My favorite way is to use a pellet grill as it lets you cook a mouthwatering steak right from the comfort of your home so you can satisfy your craving without the need to leave your house!

How To Reverse Sear A Steak

Thing You Need:

  • 2 Steaks, Cuts of your choice
  • Salt and pepper


  • Set your grill at 180 degrees. After applying salt and pepper, place the steak in the grill. Make sure you place the meat at an area where most of the smoke would flow, but not in a place thats exposed directly to heat. For this purpose, place the meat at the top rack of the grill.
  • The amount of time to smoke the meat will pretty much depend on how thick it is. It is best to check the temperature of the meat from time to time. Check it 15 minutes after you start grilling and flip the steak for even heating. Then check the meat after every 5 to 10 minutes after that.
  • Using your thermometer, check the steak if it has already reached 100 to 110 degrees. If it has, then remove the meat and set the grills temperature to 500 degrees. At this point, get your grate but only after heating it for a while. Generously coat your steak with the searing rub and place it on the grate.
  • When grilling a solid medium rare steak, the internal temp 130 to 135 degrees. As for medium, it should be at 145 degrees, while medium well should be at 155 degrees.

    How To Smoke STEAK on a Pellet Grill

    For the best and most evenly cooked steak, youll want to take your steaks out of the refrigerator and allow to reach room temperature for about 30 minutes before you plan on grilling them. This allows the steak to cook more evenly.

    Theres no need to pre-season your steaks at this point, but you will want to make sure that the surface is dry before putting them on your grill. So give them a shake of salt and pepper right before they hit the grill but after you pat them dry with a paper towel.

    The key to a good sear is high temperature. So get it hot and let the grill do its thing if you are doing a traditional grilled steak.

    Im including instructions here for both a traditional grilled steak and a reverse seared steak also. I prefer the reverse sear, but it takes about 3x as long as a regularly grilled steak so if you are pinched for time, either option is totally awesome.

    Pellet grills are easy to use and offer an excellent option for adding new, delicious flavors to your filet mignon, Tomahawk ribeye steak, or sirloin cut of steak. A pellet grill cooks your choice of meat cut using convection heating with your selection of hardwood to create that smoked flavor. To prepare your grill, keep it clean and clear of debris, then choose your style or taste of hardwood such as cedar, hickory, mesquite, cherry, or others that you want to sample with your next meal.

    If you prefer to sear your meat in the smoker, a sear box is ideal to use for this purpose, as pellet grills take longer to heat up and cook slower than traditional barbeques. Alternatively, you can transfer your steak to a pan or propane grill to char instead.

    Before you prepare to use your pellet grill, ensure that you have more than enough space to work with, so you can spread out your utensils, seasoning options, and other ingredients and equipment youll be using.

    How To Smoke A Steak At Home Without A Smoker

    Before we get into the details for how to smoke a steak at home, a quick disclaimer. We know that our indoor prep isnt quite the same as traditional smoked steaks, but it sure is easy and accessible for most home cooks that know their way around a kitchen. Sure, you will probably still need to finish your meat via a traditional skillet, pan or indoor grill but our alternative smoking method will still give you that great smokey flavor, without a lot of extra equipment or fuss. Now, onto the process:

    First you are going to need a few supplies, most of which can already be found in your kitchen:

    • Fruit or other hard wood appropriate for smoking*
    • Deep, high temperature stable pan, such as a quality cast iron or stock pot
    • Metal rack that fits inside your pan of choice
    • Lots of foil

    Line the bottom and sides of your pan of choice with plenty of foil, all the way to the top. Next, arrange your wood chips on the bottom of the pot or pan. At this point, you can use a long fireplace match to pre-char or light a few of the wood chips, but if youre leery of indoor flame or dont have a fire extinguisher handy, youre fine with skipping this step. Another layer of foil should go loosely on top of the wood, allowing smoke and heat through but not fire.

    Place the entire pan on the stove and turn the heat on to medium. Monitor the heat closely and adjust your burner flame as needed to ensure youre creating smoke and not starting any fires.

    How To Cut A Steak

    If your steak has a bone, the first step is to cut the bone out of the steak. This Kansas City cut had a bone down the one side, it is a quick and easy slice to remove the bone. A porterhouse or T bone steak is a little more complicated, but once the bone is out, the rest is the same.

    When slicing a steak, cut it against the grain so that you can showcase the juicy center.

    Taking Off The Chill Speeds Up Cooking

    The goal of grilling a steak is to brown and lightly char the surface while also cooking the interior to a perfectly juicy doneness, right? If the steak is too cold, the interior might require so much cooking time to reach that perfect doneness that the steak overcooks deep below the surface, turning gray and dry.

    Let your steaks stand at room temperature for 20 to 30 minutes before grilling. They will cook faster all the way to the center and stay juicer.

    What Temperature Should Your Grill Grates Be At

    The ideal temperature to preheat your grill at is anywhere between 450 to 485 degrees Fahrenheit, whereas the temperature on your grates should be up to about 600.

    Before you place steaks on the grates, you should also spray the grates down with some non-stick cooking spray so that the rub stays adhered to your steak whilst still giving you those sear marks.

    Traeger Grilled New York Strip Steak

    How To Smoke And Reverse Sear Ribeye Steak

    How To Cook Smoked Ribeye Steak On A Pellet Grill

    To reverse sear a ribeye steak, season your steak with salt and pepper or your seasoning of choice, and smoke at 225 degrees Fahrenheit until your internal temperature is 120 degrees. Once the ribeye steak reaches that temperature, remove it from your Traeger and increase your grill temperature to 500. When your Traeger reaches that temperature, return your steaks to the grill and sear on both sides for about 3 minutes or until the internal temperature is 132 degrees. Let your steak rest for 5 minutes and enjoy.

    What Temperature Is Ribeye Done

    I like my steak rare to medium rare so I remove it at 125 130 degrees Fahrenheit at the center. So once the internal temperature reaches your desired doneness, let it sit for a few minutes for the juices to redistribute and tent it with foil. Itll also keep cooking a little bit with that residual heat.

    • Rare: 120-130 degrees F
    • Medium Rare: 130-140 degrees F
    • Medium: 140-150 degrees F
    • Medium Well: 150-160 degrees F
    • Well Done: 160 degrees F

    Remove From Fridge Let Steak Get To Room Temperature

    So you normally dont want to cook a steak straight out of the fridge you want to get it up to room temperature so that it doesnt take as long to actually start cooking.

    Its just a little bit harder to get a crust on the outside and the proper cook on the inside if you starting at a lower temperature stop.
