The secret to cooking the perfect steaks on a pellet grill is a clear-cut technique thats easy to replicate. Below, well look at two ways to get a great sear.

How To Make A Pellet Grill Cowboy Steak:

Prepare your pellet grill for 225 degrees F. Combine the rub ingredients listed in the recipe below. Brush steaks on both sides with a little oil, and season liberally with the rub.

Place steaks into your pellet cooker, close the lid, let the steaks cook for about 45 minutes, or until the internal temperature reaches 125 degrees F. If youd like them more cooked through, pull them at 130-135 degrees. Please refer to my steak temperature guide to determine the right doneness. I recommend removing them about 5 degrees before they reach your target temperature.

When I developed the recipe for these pellet grill cowboy steaks, I was fortunate to have a flat-top grill at my disposal. Of course, I wanted to test the searing capability of this Cuisinart 360 XL. I was pleasantly surprised. However, if you have a Traeger or another pellet grill that can reach high temperatures, then definitely stick with the same cooker, or finish the job on the stovetop in a cast-iron skillet.

  • Pull the steaks about 5 degrees before your desired doneness, and place them onto a clean plate. Crank up your grills temperature to 500 degrees F.
  • Once its good and hot, place your steaks back onto the grates and sear them for 2-3 minutes per side.
  • If using your stovetop or a flat top grill, melt a pat of butter on the surface right before adding the steak. Sear for 2-3 minutes, turn over and repeat the process.

    S To Fire Up A Perfect Steak On Your Pellet Grill:

    1.Meat preparation: Selection of the meat is very important.

    2.Buy fresh meat: The most important thing that we recommend to buy the beef steak early in the morning on the same day you decide to enjoy the beef steak cooked on a pellet grill. Make sure to buy beef steaks that are very much marbled with fats it will increase the tenderness of your beef steak.

    3.Thaw at room temperature: If you have a frozen beef steak make sure to thaw at room temperature about 5 hours before cooking. It will help in even cooking your steak throughout.

    4.Season your meat: Here comes the point where you have to season your beef steak according to your choice either with salt and black pepper or other spices of your choice.

    5.Start-Up your Pellet Grill:

    First of all, make sure that the hopper is filled with wood pellets.

    Now plug your smoker into an electric switch.

    Press the power button and wait until the first few pellets ignite and you see the smoke. It may take few minutes soon fire will be established. Let the lid open for few more minutes when a fire is established.

    Now close the lid and preheat the grill to the desired temperature of approximately 400°F.

    Once the grill is preheated, place your beef steak on the grill. And let it cook until it reaches your desired temperature about 125°F. Make sure to twist the steak after 15 minutes and the same for the other side.

    Once the beef steak is cooked take out and wrap it in the aluminum foil for 15 minutes.

    For decades I used to just flipping the steak more just using my gut instinct more than anything else. But what Ive found is that as long as you getting some searing going on before you flip your steaks, either many times or just once. It really doesnt matter I think.

    Its a bit of a myth that you only have to flip your steak once in my opinion, now if youre trying to get certain grill marks on it I do understand this is important.

    Grill marks are just a bit of a novelty for me and normally I just get some good crusting going on. Black grill marks probably also contain all those funky carcinogens so the nice brown caramelized protein crust on the outside is how I prefer my steaks go for doneness not grill marks.

    Can I Put Marinade On My Steak When Cooking On A Pellet Grill

    Traditionally, marinades contain oils and other liquids which may cause flareups when using a pellet smoker. If you do decide to use a sauce or spray it on the meat before placing it into the grill then make sure that all your sauces are sugar free and runny. We recommend slowing basting your meat during the last few minutes of cooking time if you want to add moisture back into your steak.

    How to Cook the Perfect Steak on a Camp Chef pellet Grill | Cast Iron Reverse Seared Ribeye

    Thing You Need:

    • 2 Steaks, Cuts of your choice
    • Salt and pepper

    Instructions:

  • Set your grill at 180 degrees. After applying salt and pepper, place the steak in the grill. Make sure you place the meat at an area where most of the smoke would flow, but not in a place thats exposed directly to heat. For this purpose, place the meat at the top rack of the grill.
  • The amount of time to smoke the meat will pretty much depend on how thick it is. It is best to check the temperature of the meat from time to time. Check it 15 minutes after you start grilling and flip the steak for even heating. Then check the meat after every 5 to 10 minutes after that.

