Sous Vide Tomahawk Steak

With this technique you will cook a seasoned, vacuum sealed Tomahawk steak in sous vide water bath until it is perfectly and evenly cooked on the inside and then you will finish it by searing it in a pan, griddle or over a hot grill grate until the desired doneness is reached.

You can set the temperature the steak needs to reach in the water bath depending on how done you want it to be, we generally go for 120 F and then complete the cooking process during the browning .

The best part about cooking a protein sous vide is that once the preset internal temperature is reached you have the luxury of time about when to take the steak out of the water bath it will not overcook and will stay at that preset temperature until you need it.

Most restaurants these days use this exact technique for thick cuts or even delicate proteins such as rack of lamb or salmon. Serving a perfectly cooked bone-in ribeye on demand becomes much easier once it has already been uniformly cooked throughout and only needs to be finished.

I visited the Hoxton Tomahawk Saturday night as a regular in the Yorkshire branches. Myself and my friend shared a medium cooked sharing board which arrived stone cold. I requested this to be warmed up which was done. However the steak was tasteless, dry andover cooked. Had this barbequed for my husband’s birthday. It was delicious, 7 minutes each side and rested for 10, lovely and medium rare and very tender. Will definitely be having it again!

For best results you should cook a Tomahawk steak on the barbecue.

The secret is to let the steak come right up to room temperature before you start so leave it unwrapped and out of the fridge for around an hour prior to cooking.

Rub the steak all over with good quality extra virgin olive oil and a good grinding of sea salt and black pepper.

Place the steak on a hot barbecue and cook for 6-7 minutes on each side resisting the temptation to move it or turn it other than halfway through the cooking time.

This will give you a perfect medium to medium well steak every time.

Adjust the cooking time up or down depending on your preference.

Let the steak rest for 8-10 minutes in a warm place before serving.

Keep refrigerated and use within 3 days of purchase. If freezing freeze on day of receipt.

Tomahawk Steak Vs Cowboy Steak

The cowboy steak is a bone-in ribeye, just like the tomahawk. But it has a smaller frenched bone in it. Cowboys reportedly cooked this steak with the bone so they could use it as a handle while grilling it.

Both cuts have well-marbled meat with plenty of flavors. The cowboy steak is usually about half the weight of the tomahawk cut.

Hybrid Grilling Your Tomahawk Steak

Another good option is to follow the steps above for the low and slow section, and then finish the steak off in a hot pan.

This is a good option if youre grill or smoker is set up for low and slow and you dont want to reconfigure it for searing.

  • Set up your grill, as above, using the two-zone grilling method.
  • Once the steak reaches a temperature that is about 15-20 degrees away from your desired level of doneness, remove it from the heat and set it to one side.
  • Heat up a cast-iron skillet until it is smoking hot. If your grill has a side burner, its best to do this outside, so you dont set off all the smoke alarms.
  • Put your steak direct into the pan to get that all-important Maillard reaction and turn them regularly to avoid scorching the surface.
  • Once your steak is about 5 degrees away from done, remove it from the grill and set it aside to on a wire rack with a plate underneath to rest for around 5-10 minutes.
  • Just before serving, heat up the juices in the pan with those on the plate until smoking hot and then drizzle over the steaks for the extra burst of flavor.

    Yes, you absolutely do not want to skip this step. The steak continues to cook during those few minutes of resting. This continuation of cooking is great because it doesnt dry out the steak, as it would by simply leaving it in the oven longer. Cutting into the steak interrupts that last little period of cooking by releasing the heat inside the steak. Trust us, let it rest a few minutes and your tomahawk steak will turn out perfect.

    Smoking A Tomahawk Steak Or Cowboy Steak

    When youre ready to smoke the steak apply your rub to both sides, and then place it in your smoker. The lower the temp here, the better. I smoked this tomahawk at 180 degrees with oak pellets.

    Let the tomahawk smoke at 180 until the internal temperature hits 110 degrees. This took about 3 hours for my three-pound tomahawk steak. Use a quality temperature probe like the Thermoworks Smoke to keep track of temps without opening the lid of your smoker. I placed the probe about an inch from the bone. As close to the center of the cut of the meat as I could.

    When the Tomahawk Steak hits 110 internal temperature remove it from the smoker. Adjust the temperature of your smoker up to 450 degrees. While the smoker is coming up to temp combine 3 tablespoons of melted butter with a clove of minced garlic, and a 1/2 tsp of thyme.

    My Favorite Smoked Prime Rib Roast Recipe

    When the smoker is up to temp brush both sides of the tomahawk steak with the melted butter mixture. Then place the tomahawk steak directly on the grill grates. Let the steak continue to cook at high heat until the internal temperature gets to 120. At 120 flip the steak, and then pull when the internal temperature hits 130-135 degrees. It took my tomahawk steak about 30 minutes at high heat to get to temp.

    Now here is the really hard part. You have to sit and stare at this steak for 15 minutes before you slice into it. After youve let the steak rest get ready for your tastebuds to be incredibly happy.

    Slice the steak thin, and get ready to hear your friends tell you this is the best steak theyve ever had.

    How to Cut Tomahawk Steaks

    Anytime you can get your hands on a good cut of meat like this, you want to make sure you do everything you can to make sure the end result turns out just perfect. It took about 7 hours total for me to prep and smoke this steak, so plan accordingly. That might sound like a lot of time, but trust me, its totally worth it.

    Approximately 7 hours before you want to serve the tomahawk steak remove it from its packaging and liberally salt one side of it. I placed the steak on a grill rack over a foil-lined pan, and then put it in the fridge for 90 minutes.

    After 90 minutes remove the steak from the fridge, flip it over, and repeat the salt and fridge process. This process pulls moisture out of the steak that combines with the salt and then gets sucked back into the meat. Were dealing with a thick cut of meat here, and its one of the big keys to building an amazing flavor profile with this steak.

    What Is A Tomahawk Steak Where Do I Purchase One

    The tomahawk steak is essentially a bone-in ribeye steak. It is taken from the rib section, with the large rib bone still attached. Its appearance resembles that of a tomahawk ax. Having a bone-in ribeye insulates the meat while it cooks, making your meat more moist and tender. Tomahawk steaks can be found in many butcher shops and are becoming more common in higher-end grocery stores. Be sure to ask at the meat counter if you can special order one.     Youre inevitably going to hear from someone that tomahawk steaks are a total scam, pound-for-pound overpriced, and that youre just paying for a bone.
