  • Remove to indirect heat and continue cooking until the internal temperature is 130-135 degrees.
  • Let the meat rest and redistribute the juices for 10 minutes before slicing thinly against the grain.

    What Temperature To Cook My Steak To

    You can easily adjust this recipe for your own fam! We like our steaks at a nice Medium temperature, so I plan on cooking to about 130ºF.

    I will remove it from the pan and allow it took continue to come up to temperature while it rests for about 10 minutes.

    The following is a guide for what final temperature you would cook it to from Rare to Well Done. Please note that at 10º prior to removing it from the pan, you will add the shallots, garlic, butter and rosemary and at 5º prior to your desired doneness you will remove it and allow it to rest.

    How To Cook Tri Tip

    Rich and meaty in flavour and low in fat, tri tip cooks like a tender steak but slices like a brisket perfect for people who want to do a brisket-like cook up but dont have the time. It can be smoked, barbecued, grilled or roasted, but its always best when cooked to a nice medium rare, before letting it rest and slicing.

    Cook the tri tip in a low oven at 275ºF / 135ºC or smoke it with indirect high heat for about 45 minutes, letting the meat cook evenly the whole way through. For best results when cooking, always use a meat thermometer. Insert the thermometer horizontally into the thickest part of the tri tip and aim for an internal temperature of 125ºF130ºF/51ºC54ºC. Remember that its triangular shape will mean that the tail or tip will be more done, while the centre will be slightly pinker.

    Once you have achieved your desired doneness, transfer the tri tip directly onto charcoal or onto a hot pan to give it a final sear on the outside.

    Allow the meat to rest for 510 minutes before slicing.

    How To Make Oven Tri Tip Roast

    Make sure tri-tip is dry and score the fat layer with a knife, cutting through the fat, but not through the meat. Season it with salt and pepper, then set aside.

    Mix together garlic, thyme, paprika, basil, 1 tbsp oil, red wine, onion powder, salt, and black pepper.

    Rub the wine marinade over meat and place in a resealable plastic bag, scraping in all the garlic paste and seal. Refrigerate for 1 hour and let it sit at room temperature 5 minutes before use. Reserve marinade and set aside.

    Preheat oven to 425°F.

    In a large cast-iron skillet, heat 1 tbsp olive oil over high heat and place tri-tip fat side down. Lower heat to medium-high and cook for 4-5 minutes or until thoroughly browned. Flip tri-tip and cook for 2 more minutes, then transfer to the pre-heated oven.

    Roast for about 15-20 minutes or longer , depending on the weight of the tri- tip . It is best to use a meat thermometer to check for doneness . The internal temperature is 135 degrees for medium-rare and 145° for medium. Let cool for 5-10 minutes and cover with aluminum foil to keep warm.

    Meanwhile, while the tri tip is roasting, place the reserved marinade in a small sauce-pan over medium-high heat. Bring the mixture to a boil and cook until thickened and reduced down. Adjust with salt and pepper.

    Slice the roast in half against the grain on the ends and again at the center point.

    Grilling tri tip is a fairly easy process when all is said and done. All it takes is keeping an eye on the steaks and monitoring the internal temperature of the meat for doneness.

    Before putting your tri tip cut on the grill, make sure to let it come to room temperature. This step helps ensure the steak cooks evenly and achieves the desired tender texture.

    Once the meat is room temperature, its time to blend the spices. My favorite spice blend for tri-tip includes salt, black pepper, cayenne pepper, granulated garlic, granulated onion and just a little sugar to bring it all together.

    Preheat your grill then rub your spices all over the steak. When coating the meat in your spice blend, do your best to get as much of the beef covered as you can. I usually end up having a little bit of the spice blend leftover, so dont worry if you wind up with extra.

    You want to place your tri tip on the grill fat side down and let it cook for about 5 minutes on the first side. This may take more or less time once you see a dark brown crust develop youre ready to flip the meat.

    The second side of the steak will take a little longer, about 8 minutes. After both sides are beautifully brown and crusted, take them off of the grill and let them continue cooking on indirect heat until they reach desired doneness.

    When Im cooking a medium rare steak, I remove it from heat when its internal temperature has reached 130. This is where your meat thermometer will come in handy!

    How To Prepare Tri Tip

    Tri tip can be bought from the butcher trimmed or untrimmed. While its generally cheaper to buy the latter, make sure you have a knife sharp enough at home to trim it yourself otherwise its probably worthwhile spending a few extra dollars per pound/kilogram to have the butcher do it for you. You can also buy tri tip steaks individually, which are ideal for smaller households.

    Just like a brisket, you want to cut off any ragged ends and silver skin, trimming down the fat as much as possible. Its fine to leave a little fat on, but get rid of any thick chunks of fat so that you are left with a lean, boneless, boomerang-shaped piece of meat.

    When it comes to seasoning, tri tip is incredibly versatile and takes well to both dry and wet rubs. As its a fairly thick cut, you want to season it aggressively with salt, pepper and your favourite spices. To help the seasoning stick, first rub it with a neutral oil and coat it in your preferred spice mix.

    How Long To Air Fry Tri Tip Steak

    You’ll flip the tri tip after about 8 minutes, and aim for 16-20 minutes air fry time – but then leave the tri tip in the air fryer until it hits your target temperature to carryover cook in the ambient heat.

    Since cuts of meat can vary in size, and different air fryers hit different temperatures, we strongly recommend on going off the temperature of your tri tip, not the time on your air fryer for absolutely perfect results.

    Bring To Room Temperature

    For the crunchy crust and rich meaty flavor you get from a steakhouse, you want to cook steak as hot and fast as possible.

    Steak that has come to room temperature before cooking can crisp on the outside faster, and allows the fat to render more.

    Simply let tri tip rest on the counter for 20-30 minutes before cooking while you prep the rest of your meal.

    The tri tip comes from the cows lower back, while the breast comes from the animals front, slightly below the chuck part. The triple tip is a triangular cut from the lower part of the loin and is considered a steak. Because of this, the breast is actually one of the least tender pieces of meat you can get.
