Texas Roadhouse Steak Rub

Grilled Buttery Seasoning Steak~Easy Cooking

This seasoning is a little complicated, and you need more ingredients than the others on the list.

You will need two teaspoons each of kosher salt and brown sugar for one serving.

Also, you will need to mix half a teaspoon of paprika, paprika, and chili powder with a quarter teaspoon each of cornstarch, onion powder, and turmeric to make the mix.

When using this seasoning mix, you will need a ziplock bag to combine all the flavors into the steaks.

How To Make Steak Seasoning Blend

Rib eye steaks at room temperature with my homemade steak seasoning.

Making your steak seasoning blend is really easy. Its just a matter of combining your desired spices and dried herbs and knowing what you are going to store any unused steak seasoning in.

So the first thing to consider is how much steak seasoning you want to make at this time. Scale the recipe up or down as needed.

Next, gather ingredients and an appropriate storage container. Something as simple as a ziploc plastic storage bag works, or a saved spice container that has been washed and dried. I like my little apothecary bottles, but they were ordered online.

Whatever you choose to use for storing your steak seasoning mix, it will last longer if stored in your cabinets, away from the light. I say the seasoning blend is best used within 3 months, but really it will last longer if stored appropriately.

Typically, I use a bowl and combine the ingredients as I measure them out. Then I season my steak and store away whatever is left once I have finished cooking my protein.

How Long Can You Marinate A Ribeye Steak

To let the steak absorb the flavors from the seasoning, you have to at least marinate it for 30 minutes. This will get the seasonings to combine with the meat.

Since ribeye steaks are relatively more tender than most cuts, I suggest that you do not go over 3 hours of marinating or else, you will end up with a cut that is too soft.

Spice Rub For Grilled Ribeye Steak

I like to use a spice rub for grilled steak, more than a marinade. I find a spice rub seems to seal in the flavors nicely. Occasionally I will marinate a steak, but tend to reserve marinating for tougher cuts of beef that benefit from a tenderizing marinade. For instance, I will marinate beef overnight when making something like this Tuscan Beef Stew.

How to make a spice rub? Its so easy, theres no need to buy those pre-made rub mixes at the store. When you make your own spice rub, you know exactly what is in it. Find a basic combination you like and you can experiment with variations on it.

My basic go to rub is the cumin garlic blend we use in this recipe. All you do is combine equal parts garlic powder, cumin and salt in a small bowl, then rub it into the meat. I let the steak absorb the rub for about ten minutes, then you are ready for some big flavored grilling!

Our ten year old would tell you he doesnt like spicy food, but he loves any meat I grill with this garlic cumin rub. So its the perfect combo for a family with discerning young palatesenough flavor for the grownups, without overwhelming the kids!

I like to make various sauces to serve with steak, with mushrooms and onions featuring frequently. Check out this Ribeye with Portobello Mushrooms, for instance. But todays recipe shows you dont need to add a sauce with a good quality ribeye steak made with our simple spice rub.

Freshly Ground Black Pepper

There’s another debate about seasoning steaks, which relates to black pepper. One school of thought suggests that applying the pepper before cooking can cause the pepper to burn while you cook it, imparting a bitter flavor. Followers of this school suggest grinding pepper onto the steaks after searing them or right before serving. The other school simply seasons their steaks with freshly ground black pepper before cooking and doesn’t give it a second thought.

Who’s right? It’s not that the notion of burning pepper is complete nonsense in theory, yes, black pepper could burn. The problem with peppering midway through cooking is that the pepper granules might not stick to the meat. You could pass a pepper grinder at the table, but if you’re cooking outside and eating in an informal style, this may not be feasible. So unless you’ve detected a burnt pepper flavor on your steaks in the past, by all means, season your steaks with freshly ground black pepper before cooking them.

When To Season Steak Heavily And When To Cut It Back

You might notice that most steak recipes have one thing in common: they tell you to season steak generously. But you might wonder just how generous you need to be to avoid overseasoning your steak. Its a common conundrum, but were here to help.

Generally, the amount of steak seasoning you need depends on how thick your steak is. The seasoning sits only on the outer side of the steak, so the middle of the steak doesnt get seasoned. Therefore, thicker steaks require more seasoning to ensure that you get a flavorful bite, whereas thinner steaks dont need as much because you wont be eating as large of an unseasoned portion in each bite.

So, strip steak, filet mignon, ribeye, and other thick steaks typically call for a generous amount of seasoning. But flank steak and flat iron popular thinner steaks may not need as much to achieve the same taste result.

Can I Use Just Salt And Pepper To Season Steak

Absolutely! In fact, this is what many people even top chefs sometimes choose to do with steak. A steak seasoning isnt always necessary, but its one way to switch up the flavor of steak a bit.

The most important tip to keep in mind is to use salt. Even if you dont want to add anything else to your steak, still use salt. Itll help break down the meat fibers to make a more tender steak while giving the beef extra flavor.

How Do You Make A Steak Tender

McCormick Grill Mates Montreal Steak Seasoning

There are two ways that I use to make a steak tender. Acidic tenderizers are a great way to get a tender steak. I include lemon juice in my marinade to help to soften the steak. it breaks down the tough fibers in the meat. If you are starting out with an already tough cut of meat, I will also break down the fibers by pounding the meat before I cook it.

    How To Season Steak

How to grill a Ribeye Steak

The best way to season a steak depends a little bit on the type of steak you are grilling, as well as the level of seasoning you like on your meat. With a thicker cut of steak you can be pretty liberal with this seasoning and thoroughly cover the surface of the meat. That way, the seasoning really carries through each bite. In the video below, I was cooking a fairly thick tri-tip and you can see how much seasoning I used to cover the outside of the meat.

Remember, you can always add seasoning easier than you can remove it. Start with a light hand and dont sprinkle too heavily at the beginning. I also recommend pressing the seasoning into the meat with the palm of your hand. This helps the seasoning adhere and you dont lose as much when youre moving it around on the grill. Avoid rubbing the seasoning in, as it tends to clump up and youll have strong bites of pepper or herbs instead of it being evenly distributed.
