I generally prefer russet potatoes for classic french fries, but for steak fries, only Yukon Gold potatoes will do. Yukon Golds thin skin allows the potatoes to be cut into wedges unpeeled and crisps up in the oven along with the potatoes. But the best part of Yukon Gold potatoes are their tender, sweet flesh which bakes up into the creamy and dreamy interior of these steak fries. Look for four medium potatoes that are comparable in size and shape. Longer potatoes make for more slender steak fries.

I enjoy frying food at home despite its reputation as a messy, stinky endeavor, but I find when you roast potatoes slowly they actually become creamier. Oven-roasted steak fries rival their fried counterparts in crispiness, but they wont be quite as evenly golden-brown as the fried version.

Ingredients You Need For The Perfect Pan

To make perfect pan-fried steak, you don’t need many ingredients. You can create the perfect meal using only the basics. Here are all of the ingredients that you need to prepare the steak:

  • 1-2 tbsp. of extra-virgin olive oil
  • Your steak cut of choice
  • Garlic

Finally, to achieve the perfect, crisp crust, you’ll want to cook a steak using cast iron. Non-stick Teflon or copper pans won’t hold the flavor from the fat or deliver the same crispy sensation.

Step 1: To get your fries soft and creamy in the middle you want to first microwave them for 5 minutes. I love this microwave steamer for precooking vegetables.

Step 2: Preheat your cookie sheet with oil in the oven before putting the fries on it. Set your oven to 450º F. Use a large cookie sheet and add a couple tablespoons of oil and put the pan in the oven while its heating up.

When the oven is preheated and the potatoes have been microwaved, swirl the oil around the pan so that every inch is coated and then scatter the potatoes evenly on the cookie sheet. Sprinkle salt and pepper over them or any kind of spices you like. Pop the potatoes in the oven and roast for 30 minutes. Take them out and try to flip them.

Turn up the heat for the last 10 minutes.

Step 3: Turn up the heat to 525º F and cook for 10 minutes more. At this point you want to check them and make sure they dont burn. Every oven cooks differently and I wouldnt want you to end up with the Perfect Burnt Steak Fries.

And above is what they look like after they are done. They are so good let me tell you. They are not as crisp the next day but would be great for breakfast as home fries if you cut them up.

Russet potatoes, known as baking potatoes, are the recommended potato for making the best steak fries. Russets cook up crisper than waxy potatoes such as Yukon gold potatoes and baby reds. This recipe could be attempted with sweet potatoes as well, but that would take the flavor in a completely different direction.

The best thick cut steak fries are dusted with flour. Why? The flour mixes with the seasonings and oil and turns crispy while baking.

Make sure you cut the thick wedges of potato evenly. If some fries are fatter than others the cooking time required will be inconsistent. I recommend using 4 large potatoes that are similar in size and shape. It makes it easier to make consistent cuts.

Once cut, add them to a large bowl with the oil and seasonings and toss to evenly coat. As soon as the oven is preheated you are ready to bake!

Tip: For perfect steak fries every time, I prefer to bake them on parchment paper. It makes for easier cleanup, but most importantly they don’t stick!

You’ll have the best results using the pan-searing technique if you select a boneless steak between 1 and 1 1/2 inches thick. Well get into cuts in just a bit, but we generally recommend using thicker cuts like a New York strip steak or a boneless ribeye. When you use a thicker steak with more fat, it’s more likely to stay juicy when you cook it.

Making Homemade Steak Fries From Scratch

If you have time, you can also make air fryer steak fries from scratch. The directions and cooking times are very similar to our traditional air fryer Homemade Potato Wedges, or our Seasoned French Fries. You will begin with by peeling, then rinsing four Russet potatoes. Then, cut them into ½ inch strips the length of the potatoes.

Soak the French fries in cold water for 25-30 minutes. This will remove the starch content and make them crispy.

After they have soaked, drain water and pat dry with paper towels, then return them to the bowl. Next, coat potatoes with a tablespoon virgin olive oil. Seasonings are optional, but if you want them seasoned, follow our potato wedges recipe. We just season with salt or garlic powder.

Spread the fries into the air fryer basket, without overlapping. Work in batches if necessary. Once it is filled, return the basket to the air fryer and cook fries at 400 degrees Fahrenheit for 20-25 minutes. During the cooking process, shake the basket at the 10 minute mark.

When cooking steak fries, depending on the thickness of your cut, cook time may vary, so you may need to add 2-3 extra minutes for cooking time.

As you know, you don’t need a lot of things to make fries. For air fryer steak fries, you’ll only need a few ingredients, like two russet potatoes, avocado oil spray, salt, onion granules, garlic granules, pepper, and parsley. Check the label for Oven Directions. Whatever the oven temperature is, decrease it by 25 degrees. If the recommended temperature is 425 degrees, reduce that to 400 degrees. Now, for how much time to cook the food in question. Simply take the recommended time and decrease it by 20%. If the total time is 20 minutes, the new time will be 16 minutes. I like to divide that time in half and flip whatever I am making halfway through the total cooking

How To Cut Steak Fries:

In order to cut potatoes into wedges, I like to cut each potato in half, then cut those pieces in half to get quarters, then cut those quarters in half, then cut those pieces in half, for a total of 16 pieces per potato. You can see the progression here from left to right:

For a standard russet potato, I find that the 16 piece cut has the perfect thickness to it. If you have smaller russet potatoes that come in those bulk bags, you may want to cut less.

Once the potatoes are cut, add the seasonings and a couple tablespoons of oil:

Any high heat roasting oil will work, like a light olive oil, avocado oil, or vegetable oil.

Toss the potatoes well so they are evenly coated in the oil and seasonings. I find my hands work best for that, rather than a spatula.

Then spread them onto a sheet pan in a single layer:

Its important that the fries arent piled up on top of each other, and they have room to brown.

Bake the fries for 20 minutes on the first side, until they look golden brown on the edges:

Now flip the fries over and bake for another 5-10 minutes, until more thoroughly golden brown and crisp:

Then you can sprinkle them with a little extra salt, and either enjoy them as is, or serve with ketchup, chipotle mayo, or aioli.

My recipe is designed to use in the oven, but there is no reason you can’t deep fry these instead. I would deep fry in 350 degree oil until golden brown and tender.

Alternatively, you could use an air fryer instead, but it will likely take just as long as the oven. Approximately 20-25 minutes at 400 degrees.

Its important to cut your fries roughly the same size. I cut down the middle length-wise and then cut each half into four pieces length-wise. This gives you 8 fries per potato. I also use Russet potatoes and I havent tried other kinds so I cant tell you if they will come out the same.
