the supermarket. From highest to lowest, they are:

  • Prime
  • Select

The highest quality of meat is USDA Prime.

It is the most tender and flavorful cut of meat. It is also hard to find and usually reserved for high-end restaurants. You may be able to find it at the supermarket occasionally but at a premium price.

In short, the higher the ratio of marbling, and the younger the cow, the higher the grade.

The marbling determines the tenderness, juiciness, and flavor. Younger beef produces a finer texture, making it more tender.

The second-highest grade is Choice.

It has less marbling and is generally less tender. Less marbling also means less flavor and juice.

USDA Select is the lowest grade of steak youll find at the supermarket.

It is very lean and tougher than other cuts.

USDA Cutter and Canner grades are meats that are typically found in convenience foods, like microwave burritos, pot pies, and other processed food products.

When shopping for steak, be sure to look for the USDA shield.

Many grocers will mark packages as prime or choice, but unless it has the USDA shield, its most likely a marketing ploy.

Buying A Quality Ribeye Steak

You can’t make a great steak without knowing what to look for. Look for the following qualities when choosing a rib eye in the store:

  • – this is the white stripes that you might notice in the meat. Don’t worry, most of it will melt away while cooking. Do NOT try to trim your meat. Cook the meat and trim any excess fat AFTER you have cooked it. The marbling is what will give you that moist and juicy bite.
  • Grading- In the US, there are four grades of beef you are likely to see in stores as defined by the USDA:
  • Prime is from well-fed cattle and has a good amount of marbling. You’ll see this most frequently at high-end restaurants.
  • Choice– has less marbling than Prime meat, but is still considered high-quality meat.
  • Select– has less marbling than choice and is leaner which may make it less juicy after cooking.

You Buy All Your Produce At Trader Joe’s

Bananas may be a good deal at Trader Joe’s they’re just 19 cents each but you may want to skip buying many of your other fresh fruits and veggies here. Numerous blogs,websites and even employees have weighed in on Trader Joe’s produce and the overwhelming opinion is that it’s generally disappointing compared to many of the chain’s other high-quality products.

Produce may not be cheaper anyway. For example, Trader Joe’s sells a 6-ounce bag of organic baby spinach for $2.29, which is about 38 cents per ounce. Whole Foods sells organic baby spinach under its 365 Everyday Value for $4.99 for a 1-pound container, which is about 31 cents per ounce.

How To Sous Vide

Step 1: Place meat in a bag with some oil and herbs . Vacuum seal bag or if you don’t have a vacuum sealer then do your best to remove all the air from the bag. Your meat could also be frozen or refrigerated when you place it in the bag.

Step 2: Set up your water bath to 5 degrees below your desired doneness I like my steak medium rare.

Step 3: Place bag in water and allow to cook for 3 hours.

Step 4: Remove meat from bags and allow to rest for 10 minutes.

Step 5: While meat is resting get a skillet hot. Add oil to pan and sear for 30-60 seconds on each side.

Step 6: Allow resting for another 5 minutes before slicing and enjoying.

What Makes One Type Of Steak Better Than Another

We all have our own idea of what makes a steak good.

The same applies when we talk about better steaks. For this article, were going to assume that the better steak is super flavorful yet tender. Were also going to assume that cost is not a factor.

Filet Mignon comes from the tenderloin portion of the cow.

It contains very little fat and comes from a non-weight-bearing muscle. This, along with it not containing much connective tissue makes it the most tender cut of meat. However, the lack of fat does not make it the most flavorful.

This is why it is usually served with some sort of sauce or wrapped in bacon.

Strip steaks, like the NY Strip, is a good balance of flavor and tenderness. Its got some fat in it, making it more flavorful than the filet mignon. Its also a well-worked muscle, making it less tender.

The Ribeye is the most flavorful cust of meat. Look for high marbling. This is the white swirling youll see in the steak. The more marbling, the more flavorful the steak. If cooked with care, it can also be very tender.

So, what makes one steak better than another steak? A good amount of fat and cut from an area that doesnt do much work .

You Buy All Your Dairy At Trader Joe’s

Some of Trader Joe’s dairy products are a bargain, such as their specialty cheeses. For example, the chain’s Unexpected Cheddar Cheese, which regularly earns praise, is only $3.99 for a 7-ounce package. The cheese was even voted a favorite in the chain’s annual customer choice survey.

I prefer to buy my meat where their is an actual butcher you could talk with. Sorry Trader Joe’s, you and your pre-packed meat are out.

Whole Foods Market does indeed have some good meat people, however that price tag is too hard to shallow. I like the dry aged concept, more on that in a moment.
