What Makes This Ribeye Steak So Good

How to Break Down a Ribeye Roll

You dont need any skills or a huge list of ingredients for this ribeye steak recipe. Its as simple as steak, oil, garlic, seasoning, and a tiny bit of butter . The cooking time may vary depending on each oven and the size of the steak. My steaks were a little over 1 inch thick. 8 minutes in the oven got me a perfect medium-well steak. If you prefer your steak a little more rare, cook it for less than 8 minutes.

What Are The Best Cuts Of Steak

Theres really nothing quite like a well-cooked steak. It pairs perfectly with just about anything, its extremely versatile, and its great for any occasion and in any setting.

While the cooking method and surface you use are certainly important, a great steak actually starts with a great cut of meat. You can have the best seasoning, the best grill, and the best cooking tricks up your sleeve, but if youre starting out with a mediocre cut of steak, the steak will be, well, mediocre.

Youve probably noticed there are a lot of different types of steaks, whether youre browsing the meat department at the grocery store or checking out a restaurant menu. How do you know which ones are any good? Do you have to shell out big bucks to get a decent steak? Hint: not necessarily. To make steaks slightly less mysterious, weve put together this guide to the top five cuts.

Choosing The Right Cut Of Steak

Cuts of steak can be broken down into three sections. Startingon the upper back and moving down to the mid-back are the ribs, theshort loin and the sirloin.

  • The rib area contains cuts such as the Rib-eye Steak, the RibRoast, and the back ribs. This is the least tender section of thethree.
  • The short loin area produces the T-bone, Top Loin Steak, Tenderloin and the Porterhouse.
  • The Sirloin gives the Sirloin Steak, and the Top Sirloin.
  • Other steaks like the chuck, round, and flank come from those areas and tend to be tougher cuts of meat.
  • Strips steaks, such as New York Steak are cut from the T-bone area.

If you are looking for the most tender cut of beef, it is thetenderloin. Other cuts from this area are filet mignon, chateaubriand and tournedos. Though these are the most tenderthey are also less flavorful.

The rib-eye, or rib steak can be a little less tender but far moreflavorful. Small streaks of fat throughout the meat mean moreflavor. So with more marbling you get less tenderness but moreflavor.

Finding a balance between the two, gives you the best steak. Top loin and sirloin are slightly less tender but have more flavor thantenderloin. With cooking cuts of meat such as these there is noneed to marinate or even cook past medium rare.

Some of the most flavorful but least tender cuts of beef aretri-tip or flank steaks. These are also favorites on thebarbeque. Your best bet is to marinate these cuts beforecooking. Also, leave the fat on until after the meat is cooked.

Which One Is More Expensive

On the other hand, averaging at around 14 to 18 dollars a pound, New York Strip slightly more expensive, although once again far from the cost of something like a filet mignon.

Understand The Beef Grade System

The United States Department of Agriculture established a beef grading system that may help you in picking the best rib eye. Beef is graded according to its age and fat marbling. These two variables indicate the tenderness of the meat.

Prime is superior because of its high marbling content. Second comes Choice, which is commonly available in groceries and shops. This grade contains a fair amount of marbling however, not as much as Prime. The third grade is Select, which is much leaner and has low-marbling content.

You might choose either of these three grades depending on your method of cooking. Prime cuts are best for dry-heat cooking methods such as roasting, frying, and grilling. While Choice cuts are a cheaper alternative to Prime, they are still super flavorful and can be braised or stewed.

Select cuts, on the other hand, are best for moist-heat cooking methods because they are leaner.

What Is The Best Meat For A Classic Philly Cheesesteak Sandwiches

To really go all the way and keep it real, then you have to go with thinly sliced ribeye steak. The ribeye is wonderfully marbled so you get all the flavor from the marbling. Also, the thinly sliced steak allows more flavor from the meat to shine through as well.

If you want to make it easy, then go ahead and look for the pre-sliced ribeye steak that you can find in the freezer section at the market. It is actually sold as cheesesteak meat so you can find it pretty easily.

However, if you are game, then go ahead and pick up some ribeyes from the fresh meat counter. Feel free to ask the butcher to slice it and just let the butcher know it is intended for cheesesteaks. They will know exactly how thinly it needs to be sliced.

The beauty of using fresh ribeye is you will see how many slices you can get per pound of steak. Depending on how thick you like to make your sandwiches, you can get away with a quarter to a third of a pound per sandwich.

Keep in mind that the sandwich also has all that cheese and the grilled veggies too. So, it isnt like the sandwich is going to be skimpy.

What Makes One Type Of Steak Better Than Another

14 oz Boneless Ribeye Steaks

We all have our own idea of what makes a steak good.

The same applies when we talk about better steaks. For this article, were going to assume that the better steak is super flavorful yet tender. Were also going to assume that cost is not a factor.

Filet Mignon comes from the tenderloin portion of the cow.

