When To Put Dry Rub On A Steak:

There are two methods that work best:

40 Minutes before you cook the steak: This allows the salt to penetrate through the surface and break down the muscle fibers, which results in a more tender meat. During this time, the liquid that initially surfaces has time to reabsorb, which keeps the meat juicy.

Overnight: You can apply dry rub a day in advance and let it sit overnight in the refrigerator. The surface may appear to be dryer in the morning but you will actually only lose about 5% of moisture which is far less than what youd lose if you were to cook the steak immediately, which is up to 20%.

There are a couple of things that set high-end steakhouses above the rest: prime cuts of beef, a broiler that can reach up to 1800 degrees, maitre dhotel butter and a spice rub.

And yes, most steakhouses use a broiler, not a grill, so throw that the notion that all delicious steaks need a flame right out the window.

While most of us wont ever have an oven that reaches 1800 degrees, we can purchase a perfectly marbled steak and prepare maitre dhotel butter and steak rub, both being relatively simple.

And the last trick is a juicy steak and to make that happen you need to LET IT REST!

Is Pinot Noir Good With Steak

    Montreal Style Steak Seasoning

Most Pinot Noir wines tend to sit at the light to medium-bodied end of the spectrum, and its profile is often therefore paired-up with lighter meats. Yet Pinot Noirs natural acidity and bright, red berry fruit can work with your steak dinner, depending on the style and the cut.

When Should I Season My Steak

Moral of the story: If youve got the time, salt your meat for at least 40 minutes and up to overnight before cooking. If you havent got 40 minutes, its better to season immediately before cooking. Cooking the steak anywhere between three and 40 minutes after salting is the worst way to do it.

To make a marinade from your steak seasoning, simply add olive oil to your dry rub and add to your meat and let it rest before cooking. Making the dry rub into a marinade ensures even distribution of the spice blend. I like to brush my steak with olive oil and sprinkle my dry rub on it but when grilling, my husband prefers to use the seasoning as a marinade.

Montreal Steak Spice The Case For Making Your Own

The Best Steak Seasoning Recipe (Video)

Montreal Steak Spice spread across the country, and is widely available on store shelves from several national brands. As with many bottled seasonings, the cost increases dramatically once the ingredients are blended and packaged.

It is a far more economical practice to make your own and, I think, far more flavourful too.

Another issue with seasonings like Montreal Steak Spice is the amount of salt used in the blend. Because salt is a cheap filler ingredient, I think the default action of brands is to use rather a lot.

Look at the composition of Montreal Steak spice in one of the small bottles in the spice aisle at your supermarket and you can see that the coarse salt granules are very prevalent in the mix.

In some blends Ive seen, it looks to me that it could comprise as much as half. For me that is far too much. I also prefer a smaller grained salt in my blend.

After doing some research and looking at the composition of other recipes online plus a little experimenting, I came up with my own blend that I think works very well.

For me the salt in this blend is adequate to season a steak well and adds a lot more flavour than the standard off-the-shelf brands.

I started making my own steak seasoning so it is free of non-caking additives, and other such abominations, and I could control the amount of each spice added to it.

I can be picky and I like mine spicier than they make it so that means my home version contains more red pepper flakes than is humanly necessary!

This recipe for all-purpose steak seasoning makes a good amount so make sure that you store it in a cool, dry place until you have used the last crumb! In my house, it doesnt take long!

Complement Your Meats With The Right Seasoning

Seasonings are incredibly easy to make yourself. You just need to know what kinds of herbs and spices pair best with your meat of choice. For example, warmer and lighter herbs and spices like rosemary, sage, cloves, cinnamon, and allspice pair well with the natural sweetness of pork. When seasoning chicken, you can hardly go wrong with any herb or spice since the chicken has such a mild flavor. You can try anything from bay leaves to thyme or basil to curry powder. Bright herbs such as dill, chives, parsley, and marjoram go really well with fish. You also can’t go wrong when breading fish with cornmeal and a little cayenne. Beef needs more robust herbs and spices such as cumin, oregano, cayenne, or chili powder in order to stand up against its intense meaty flavor. Those same robust herbs and spices will also complement most varieties of game meats well.

Today well be focusing on how to season steak for grilling. Although you can never go wrong with just salt and pepper, there are so many other more exciting ways to season your steak. Forgo the preblended bottles in the grocery store, and take full control of your flavors by mixing up your very own homemade steak seasoning.

How Do You Apply A Dry Rub

    Applying a rub is easy!

    • Start by blotting the meat with a paper towel to remove excess moisture.
    • Next generously coat the meat with olive oil.
    • Now with one hand sprinkle on the seasonings, dont forget to season the second side and the edges if its a thick cut of meat! Sprinkling with one hand and rubbing the spices in with your other hand will eliminate cross-contamination and be less messy.

Dont be afraid to rub it in well to completely flavor the meat!

Everyone has a personal level of seasoning and varies from person to person however, while steak seasoning is a fantastic compliment to steak, it’s important to be mindful of how heavy your hand is with it, as you can actually use too much where that threshold is for you is something you will have to experiment with on your own!

I recommend starting out with only a light covering with a spoonful of seasoning the rest of the steak seasoning you dont use can be stored to be used in something else later… or as an excuse to have steaks again!

Must Get Seasonings For Steak On The Grill

    1. Black pepper and kosher salt: These are two of the most common ingredients used in steak cooking. Theyre especially useful when grilling steaks because they help create a crusty exterior while keeping the inside moist.

Youll need about 2 teaspoons of each per pound of steak.

    2. Salt: The salt helps to draw moisture out of the meat, which will keep your steak juicy. A good rule of thumb is to use half table salt and half sea salt.

    3. Herbs like sage, thyme, and rosemary: Add these herbs to your marinade or rub them directly onto the steak before placing them on the grill. Sage is particularly popular among chefs because it has an earthy flavor that compliments beef.

Home cooks often use thyme because it has a strong aroma that makes it easy to identify. Rosemary is another herb that pairs well with meat.

    4. Lemon juice: Adding lemon juice to your marinade not only adds a tangy flavor but also helps to tenderize the steak.

    5. Baste in butter and herbs: To give it a classical restaurant taste, do this in the final stages of cooking. Butter goes a long way in giving your steak a sweet buttery flavor that compliments its savory goodness. You simply melt some butter and add fresh herbs to it.

When basting the steak, make sure you cover up the entire surface with the marinade. This ensures that none of the fat drips over the side of the steak. And if youve cooked this correctly, there shouldnt be any fat left on it either.

    How To Make The Steak

This rub can be used for grilling, broiling or pan frying.

For best results regardless of how you prepare it, dry your steak well using a dry paper towel. People tend to want to rub it with olive oil to get the rub to stick, but it will just fall off. You really want a dry steak to get a good sear and let the sugar caramelize and stick.

Massage steakhouse steak rub into your meat on both sides and wrap it in plastic wrap for at least 30 minutes, but up to 24 hours. This allows the salt to tenderize, flavors to marry and seasoning to stick.

Dont let it sit much longer, as the salt will get to a point where the beef will start to harden and just be plain salty instead of tenderized. In fact, you can even reduce the amount of salt, if desired.

I once accidentally left a nice beef tenderloin wrapped too long and the meat was basically ruined, totally over salted. I was embarrassed and also disappointed. Learn from my mistakes.
