The Best Cut For Air Fryer Steak

What’s The Best Steak Cut & Why? Tenderloin vs Porterhouse vs T-Bone vs Strip vs Ribeye vs Sirloin

Honestly, this isnt a high dollar steak kind of recipe. There are better ways to cook expensive steaks. This is more of a weeknight pick-up-on-the-way-home grocery store steak kind of recipe.

I tried this with a striploin and a sirloin, for science. Both were about 1.25 thick or so and both came out perfect. The fat cap on the striploin rendered out enough not to be chewy and unappetizing, which is always a risk when making striploin medium rare. The sirloin was still tender and juicy and not at all tough or tasteless, which is always a risk with sirloin.

Theres a Gordon Ramsay recipe going around right now that suggests a 2 steak thats going to cost a lot more. Im not sure about that one. Personally, Ill stick to supermarket steaks for my air fryer steaks.

What is the best steak doneness level, you ask? It’s a dilemma that plagues us all. How do you know when your steak is done? Is it rare, medium-rare, or well-done? There are many factors to take into consideration when cooking meat and there are no set rules for what might be the perfect steak doneness level.

That being said, most chefs recommend medium-rare steaks for any cut of meat because they’re juicy and tender with just enough crispiness around the edges to add some texture.

What Are The Best Cuts Of Steak

Theres really nothing quite like a well-cooked steak. It pairs perfectly with just about anything, its extremely versatile, and its great for any occasion and in any setting.

While the cooking method and surface you use are certainly important, a great steak actually starts with a great cut of meat. You can have the best seasoning, the best grill, and the best cooking tricks up your sleeve, but if youre starting out with a mediocre cut of steak, the steak will be, well, mediocre.

Youve probably noticed there are a lot of different types of steaks, whether youre browsing the meat department at the grocery store or checking out a restaurant menu. How do you know which ones are any good? Do you have to shell out big bucks to get a decent steak? Hint: not necessarily. To make steaks slightly less mysterious, weve put together this guide to the top five cuts.

How Is Cowboy Steak Best Cooked

There is a wide range of ways to prepare and cook this cut of steak.

If you want the most marbling and flavor, we recommend cooking it very rare or medium rare.

Because this cut contains so much fat and connective tissue, it will be incredibly tender and easy to chew if cooked right.

If you dont like the insides of your steak to be pink, cook it medium or well done.

In some cases, it is also common to marinate this cut of meat before cooking.

Cowboy steak can be cooked with and without marinade and still taste delicious!

How To Get A Good Sear

What Is The Best Way To Cook Steak?

Air frying with its fan and high-ish temps can replicate the same kind of sear you get on a grill or cast iron pan. The trick is getting the steak as close to the heating element as possible. For these photos, I used air fryer racks to lift the steaks right up to the heating element, and the resulting crust is pretty darn decent.

The Chicken Dinner Of Steaks

Sirloin steak is kind of the also-ran steak in some ways. That tasty and, well, tender tenderloin runs right between the sirloin regions, which are sirloin, top sirloin, and bottom sirloin. Sadly, sirloin isnt quite as tender as tenderloin, but dammit, a sirloin is pretty tender, often retails for less than $8 a pound, and can be sliced up for delicious sandwiches, used in savory stews, or enjoyed as an entree. In fact, in many mid- to lower-range steakhouses, if you order a steak thats around $12 to $15 with potato and side included, youre going to get sirloin, and youre probably going to be cool with it.

Sirloins dont typically come super thick, so cooking them is pretty simple. You can cook these bad boys over medium-high direct heat for two to four minutes per side, depending on your desired level of doneness.

Whats Better Ribeye Or Filet Mignon

World

A simplified rule to remember is: the ribeye is perfect for those who prefer flavor, and the filet mignon is the better choice for those who prefer texture. Ribeye has long been known to steak lovers as the epitome of steak flavor. This cut of meat comes from the ribs of the animal, between the loin and shoulder.

What Exactly Is Cowboy Steak

This cut of meat comes from the underside of the cow.

It is full of sinew and connective tissue that becomes very tender when cooked properly.

Because it has so much rich flavor, it is often marinated before cooking to enhance its overall taste.

This steak can also be from other parts of a cows body as well, depending on the breed.

For example, a butlers steak can also come from the shoulder or buttock of a cow as well.

However, the most common cut is from the belly area. This cut is often called a buster as well.

Steak In An Air Fryer

Why make steak in an air fryer when you have cast iron, reverse seared, or flame grilled steak? While all of those are excellent ways to make steak, an air fryer can have your steaks from raw to less raw in under 10 minutes, with almost zero cleanup. After a long work day, this seems way better to me than hand scrubbing a cast iron skillet with kosher salt or preheating your grill, oiling your grill, scrubbing your grill, etc.

Look For The Right Cut Of Steak

This is a highly subjective topic, but its generally agreed that the tenderloin is the most tender cut of steak. That being said, its not my personal favorite. Because its super lean, it can dry out if youre not careful!

When youre going all out, we recommend picking up a Prime ribeye or New York strip. Theyre the easiest steaks to cook because of their high levels of marbling, which build in a lot of forgiveness in case you accidentally overcook them.

Any 1-inch-thick steaks cut from the short loin or sirloin are also fantastic choices for the grill when youre on a budget. Thinner steaks from the plate tend to be tough but have a beefy flavor, and they grill up just fine if you marinate them.

I wouldnt recommend grilling steaks that come from the chuck, briske, or round. These tougher cuts are inexpensive, but theyre better suited for low-and-slow cooking methods.