    Place your steaks on the Grill Grates at a slight angle, cook for 1 minute, and then rotate the steak 45 degrees and cook for 1 min. Now flip and repeat. This is where the thickness of your steak plays a huge role. A solid medium rare will register between 130-135 degrees, medium 145 degrees, medium well 155 degrees.

    When I finally tried the reverse sear cooking method on some ribeye steaks, that was when I decided I would never cook steaks any other way. This cooking method is low and slow to create the best flavors and then hot and fast at the end to lock in those mouth water flavors to create the perfect reverse seared steak.

    There are basically two options for cooking steaks with Pit Boss pellet grills.

    First option. Begin cooking with the hottest grill possible. Sear the exterior and serve. This will allow you to create a succulent, tender and rare center while keeping the outside crunchy, well-seared and delicious. The surface of your barbecue will have the distinctive taste and aroma of well-grilled meals.

    Second option. Grill your steak using the reverse sear technique. The smoke will then permeate the entire steak rather than just the well-done exterior.

    How Long To Cook A Steak On A Pit Boss Pellet Grill

    The time duration for which you smoke your steak depends on its thickness. Smoking for around 15 to 30 minutes is sufficient for most purposes. Once you reach the 15-minute mark, make sure that you check the internal temperature using a good thermometer. Keep checking the temperature after every 5 minutes to ensure consistent heating. You should also flip the steak after 15 minutes of grilling.

    Keep grilling your steak until its temperature is between 100 and 110 degrees Fahrenheit. At this point, you should remove your steak from the grill and raise the temperature of your grill. The ideal temperature of your Pit Boss pellet grill for this phase of cooking is 500 degrees Fahrenheit. Allow your grilling grates to reach this temperature before putting the steak back in. Before you put your steak back on the grill, infuse it on both sides with barbecue rub.

    After this point, things will start moving pretty quickly, so you must be prepared and ensure that everything is in place. Carefully place the steak back on the grilling grates at a small angle. Continue to cook for another minute. After a minute has elapsed, rotate the steak by 45 degrees. Cook for at least another minute. You can then flip your steak over to the other side and repeat the previous process for this side as well.

    How To Cook Steak In The Oven

    Broiling steak in the oven gives you grill-like results in the kitchen. Broiling is like grilling turned on its head, with the high heat coming from above the meat instead of below it. Both grilling and broiling are fast and easy. Here’s how to broil in 5 easy steps.

    1. Before turning on the broiler, remove thawed steaks from the refrigerator and let them rest at room temperature for about 15 minutes. Then pat the steaks dry with paper towels and season the meat as you like.

    2. Trim excess fat from the meat to avoid grease flare-ups. Make a few vertical cuts along the edges of the steak to keep it from curling under the broiler.

    3. Situate the top oven rack to just below the broiler coils. Turn the oven on to broil. Allow it to preheat for 5 minutes.

    4. Place steaks on a broiling panor if you don’t have a broiling pan, make one: line a shallow baking sheet with foil and set a flat rack on top of it. But do not use a glass baking pan under the broiler it will break under the high heat.

    5. Slide the steaks under the glowing coils. The distance between the top of the steaks and the heat source should be between 3 and 5 inches. If the top rack position is too close to the coils, lower the rack to the second position.

    7. If the outside is nicely crusted but the inside is too raw for your liking, turn the oven temperature down to 350 degrees F and roast until done. Remove and let the meat rest for 5 to 10 minutes.

    How To Reverse Sear Steaks On The Grill

    Once youre confident with traditional searing, why not move on to reverse searing your next steaks? Reverse searing is exactly like it sounds you cook the inside of the meat first and sear the outside last.

    Youll still go through all the general steps of searing, although with the reverse sear method, you can get away with a shorter time for the steaks to come to room temperature since they will be exposed to a lower heat before the sear. However, instead of bumping up your pellet grill to 500 degrees at the beginning, youll bump it up at the end. In other words, youll prepare your steaks, pop them onto the grill, let them get to your desired level of doneness and then give them each a three-minute searing job.

    Heres a low-down on the general rules to follow:

    Heres a tip removing any excess fat helps with reverse searing along the outside of the steak. This practice also prevents burning parts of your steak as fat covers outer skin. Luckily, fat is easier to eliminate prior to grilling and searing, so this is a good initial step in the process.
