Checking Steak Doneness Based On Internal Temperature

How to Cook a Steak on a Gas Grill

The internal temperature is critical to cook your steak to the desired doneness you want. The internal temperature is recorded in the thickest part of the steak and you should absolutely use a probe meat thermometer to check your temperature readings.

Remove the steak from the gas grill 5°F before it gets to the ideal internal temperature you have in mine because the internal temperature will continue to rise while the meat is resting. Here are the internal temperatures you need to have for your steaks.

Internal Temperature Of The Steak

The other temperature that you need to figure out is the steaks internal temperature when you are cooking. This is where you will need a meat probe or a meat thermometer for the job.

Once you figure out the internal temperature of the meat, you will know what type of doneness it has achieved. I would recommend medium-rare for any steak which is 120-130 degrees Fahrenheit.

If you aim for medium doneness, the internal temperature of the steak should be 140 degrees Fahrenheit. Well-done doneness is at 145 degrees Fahrenheit but I do not recommend going that far.

Tip: It is more important to cook the steak based on the internal temperature rather than just the amount of time as the longevity of cooking steak relies on the thickness of the cut.

Another way to know the steaks doneness is the finger test where you press your middle finger against your thumb and press the base of the thumb and compare it to the steak.

If it matches, then the steak is medium-rare, check again by putting your ring finger against your thumb for medium-well, and then your pinky against your thumb for well-done.

While it is easy and convenient, I do not recommend testing the steaks doneness with this technique as it can be inconsistent.

Place the steaks on the grill and cook them until they are golden brown and charred. Grill the steaks for 3 to 5 minutes for medium-rare, 5 to 7 minutes for medium , or 8 to 10 minutes if you prefer medium rare. Transfer the steak to a serving platter and serve immediately.

This is partially owing to the fact that there was leftover cooking.

Using a meat thermometer is the most accurate method. Insert the thermometer into the thickest section of the meat, making sure it does not strike any bones. In accordance with USDA recommendations, pork should be cooked until it has reached at least 145 degrees Fahrenheit. Your pork will be cooked to Medium Rare at this temperature since it is the lowest degree at which it is safe to consume it.

Hood Thermometers Are Evil

First and most important is that great looking thermometer in your grill hood is useless other than in a binary way of “is the grill hot, yes or no?” The numbers are meaningless.

That thermometer is a cheap thermometer that has a tube probe. It will give an average reading along that probe. But it can’t even measure that accurately.

So the hood thermometer measures the air temperature near the top of the hood . Not where the food is cooking. Never rely on it.

The Best Cuts For Grilling

What Temperature To Use

What Temperature to Grill Steak on a Gas Grill

In most of my grill recipes, I give a range, and many other sites will also. But, this is not a kitchen oven so you can’t be really exact. Just opening the top of a grill releases lots of heat. All this means is it is a little more an art than a science.

I like to think of three levels of heat I usually use. These are my arbitrary divisions, and I’m sure others may disagree.

And there are many times you should deviate from this, admittedly. An example would be my Grilled Whole Chicken where I used indirect heat in the 350° range.

Or if I’m grilling a 1 ½ inch thick steak, I won’t be using high. I might use a reverse searing or I would sear on high then move to a lower indirect heat to finish.

ALWAYS REMEMBER TO NEVER COOK BY TIME ALONE. FOR MOST GRILLING, BOTH AN INSTANT READ AND A SURFACE THERMOMETER ARE ALMOST REQUIRED TO GET IT RIGHT.

Is It Necessary To Cook A Steak Over High Heat

Reverse Searing Steaks on a Gas Grill

Yes, it would help grill a steak over high heat to speed up the cooking process. Your steak will get more tender as it cooks faster. By searing your steak over high heat, youll get grill marks. To avoid burning your steaks, make sure you cook them at the proper temperature.

Before grilling, make sure the steaks are at room temperature. Theyll cook more quickly than cold steaks, and cold steaks will contract more on the grill and release more fluids, leaving your steaks with less flavour.

Allow the meat to rest for about an hour at least at ambient temperature before cooking it. You can cook the steak over direct heat without resting it first. Direct heat cooks the surface of meat faster than indirect heat, so allow the steaks to come to room temp before you cook them. This will prevent the internal temperature of cooked meat from rising too high. If you are planning to cook this steak on a gas or charcoal grill directly over flames, make sure there is plenty of room between the fire and the grate. Otherwise, you might burn the outside of your steak. Cooking times will vary depending on how hot the flame is when you start cooking.
