Thats because both have been around for over a century, and while I love that they have a long history of expertise, I wanted to trace how theyve transformed- and where they see themselves now.

I also think that their company mission statement says a lot about where their focus is. Plus, I wanted to see how their history and mission compare to their quality and service.

Chilean Sea Bass is one of the most sought-after fish in the world. The once obscure fish became a culinary celebrity in the 1990s. Found in the frigid Antarctic waters, its flesh becomes oil-rich which makes it hard to overcook. This is a good thing for anyone who is looking to try their hand at culinary genius but is a complete novice.

When it comes to seafood this is me. You all know me as the meat guy which is my first love but the demand for something lighter set me on a quest to find something different. This is where my collaboration with a local Chicago food blogger and chef, @forkmylifechi was born.

Morgan Berrington had been ordering from Mino Prime from inception and I have been following her Instagram stories. Her talent peaked my interest so when I was going to bring on seafood I asked her to create some recipes for me. I have to tell you this recipe is easy to follow and a home run! I never eat cauliflower puree, I mean NEVER, but it was delicious, my kids even liked it. What Is Chilean Sea Bass

Chilean sea bass is a delicate, white fish thats light and flaky like halibut or cod, with a buttery flavor and texture. Contrary to its name, sea bass are not harvested in Chile, but rather in Antarctica. It’s named Chilean because the Chileans were first to market this Patagonian toothfish.

If you happen to follow dietary guidelines for servings of low-mercury fish, Chilean sea bass is an excellent choice.

What I like about both Allen Brothers and Omaha Steaks is they have traditional roots as classic butchers. These two meat companies have been in the industry for over 100 years.

But as a meat delivery service now, both companies fall short on quality standards and customer service- and I sadly cannot fully recommend either. Something that could be worth looking into is Omaha Steaks Retail Locations, where you can purchase in-store. Id go for the appetizers or desserts, with havent received the extent of complaints, and bypass the shipping and ordering process.   • The flesh of the fish should be bright white and firm. The flesh should also be smooth, without having already flaked .

Most of what we can find locally here in the tri-state area is all labeled Patagonian toothfish, versus Antarctic toothfish .

If you cant find sea bass , look for black cod, sometimes labeled sablefish or butterfish .

Pan Seared Chilean Sea Bass Always

There are plenty of options when cooking seafood: you can grill, steam, bake, or fry them all. But we love the texture and how simple it is to make pan seared Chilean sea bass.

Preheat a large skillet over medium-high heat. Pat the Chilean seabass dry with a paper towel, then season the fish generously with Kosher salt and black pepper on both sides.

Heat a tiny bit of a light, neutral oil or unsalted butter in a large skillet. When very hot, place fish skin side down in the pan. Cook for 4 minutes, then use a fish spatula to carefully flip over. Cook the second side an additional 4 minutes. Thats it!

Note: we always prefer fresh seafood, but if working with frozen, allow to completely thaw overnight in a fridge, then drain on paper towels to absorb any excess water. Frozen seafood likely will not get the same sear as a fresh piece of fish, but it will still taste delicious!

Whenever I can’t decide on what to do with a piece of fish, I usually opt for this easy and crowd-pleasing technique, which involves roasting seafood after it’s been slathered in a highly seasoned vinaigrette. And by crowd, I mean wife. It’s baked on top of a warm potato salad.

  • 2 tablespoons olive oil, plus more for drizzling
  • 2 tablespoons sherry vinegar
  • 1 teaspoon smoked paprika, plus more for topping
  • 1 teaspoon kosher salt, plus more to taste
  • ½ cup sliced green onions
  • 1 red jalapeno pepper, sliced
  • 4 small potatoes, quartered
  • 2 thick-cut boneless, skinless Chilean sea bass fillets
  • Preheat oven to 450 degrees F . Oil a baking dish.


  • Microwave potatoes in a microwave dish on High until just softened, about 5 minutes.

  • Step 3

    Whisk olive oil and sherry vinegar together in a bowl. Add smoked paprika and salt whisk to blend. Stir in onions, red jalapeno, and cooked potatoes. Slide the fish fillets into the mixture, turning and coating them with the vinaigrette. Remove the fish from potato mixture.

  • Step 4

    Place potatoes in prepared baking dish. Nestle fish onto potatoes. Sprinkle with a pinch of salt, a dash of paprika, and a drizzle of olive oil.

  • Step 5

    Bake in center of preheated oven until just cooked through and fish flakes easily, about 15 minutes.

This recipe is amazing! I’ve made it 3 times and everyone always loves it. Ask your fish mart to take the skin off. Makes it much easier. So rich and buttery. Enjoy!
