Ingredients For Surf And Turf

Surf and Turf Tomahawk Ribeye Steak and Lobster Tails

Steak I bought my husband a 450gm grass-fed rib-eye steak and 2 x 250gm porterhouse steaks for my sister and me. Other ideal cuts to use for Surf and Turf are T-Bone, eye fillet, sirloin and scotch fillet. If Im cooking an expensive steak, I always use a meat thermometer because its too easy to overcook a steak.

Raw lobster tails The ones we had were so tiny, just weighing approximately 200gm each. If you cant find small lobster tails, you can use a medium-sized tail and halve them for 2 servings. Theres no need to add butter or other toppings before grilling the lobster as it will be served with the creamy garlic sauce.

Dry white wine is lower in sugar levels than other varieties of white wine. Sauvignon Blanc, Chardonnay and Pinot Grigio are popular dry white wine varieties.

Thickened cream has gelatine added to it and contains 35% milk fat. To maintain a rich taste and consistency, I dont recommend using low-fat cream.

The Surf: Better Broiled Lobster

There are many ways to cook a lobster, but for a classic presentation, you cant beat broiled. The best way to broil a lobster is a two-step process, much like the reverse sear on a steak. Tossing a whole lobster tail under the broiler will yield a finished dish that may be properly cooked in the center, but will most likely be chewy/rubbery on top.

According to the experts at Lobster Anywhere, baking your lobster before finishing it under the broiler is ideal. Use a ChefAlarm® to track the temperature during the baking, and pull the lobster from the oven at about 130135°F . Then heat up the broiler while the lobsters wait on the counter. Place them under the broiler and allow them to finish cooking. Check the temperature every minute or two with your Thermapen® to make sure you dont overcook the meat. Depending on the size of your lobster tail, you will want to factor in a few degrees for carryover cooking. Jumbo tails will have more carryover, smaller tails less.

Surf And Turf Combinations

Steak and lobster is by far my favorite surf and turf combination. Its a classic, its delicious and simply delightful! But you can mix and match your protein options to create your preferred version of surf and turf.

Here are a few ideas

Surf: any type of steak will do. Filet Mignon, flat iron steaks, NY Strip, Ribeye steak or sirloin steak are all amazing options. Alternatively you can try lamb chops or pork.

Turf: any seafood will work here. The favorites are lobster, shrimp or scallops.

Wine Pairing For Surf And Turf

With two very different proteins for your typical surf and turf I highly recommend having two smaller glasses of wine , so you can enjoy one with the lobster and one with the steak. This is a good opportunity to buy those half bottles you see at wine stores .

For the lobster look for a hearty white with some oak in it, like Chardonnay, or Champagne or sparkling blancs de blanc. For the steak, steer clear of something too big and tannic . Instead stick to lighter style reds like Pinot Noir or other red such as lighter style Zinfandel or Malbec.

However, if you do, this recipe is a fantastic way to enjoy your favorite fish during lunch.

How To Prep Lobster Tails For Baking

The trickiest part of this recipe is cutting the uncooked lobster tails in half to expose the flesh. The best way to do this is to use kitchen shears to cut the tails down the center, through the end of the tail. Cut both the underside and top of the shell with scissors and then use a knife to slice the lobster meat in half, separating into two equal halves.

You can also accomplish this with a sharp knife, by piercing the underside of the lobster tail with the tip of the knife and then rocking the knife downwards, applying pressure, until you slice entirely through the tail and shell. The scissors method is a lot easier and a lot less likely to end date night with a trip to the ER.

  • 3. Slice through meat with knife.

WOW, steak and lobster has never been so easy. This is one of my new favorite celebration meals. Potentially one the best surf and turf recipes Ive come across in quite some time. As much as I hate to say it, it all started with an infamous Buzz Feed Tasty video.

The main challenge is simultaneously cooking both the lobster and the steak in the oven at the same temperature, so everything comes out hot at once. Prep is really important for this recipe. If you prep everything beforehand it will go much smoother.

I prepare all of my steaks in a cast iron skillet using butter. For this particular recipe, I sear a NY strip steak, cut in halves, for two minutes per side on the stovetop and then transfer to an oven at 425° F for 5 minutes.

I think everyone knows the lobster tail is the best part of the lobster. The tails are cut in half before baking and basted with garlic, butter, lemon, fresh parsley, and sprinkled with crushed Ritz crackers and Parmesan cheese.

The beauty of this recipe is that you can simultaneously bake the lobster tails on the bottom rack the moment you the steak hits the skillet. A truly simple take on surf and turf that wont break the bank or require four arms.

Prepare The Lobster Tails

Prior to cooking, you must have the lobster tails ready to go. This can be done the morning of, or right before you cook the meal.

  • Cut shell: Slowly cut each segment of shell using sharp clean kitchen shears in a straight line to the tail.
  • Remove vein: If there is a vein present, remove it.
  • Invert shell and use your thumbs to press down on the bottom of the tail. Use your fingers to carefully separate the meat from the shell until it has completely separated, except for the section connected at the tail.
  • Rinse: Do not submerge underwater. Rather, rinse to remove any shell pieces and shake off any excess when done.
  • Place meat on top of shell: Carefully lift the meat away from the shell, close the cut shell beneath it, and place the meat on top.
  • Coat with butter: Melt compound butter and brush it on top of the meat, using any remaining butter to coat the lemon. This step can be done ahead of time or while the steaks are in the oven, just prior to broiling the lobster.

    Steak and Lobster Recipe [SURF & TURF] On A Grill

    This skyscraper-sized sandwich won’t disappoint your taste buds. Food and Wine’s Surf and Turf Meets Lobster Roll recipe combines lobster, steak and creamy goat cheese all stuffed inside a buttery brioche bun. While you can follow the original recipe using live lobster if you wish, we’ve changed it to include our fresh already cooked lobster meat. That way, you can throw this mighty sandwich together even quicker. It’s delicious either way.

    You’ll need the following ingredients:

    • 2 tablespoons goat cheese
    • 1/2 cup butter, at room temperature
    • Zest from 1 small lime
    • Juice from 1/2 lime
    • 2 tablespoons fresh chopped cilantro
    • 1 teaspoon chili powder
    • Salt and pepper to taste
    • 4 to 6 large brioche buns
    • Mayonnaise

    Cooking Directions:

    Heat a separate skillet over medium-high heat and wait until it’s hot. Coat the steaks with olive oil and season with salt and pepper. Add the steaks to the skillet and cook them for 2 minutes on one side, and 1 minute on the other side. Top each steak with a teaspoon of the goat cheese butter and cook for 1 more minute. Let the butter melt on top.

    Weve talked a lot about steak on this blog. And theres a lot of material you can go back through and find, but no matter the cut, it is imperative that you get the temperatures right. A medium-rare steak has a finished temperature of 130135°F , so your pull temps will be below the target.

The thermal principles presented in those articles apply across the whole range of steaks. The reverse sear is my personal favorite, both for its efficiency and the tasty results I get from it.
