Grilled Picanha By Over The Fire Cooking

I found the Best Way to Sear Picanha Steaks

Grilling is one of the best ways to cook Picanha. It’s the most traditional and will replicate that authentic and real flavor you’ll find in Brazil.

This recipe recommends adding Chimichurri as a finishing touch. The acidity will really help the unctuous meat sing on your plate.

How Expensive Is Picanha Steak

The price of Picanha steak is going to vary depending on where you buy it.

You can find this type of meat in your local supermarket or butcher store, but expect to pay at least $10 USD for the cut.

If youre planning to serve picanha steak at a barbeque, make sure youve checked the price beforehand. Its okay to ask around about how much a Picanha steak costs.

You can also look for Brazilian supermarkets in your area if you want to get the best deal on this type of meat.

The best place to find picanha steak is definitely the butcher store, they have the freshest cuts and will be able to tell you more about it too.

You can also shop for this cut online and may be able to find a better deal.

What Does It Taste Like

One of the reasons it is so popular is due to the tenderness of the meat and the flavor.

The beef flavor is typically closest to a top sirloin cap with a juicy flavor and tender texture.

We find that it can be very delicious if you cook it correctly. From our own experience, you want to get a cut with the fat cap still on it as these are generally more tender and cook well.

Picanha steak is a prized cut of beef in Brazil, also known as rump cap. Ask your butcher for this, or a good quality rump steak will also work.

Where To Buy Picanha

A lot of people may not know where to actually buy a Picanha. Just so you know, you can buy one at any meat market that sells top sirloin caps. That is the official name for Picanha and is usually what will signal to the butchers exactly the type of cut of meat that you want.

When walking up to any meat counter or meat market in a grocery store or wherever, just make sure to know exactly what you are getting into and what type of Picanha that you want. You can go to any grocery store and simply request a top sirloin cap.

A lot of the times, most of the meat market butchers dont really know what a Picanha is, but will know what a top sirloin cap is. Once you place your order, sit back and relax while they cut it for you and always make sure to get an extra large fat cap on the meat for optimal tenderness and juiciness in flavor. Trust me on this one!

Is Top Sirloin The Same As Picanha

Picanha (The Best Brazilian Steak Recipe)

Since the top sirloin is technically a piece of steak, but also part of the Picanha, it may get kind of confusing as to whether or not they are the same or if they are different. A top sirloin is a small part of the overall Picanha roast. A Picanha is basically just a large roast with a large fat cap on top.

A top sirloin in the traditional sense is usually just a small slice of an overall Picanha roast. Thats why when you go into the store and look at all of the amazing top sirloin steaks, youll often see a large layer of fat encompassing each individual steak cut.

History And Origins Of Picanha Steak

The word picanha comes from Portuguese and means coulotte, while in the US we call it sirloin cap or rump cap. Its a cut of meat sourced from the rump of a cow and has a thick layer of fat called the fat cap, which lends to rich flavors.

Picanha is a type of churrasco, a name for beef or grilled meat in Portuguese. Its commonly known as Brazilian barbecue.

Brazilian barbecue can be traced back to the 1700s when gaúchos would gather after a long day of herding cattle. Communities would enjoy barbecued meats called churrasco.

Gaúchos dug large pits in the ground for an open fire. Then they skewered the meat and seasoned it with coarse salt. The uniquely skewered meat slowly roasted over the embers.

Today, Brazilian steakhouses take pride in their picanha and servers come by your table with this beef on a stick. They slice off pieces that go right to your plate.

Today, many people remove the fat cap before grilling, but to truly be considered picanha beef, it must include the fat cap.

Is Picanha Considered Better Than Rib Eye Or Sirloin

They divide beef into four sections two forequarters and two hindquarters. The location of the cut gives us insight into how to cook the meat and what to expect in flavor and texture.

Rib eye steak comes from the forequarters, the rib of the cow. This area of the cattle offers tender cuts of beef and is typically higher priced. The first major difference between picanha and ribeye is their appearance and texture. Picanha meat is more tender and youll notice based on the nutrition facts below it has less fat than ribeye. Ribeye meat has more intramuscular fat, which makes it rich in flavor. The popular Tomahawk steak is actually a ribeye.

The hindquarters are the back end of the cow, which is where both sirloin and picanha steaks are cut. Picanha is very similar to sirloin, with comparable flavor and texture as a New York Strip steak. However, the distinguishing factor is the fat cap surrounding the meat.

The nutrition profile for rib eye, sirloin, and picanha steak varies slightly due to the amount of fat and protein in each cut.

  • Picanha steak has 390 calories, 24 g of fat, and 42 g of protein.
  • Rib eye steak has 460 calories, 32 g of fat, and 42 g of protein.
  • Sirloin steak has 414 calories, 24 g of fat, and 46 g of protein.

How To Order Picanha At The Butcher

Brazilian Picanha Steak IN YOUR BACKYARD! | How To

Picanha can be a very niche cut of meat to begin with, and not many butchers will outright know exactly what youre looking for if you were to come at them asking for one. Thats why it becomes pretty important to come prepared and know exactly all the different names of a Picanha to ensure that your particular butcher will finally understand what youre talking about.

Whenever you go to a butcher, come prepared with two terms. The first one is a Picanha and the second one is top sirloin cap. Those are the two most notable phrases that a butcher will understand and know exactly how to prepare the meat for you.

