This Dry Steak Rub is a delicious homemade seasoning blend of brown sugar and spices that lends a great umami flavor to steak. It is a delicious spice rub that is great for cooking on the grill or grill pan.

Making a homemade steak rub is one of the best way to season your favorite cut of beef. It is as simple as pulling out your favorite blend of spices, mixing it together, and rubbing it over the steak before grilling. The end result will be the most delicious steak!

Spicy Tomahawk Steak Rub

This is a delicious, spicy tomahawk steak rub. While this rub is for larger steaks, this rub is perfect for any cut of beef. The small amount of brown sugar brings a touch of sweetness and helps to caramelize the surface of the meat under intense heat. Serve with grilled onions for a hearty dinner.

How To Use It

Pat your steak dry with paper towels, then sprinkle a generous amount of rub on one side of the steak. Use your fingers and hands to rub the spice blend into the steak. Flip and repeat on the other side.

Though you can immediately cook the steak, if you let it sit at room temperature for an hour the rub will penetrate the meat and give a deeper flavor. You can even cover and let it sit overnight in the fridge for a more robust flavor.

Once its ready, grill or fry in a pan as you normally would. You can even sous vide the steak with rub on it, though I would add more rub right before reverse-searing it.

How To Make The Best Steak Rub

Making a steak rub is really easy! All you need to do is mix all the spices together and its ready to be used on your favorite steak.

I recommend trying the recipe as-is first and then tweaking it to suit your preferences! From there, you can adjust the salt, heat and the sugar.

If you dont like the hint of sweetness from the brown sugar, you can omit it, reduce it or even swap it for a paleo alternative, like coconut sugar!

Dry Rub For Steak Variations

  • Change the spice level. If you like your dry rub recipes on the spicier side, add a teaspoon or two more of the crushed red pepper. If you like it with less spice, take a little bit out.
  • Adjust the sweetness. If you like a sweet BBQ rub, you can adjust the sweetness by using a little more brown sugar. For less sweetness, use a little bit less brown sugar. But, I find that 2 tablespoons is the perfect level of sweetness for any BBQ recipe!

The best spices for steak emphasize the flavor of the meat without overwhelming it. We use a mixture of paprika, onion powder, garlic powder, crushed red pepper, sea salt, black pepper, and brown sugar to make our steak dry rub. This creates a sweet, salty, and spicy mixture with the perfect balance to elevate the flavor of any steak!

Should you season steak before cooking?

Yes. In all cases, we recommend seasoning your steak before cooking, whether you’re grilling out or cooking it on the stovetop. Better yet, leave your steak to soak up the seasonings overnightin the refrigerator! Just make sure to let your steak come to room temperature before cooking it.

How to Store Seasoning

Store homemade steak seasoning in an airtight container such as a glass jar. Since this mixture uses brown sugar, you’ll need to give it a stir before using it again as it may clump together. Store in a cool, dark place.

How To Cook Sirloin Steak On The Grill Or Stovetop

  • First pat the steaks dry with paper towels. This will allow the steaks to sear properly instead of steaming.
  • Next, we drizzle our steaks with olive oil and then rub all over to evenly coat, followed by an even slathering of our Spice Rub all over our steaks.
  • At this point, you can let your steaks sit at room for an hour so the meat not only cooks more evenly and quickly, but this also gives the meat time to relax, allowing its natural moisture to reabsorb into the muscle, instead of staying trapped in its fibers OR you can cover your steaks with plastic wrap and refrigerate 24-48 hours and then bring to room temperature before cooking. This is my preferred method as the flavors develop and it helps the steaks taste aged.
  • Grill the sirloin steaks or cook them in a cast iron skillet on the stovetop. Ive given detailed instructions for both methods for cooking sirloin steak in the recipe card below.

    Since ribeye steaks are relatively more tender than most cuts, I suggest that you do not go over 3 hours of marinating or else, you will end up with a cut that is too soft.

    Sirloin Steak Recipe With The Best Steak Rub

    Theres nothing quite like a juicy, sizzling steak. Its rich, satisfying, and melt in your mouth deeeeelicious. Not to mention so so easy. Coat your steak in olive oil, smother with seasonings, let rest and cook. And if youre feeling fancy, slather with some herb butter, which sounds fancy, but really takes 5 minutes to whip up. Couldnt be any easier OR more delicious.

    Its just too bad steak doesnt cost the same as chicken :). If you are looking to use this Steak Dry Rub with a less expensive cut of steak, then I highly suggest marinating the steak first in order to tenderize the meat, and then applying the Steak Rub, like in my Carne Asada method.

    In order to not use a marinade and just let the big bold flavor of the seasoned steaks shine, I suggest a quality PRIME or CHOICE grade top sirloin or similar quality meat . I like top sirloin because its one of the more economical prime cuts of beef, not overly fatty, and when cooked properly its melt in our mouth tasty and oh so tender.

    Start by making the homemade steak seasoning. Trust me this homemade version is light years better than anything you have pre-mixed in your cupboard. Add rock salt, whole black peppercorns, minced dried garlic, minced dried onion, fennel seeds, and red chili pepper flakes to a mortar then grind it up with the pestle.