It contains very little fat and comes from a non-weight-bearing muscle. This, along with it not containing much connective tissue makes it the most tender cut of meat. However, the lack of fat does not make it the most flavorful.

This is why it is usually served with some sort of sauce or wrapped in bacon.

Strip steaks, like the NY Strip, is a good balance of flavor and tenderness. Its got some fat in it, making it more flavorful than the filet mignon. Its also a well-worked muscle, making it less tender.

The Ribeye is the most flavorful cust of meat. Look for high marbling. This is the white swirling youll see in the steak. The more marbling, the more flavorful the steak. If cooked with care, it can also be very tender.

So, what makes one steak better than another steak? A good amount of fat and cut from an area that doesnt do much work .

So some steaks are more expensive than others. But at the end of the day, are all steaks chewy?

. I get into how to know which types to buy, how to cook them for the best results, and the 1 sure-fire way to make a great steak chewy if you do it wrong!

Americans are ready to grill. In fact, 76% of Americans plan to grill out more during the next six months according to a 2022 poll conducted by Ipsos and Omaha Steaks, and eight in 10 Americans enjoy outdoor barbecues with friends and family more than going to a restaurant.

But despite the healthy appetite for grilling meat, cost saving is as important a factor right now. Over 70% of Americans reporting grocery inflation as having an effect on their budget. That means folks may be willing to swap their preferred cut of beef for a more budget-friendly steak if necessary.

Mark Dommen, executive chief of San Francisco’s One Market Restaurant agreed, also over email. “Ribeye steaks have plenty of fat and are also a very forgiving steak,” he said. “The ribeye meat is so tender that you don’t have to focus on slicing it the correct way.”

What Type Of Cheese Is The Best On A Philly Cheesesteak

If you are going for a full-on true Philly cheesesteak sandwich, then go all the way with the cheese too. Provolone, American cheese, and even Cheese Whiz are all used in authentic Philly Steak Sandwiches.

I know some people are not fans of Cheese Whiz and anyone that questions if it is actually cheese is not terribly far off the mark. But, it does help achieve that supremely regional Philly taste and proper meltiness.

Personally, Im not a huge fan of the Whiz in most cases, but Ive been to Philadelphia and have had an authentic cheesesteak from one of the most famous places around, and I chose provolone and I chose poorly. Just at LEAST have some Cheese Whiz around so you can compare, and let me know what you think is best.

Provolone is still a great option though, and since my family are largely also not Cheese Whiz fans, thats why you see it pictured here.

Truth be told, you can use any kind of cheese that has a good melt to it and you will do just fine. The purists have a point if the point is to make it exactly as they do at Genos or any of the other famous cheesesteak joints, but the most important thing is to enjoy it the way you like it.

  • Sliced jalapenos

In terms of seasonings, a bit of salt and pepper is all you really need, but if you want to dust on some garlic powder too then you wont be sorry.

Cutting Ribeye Cap Steaks From Your On Sale Prime Rib Roasts

A good price on average of a ribeye steak will be between $12.99/lb to $14.99/lb. Not too cheap to be good. Always look out for sales and stock your freezer when you find one.

I prefer to buy my meat where there is an actual butcher you could talk with. Sorry Trader Joe’s, you and your pre-packed meat are out. I have never had a steak from Trader Joe’s I thought was any good.

Whole Foods Market does indeed have some good meat people, however that price tag is too hard to shallow.

Costco comes in at $12.99/lb. Costco cuts their beef in house. The quality is better than what you get for a little more money at a store like Kroger.

What Does Rib Eye Taste Like

The closer the section of meat is to the head of the cow, the more marbling there is. Since the rib primal is behind the chuck primal, rib-eye steak has an abundant amount of fat. This fat melts from the inside out during cooking, giving the meat loads of flavor and a buttery taste. The steak also remains tender during almost any cooking process.

How To Cook Ribeye Steak On A Grill Or Smoker

The ribeye is best cooked either in a sizzling hot pan or indirectly on a good grill or hot, flat top griddle.

An open grill does have the danger of igniting the rendered fat on open flames, so some caution is advised, and you need to pay attention and manage the cook.

Cooking on a griddle collects the fat in its ridges, preventing any flare-ups, but prevents the meat from absorbing any smoky charcoal flavors.

Heres our simple guide to cooking your steak in a pan or on a griddle:

  • Pat the steaks dry and bring to room temperature.
  • Heat your skillet to high heat until it sizzles when you add a drop of oil.
  • Season well, not skimping on the salt, as this helps to bring out the umami flavor.
  • Cook for at least 5 minutes each side until close to medium, the fat in a ribeye needs time to render and breakdown to make it tender.
  • Remove from the skillet and add a knob of butter and tent in aluminum foil to retain heat.
  • Allow to rest for at least 10 minutes, so it relaxes and reabsorbs the juices.
  • Slice against the grain and enjoy.