Also, whenever you finally get their attention and help them understand what kind it is if they dont know, make sure to specifically request that you get a large fat cap on the Picanha roast, otherwise it will come out potentially with no fat on it whatsoever, and that is definitely not what you want. You want very large fat caps that sort of droop over the ends of the meat. That is what makes a Picanha so great to begin

Packaging & Provenance Of Your Picanha Steak

The Picanha Steak is vacuum sealed in clear recyclable pouches, each one is single packed immediately after cutting. This limits any loss of natural juices & helps to prevent any growth of natural bacteria found in meats. The vacuum process sucks the moisture into the meat, holds it in shape & protects it whilst frozen. The pouches keep any other food stuffs in your fridge from tainting the meat & they are perfect for keeping the meat moist when thawing out before cooking.

When packaging our meat products we use clear recyclable plastic pouches. At Sherwood Foods we are always looking to reduce our use of plastic& one way we are doing this is by using thinner, stronger pouches. A reduction of 20% has been made by doing this, & a further 50% reduction in plastic has been achieved by placing more product per pack.

We are always encouraging our customers to place all the meat packaging & the delivery packaging into recycling bins at home. Your link in the Recycling Chain Processis the most important because the materials need to go back into the chain.

The vacuum packaging & keeping the meat chilled / frozen, gives the Picanha Steak a very long shelf life, with a just cut taste up to 24 months after production.

    How Is Picanha Best Cooked

Sous Vide Picanha Steak with Roasted Tomato and Herb ...

Picanha is an excellent cut but if not cooked properly, youll miss out on the tenderness and succulent flavors. One of the most popular ways to cook picanha is on a flat skewer or rotisserie. It can be slow-cooked or grilled, but temperature and method are important. It may also be smoked or roasted. However you cook it, dont rush it. This meat does best when the tenderness is allowed to develop.

Does Costco Sell Top Sirloin Cap

Many people shop at Costco and can buy all sorts of meats including a Picanha. In order to obtain one, all you have to do is go to the meat market area and look in the bins and check for the small circular roast type packaging that has the words top sirloin cap. You should not only see the word stop sirloin cap, but also the glorious fat cap on the meat itself. That is how you know you have a Picanha on your hands.

Usually, Picanha are sold throughout the warmer months since that is when a lot of people happen to be outside grilling and smoking them, but every now and then depending on your location and the demand for them, you will always be able to find a top sirloin cap year-round. I actually went ahead and ask the butcher the other day when they can expect to see a bikini is because the Costco that I frequent did not have them.

He basically said the same thing and that if you dont see them in the store, its most likely out of season but if you happen to want one ahead of time just go ahead and give them a call and they can prepare one for you. Costco is an amazing place!

The picanha steak is located at the rear of the beef and is considered part of the rump cap muscle. Illustration below. The growing in popularity Tri Tip roast is located just below in the bottom sirloin area.

The fat layer makes this meat great for grilling, especially when combined with salt. Yet, many American butchers cut it off to reduce the fat content of the meat.

The United States Department of Agriculture grades the quality of beef. There are eight beef grades:

    • Prime
    • Cutter
    • Canner

The key factors that influence grade quality are the intramuscular fat, maturity of the cut, color, and texture. When looking for quality picanha steaks, look for prime or choice. You may find select but typically select steaks lack intramuscular fat, so these cuts of beef are less flavorful and less tender.

How Do You Cook Picanha Steak

Better Than Ribeye For A Fraction Of The Cost? | Sirloin Cap | Picanha | Coulotte Steak

The classic method to cook Picanha comes from placing skewers into curled pieces of Picanha meat. Check out these quick instructions below to find out how you need to cook it using direct heat.

  • Picanha is typically cooked at high temperatures ranging from 400 to 500 degrees Fahrenheit on a charcoal grill. Be sure that you cook it to a safe internal temperature, 145 degrees Fahrenheit with beef, measured using a meat thermometer.
  • If using a grill, you will want to turn the picanha every five or so minutes. This ensures that your Brazilian beef cuts stay evenly cooked on both sides of your steak.
  • Picanha will initially come as an entirely combined steak fillet. The major difference comes from you having a fat side and a meat side.
  • After you season the fillet however you wish, you need to cut it into three even pieces.
  • After you cut the meat, curl them up into three individual circles.
  • Place these circles of meat right next to each other and place a metal skewer through all three of them.

How To Grill A Picanha Steak

If you dont have a large skewer as they do in Brazilian Restaurants, you can still grill a picanha home-style and get superior results.

When dividing the meat into steaks, you can try to cut the meat in the same direction as the fibers. This way, after you finish grilling it, you will slice the steak against the grain, creating deliciously juicy morsels each with own fatty edge.

As for seasoning, I recommend using only salt and nothing else if you want the truly traditional taste. I have previously used a dry rub for some extra flavor, but it is totally based on preferences.

After you have prepared the meat, put it on the grill in indirect heat until the meat reaches 130°F for medium-rare doneness. If you want, you can leave it up to 135-140°F for medium and medium-well doneness, but I think that medium-rare is the ideal point for this steak.

After removing from the grill, let it rest for 5-10 minutes. This will allow the juices to settle and ensure the meat stays juicy and flavorful.

Where Is Picanha Steak Commonly Found

Picanha steak is most commonly found in Brazil and other South American countries.
