After the first bite, I knew I had to have the recipe! The flavors of ginger, peanut, garlic and other ingredients were so incredible together! What I didnt realize was how healthy it was too!
Most ingredients in this dish are raw the sauce is uncooked-but dont let that put you off. It is actually one of my daughters favorite meals, and one she cooks herself quite often .
She was upset that I was putting it on my blog, not realizing its already all over the internet! It is originally a Cooking Light Recipe but I am posting my version with a just a couple of changes .

Fleming’s Prime Steakhouse & Wine Bar La Jolla
To me, there is no better meal than a perfectly cooked steak. When I received the news that I would be attending a dinner at Flemings Prime Steakhouse & Wine Bar in La Jolla, my mouth began to salivate at the thought of a great steak dinner. La Jolla is known to be one of the classiest areas in San Diego, where the neighborhoods are just as beautiful as the ocean sunsets. Therefore, its no wonder why Flemings Prime Steakhouse has taken residence in the Hyatt Regencys restaurant village.
Flemings is located right off La Jolla Village Drive at 8970 University Center Lane, just minutes east of Interstate 5. My dining partner, John, and I drive into the Hyatt Aventine complex where we are surrounded by the towering Hyatt hotel on one side and three fine dining restaurants on the other. The sidewalks are filled with well-dressed people heading from the hotel towards the restaurants. Valet parking is readily available for a flat rate of $8.00, but we decide to take advantage of the lot beneath the Hyatt. Flemings will validate parking here for up to 3 hours.
Casey Eades, the operating partner for the La Jolla Flemings, greets us with a handshake and shows us to our booth, where we have a great view of the open kitchen and the main dining room. Amber lighting filters from the ceiling, illuminating the room in a soft glow. Wine bottles surround the tables, calling attention to Flemings vast wine variety.
Operations May Be Disrupted Due To CovidFounded by restaurateur Paul Fleming — the original P.F. in P.F. Chang’s — and William Allen, III, this steakhouse chain distinguishes itself with its top-quality meats and notable wine program. Expect a wine list featuring numerous hard-to-find American boutique wines as well as renowned national and international labels, with 100 wines by the glass, and an 80-label reserve list. The USDA Prime hand-cut beef includes rib-eyes, filets and New York strips, all seared by intensely high-heat cooking for the signature steakhouse outer crust. Tasty sides include chipotle cheddar mac n cheese, spicy Thai green beans, and Fleming’s Potatoes, a house specialty with cream, jalapeños and cheddar. Try the wedge with caramelized bacon and blue cheese dressing, or the Flemings salad with candied walnuts, dried cranberries, tomatoes, onions, herbed crostini and lemon vinaigrette. Seafood, too, is well-thought-out, be it North Atlantic lobster tails or Chilean sea bass, sautéed and braised in a light, Southwest-style broth, with wilted greens, crisp potatoes and chile-cilantro oil. Finish with a familiar dessert: cheesecake, chocolate lava cake or crème brûlée.

Having lived in San Diego for well over a decade Ive had the pleasure of eating at Flemings La Jolla location on numerous occasions. With each, the award-winning restaurant exhibited why its remained a North County staple for classic steakhouse fare since opening in 1999. Flemings La Jolla was, in fact, the third restaurant this brand launched in the United States, not far behind the original Newport Beach location that opened in December of 1998.
Flemings La Jolla, conveniently situated in the Aventine Center across the courtyard from the Hyatt Regency Hotel, is not one to rest on its laurels or nearly two-decade strong reputation, alone. For his part, for the past nine years Chef Partner Derek Reshaw has worked tirelessly to assure each dining experience stands on its own merits.

MK: What is your personal favorite item on the menu?WJ: The Bone in Filet Mignon is my favorite item to enjoy at Flemings. It is not printed on our menu, but it is a nightly feature that is always available. The bone with marrow gives the meat an unbelievable flavor.

Spicy Soba Noodles With Chickenand Peanut Sauce
- 1 carrot, peeled
- 2 cups fat-free, less-sodium chicken broth, divided
- 1/3 cup peanut butter
- 1 tablespoon chopped peeled fresh ginger
- 1 tablespoon soy sauce
- 1 to 2 teaspoons crushed red pepper
- 1 or 2 garlic cloves, minced
- 6 ounces fresh snow peas, ends removed
- 12 ounces skinless, boneless chicken breast
- 5 cups cooked soba
- 1/2 cup sliced green onions
- 1/2 cup chopped unsalted, dry-roasted peanuts
Place chicken in a large saucepan add one and 2/3 cups broth. Bring to a boil. Reduce heat, and simmer 15 minutes or until chicken is done.
Remove from heat let stand while preparing other ingredients.
Shave carrot lengthwise into thin strips using a vegetable peeler.
Combine 1/3 cup broth, peanut butter, ginger, soy sauce, honey, red pepper and garlic.
Stir with a whisk until smooth.
Cut snow peas in half, then blanche in about 1 cup boiling water for one minute. Drain from water and set aside.
Cook soba noodles according to the direction on package
While noodles are cooking remove chicken from broth and cut into bite sized pieces.
Combine carrot, peanut sauce, chicken, snow peas and drained noodles in a large, heated bowl or pot toss to coat.
Sprinkle with green onions and peanuts, and thats it! Add a little sprinkle of hot pepper flakes if desired, and serve. It doesnt look very appealing, but it tastes great!

Steak was good as we expected. Tomahawk was good for sharing. Dry aged rib eye was still tender and moist to my surprise since I opt for medium well this time. If you love garlic, try the garlic mushroom. Had lemonade since we were told they can’t make virgin daiquiri, they don’t have a blender in the restaurant. Might not be a usual order but blended cocktails taste good while eating greasy food ?. Lava cake was yummy as always.
It has been a while since my last visit to Flemings but the memories were of very good food and large portions. Well, neither are true now. A medium rare filet was served blood red rare. After being sent back, it returned in the same condition. I would never recommend this place: It is too loud, service is casual to non-existant, food is better at a Sizzler! The most amazing thing was that there was a line out the door waiting to be seated! Are we that confused as consumers?