Whats The Difference Between Prime Rib And Ribeye

How To Make The BEST Grilled STEAK ever!!! | Ray Mack’s Kitchen and Grill

Since prime ribs and ribeye steaks come from the same primal cut of beef, the difference in their flavors comes from the way they are cooked. Prime ribs are seared and then roasted slowly under low heat, making them more tender, while ribeyes are grilled quickly over high heat, making them more charred.

The Perfect Steak For You

Steaks fall into two categories. They either have great flavour or they have tenderness it is rare for both qualities to go together. The golden rule for cooking steak in general is to sear over a really high heat, then cook to your liking and rest for four or five minutes to let the muscles relax and flavours enhance. And, remember, anything from the front or rear of the animal needs to cook for longer than cuts from the middle, which is much more tender. Read on to find out what steak suits you best.

Feather blade

The inquisitive foodies’ steak. This is not a well-known cut. It comes from the shoulder blade, so there are only two in every cow, and is small, but packs lots of sweet flavour and should only ever be cooked rare or else it will toughen. It is not at all expensive.

Sirloin

The City boy or snob’s steak. From the middle back, this has a good size and is well marbled with tasty fat, but lacks true depth of flavour. It is eaten more than it used to be because modern butchers hang it to add beefy flavour. Expensive, tender and juicy, it is beginning to be sold on the bone a little more, which also adds flavour. As always, flash fry or griddle sadly grills at home aren’t hot enough these days for cooking steaks, only restaurant salamanders will do the trick.

Try Cooking Your Steaks Using The Restaurant Method

Everyone loves grilling, and of course you can get a great steak that way. But theres another way The Restaurant Method and its a dead-simple way to get a perfectly cooked steak, indoors, year round. And thats something that any steak lover who lives in a true four-season climate can appreciate.

  • Roast the inside of the steak in the oven.
  • Heres how to do it:

  • Preheat the oven to 350 °F.

  • Add a tablespoon of organic butter to the pan let it melt and swirl it around to coat the pan.
  • Sear each side of the steak in the pan for 2 5 minutes peek underneath to know when to flip. You want it brown but not black .
  • If you like your steak rare to medium rare, you can often stop here. Just check the internal temperature of the steak with your meat thermometer .
  • If you like your steak medium to well done, put it in the oven on a small rack over a baking sheet lined with tinfoil to roast for another 5-15 minutes.

How Is Cowboy Steak Best Served

Serving your cowboy steak is all about presentation!

Because this cut of meat tends to be on the greasier side, it must be served with a slotted spoon.

On top of your cowboy steak, add a nice dollop of butter and enjoy!

Delicious sides include mashed potatoes, roast vegetables, or even some simple garlic bread.

How To Cook Steak In The Oven

    The Best Steak Ever

Broiling steak in the oven gives you grill-like results in the kitchen. Broiling is like grilling turned on its head, with the high heat coming from above the meat instead of below it. Both grilling and broiling are fast and easy. Here’s how to broil in 5 easy steps.

    1. Before turning on the broiler, remove thawed steaks from the refrigerator and let them rest at room temperature for about 15 minutes. Then pat the steaks dry with paper towels and season the meat as you like.

    2. Trim excess fat from the meat to avoid grease flare-ups. Make a few vertical cuts along the edges of the steak to keep it from curling under the broiler.

    3. Situate the top oven rack to just below the broiler coils. Turn the oven on to broil. Allow it to preheat for 5 minutes.

    4. Place steaks on a broiling panor if you don’t have a broiling pan, make one: line a shallow baking sheet with foil and set a flat rack on top of it. But do not use a glass baking pan under the broiler it will break under the high heat.

    5. Slide the steaks under the glowing coils. The distance between the top of the steaks and the heat source should be between 3 and 5 inches. If the top rack position is too close to the coils, lower the rack to the second position.

    7. If the outside is nicely crusted but the inside is too raw for your liking, turn the oven temperature down to 350 degrees F and roast until done. Remove and let the meat rest for 5 to 10 minutes.

Let The Steak Warm Up A Bit

A steak close to room temperature will cook more evenly than a cold one when you slice into it, most of the interior will be cooked to the same reddish-pink color and tenderness. By contrast, if the meat is seared while very cold, you may end up with a grayish area between the browned crust and the red center. Season the steaks with ample kosher salt and a little freshly ground black pepper as they sit this lets some of the salt melt and blend with the meat, improving its flavor .

How To Choose The Best Cut Of Steak

For just about any steak, its especially important to look at thickness. Although thinner cuts of steak can cook just fine on the grill or in the oven, theyre a little more difficult to master. An extra 30 seconds or minute too long, and your delicious steak can turn into a not-so-tempting hockey puck. Thicker cuts allow you a little more time to play with, so you can get the perfect grill marks and cook without overcooking it. Of course, the right thickness can vary with your preferences, but its a good idea to choose a cut thats at least 1-inch thick for any cooking method.

Then, look at the marbling. See those white lines running through each cut? Thats marbling, which is another name for the fat that runs through the steak, almost like thin veins. You think you dont want fat in your steak, right? Thats a common thought, but naturally occurring marbling through the muscle is what gives your steak tenderness and flavor. As it cooks, the fat renders itself down, creating the excellent texture and rich steak flavor you expect. So, the right amount of fat is a good thing! Of course, you dont want a fatty steak, so look for nice, thin lines of marbling rather than chunks of fat.
