Tip : Consider The Weight Of The Steak Knife

Wusthof Classic 4.5 Inch Steak Knife Review and Information.

Another important factor you should take into account is the weight of the steak knife. Avoid choosing a knife that is too heavy as it will be cumbersome and difficult to operate. In addition, ensure you pick the steak knives youre considering to purchase and hold them in your hand for a while to have a good idea of their weight. Note that a heavy steak knife is not only difficult to cut through your meat, but it can also damage your plates when using it.

Is Wusthof Better Than Henckels

Two famous brand names that come across in the search of the best kitchen knives are Henckels and Wusthof. Some say Henckels knives are best while others stick to Wusthof. This creates a pool of confusion and makes hard to decide which knife is best in the market?

Hardness: While the hardness of Henckel Knives ranges between 56-57 Rockwell, Wusthof offers 58 Rockwell hardness. And more hard the steel, longer it will hold its sharpness. However, there is no great difference but still, Wusthof wins in terms of Rockwell hardness of knives.

Half-Bolster: Certain series of both of the brands feature a half bolster. The concept of the half bolster is to provide a maximum cutting area from the blade. Also, you can easily sharpen a blade that has no thick bolster all down the bottom of the knife.

Sharpen: Again, there is only a little difference between the sharpening angles of both the brands. Henckels sharpen their blade to 15 degrees both sides, whereas, Wusthof blades a bit narrower at 14-degree sharpening on both sides. Besides, Asian blades of Henckel and Wusthof such as Santoku and Nakiri sharpen at 10-degree per side. However, Henckel knives are easy to sharpen due to relatively less Rockwell hardness.

Best For Entertaining: Dubost Laguiole Natura Steak Knives Set Of 6

These ornate steak knives look like an heirloom passed down from Grandmaand maybe they will be one day. They have a classic, old-school design, with a gracefully curved handle made of polished plastic that has a slightly swirly, pearlized finish. The set includes three each of the two handle colors: Chocolate and Fudge . Adorned with the French cutlery maker’s iconic bee on top of the bolster where the blade meets the handle, these knives have an eclectic look that will dress up any dinner table.

As for their performance, the knife blades have a unique construction of tiny serration interspersed with larger cutout hollows. The hollows prevent juicy steaks from clinging to the blade, and the tiny serration created less tearing and drag than some of the longer-toothed blades we tried. The knives are very lightweight and had decent balance, and the handles were comfortable to hold, with the curve fitting nicely into the pinky-finger end of the hand. However, these delicate, narrow knives might be difficult to use for someone with larger hands.

The French brand Dubost Laguiole has stood the test of time it’s 100 years old and is a leader in the plastic-handled cutlery category.

Notes On Materials And Construction

Wusthof® Classic Ikon Steak Knives (Set of 4)

If youve spent more than a few minutes researching knives, youve likely run into a bewildering fog of jargon and technical specifications. Heres a quick guide, which applies to steak knives, chefs knives, and everything in between:

The phrase high-carbon steel is basically marketing hype: every steel alloy used to make knives is high-carbon. You can ignore the phrase it if its used, and you neednt worry if its not. Do note, however, that if a knife is listed only as high-carbon or carbon steel, it will easily rust. To be sure your knife is rust-resistant, make sure it is also listed as stainless.

Stainless steel is steel alloyed with at least 12 percent, and usually 14 to 18 percent, chromium. The chromium forms a dense layer on any exposed surface which rapidly oxidizes, preventing oxidation of the steel underneath. There are multiple types of stainless steel, some more corrosion-resistant than others all those used on our recommended knives are high-performing: extremely corrosion-resistant, capable of taking and holding a sharp edge and easy to re-sharpen.

There are thousands of different steel alloysmixtures of iron, carbon, and any of 20 or more other elementseach designed for a different purpose. Knife alloys alone run into the dozens, and the names are alphabet soup: AEB-L, VG-10, 19C27, ZDP-189. My advice is: ignore them all, at least for steak knives. Whatever alloy a good manufacturer chooses will perform perfectly well.

The 3 Major Types Of Steak Knives

Steak knives can be classified into three distinct classes according to their type of blade. The three major types of steak knives include:

  • Serrated Blade Steak Knives: These are steaks knives that have jagged edges. They require more effort to cut and they tend to leave ragged edge on the meat. The only advantage of the serrated steak knives is that they do not need to be sharpened.
  • Straight Edge Blade Steak Knives: Their cutting edge does not have serrations. These types of steak knives cut easily and leave a smooth edge on the meat. They however need to be sharpened frequently. The straight edge blade steak knives are the most commonly used types of steak knives.
  • Hollow Edge Blade Steak Knives: These types of steak knives are characterized by measured indentations along the blade. The indentations help to create air spaces that between the blade and the meat. These air spaces help to prevent meat from sticking on the blade and also allows for finer slices. Hollow-edge blade steak knives are not so common like the straight edge blade steak knives.

Budget Pick: Chicago Cutlerys Walnut Tradition Set

Chicago Cutlerys Walnut Tradition steak knife set is the best low-cost set out there. The knives are not perfect by any metric: the blade-edges are coarse and uneven at 60 grams/2 ounces, theyre a bit lighter than wed like and the fit-and-finish is indifferent. In fact, they appear just to be industrial-grade boning knives with steak knife handles slapped on. Put it this way: if the Messermeisters give you more than you pay for aesthetically, these give you exactly what you pay for, and not a penny more.

They work far better than the serrated blades you usually have to settle for at this price.

But theyre built to last and they work perfectly welland, more importantly, they work far better than the serrated blades you usually have to settle for at this price. Theyre a great choice for outfitting a crowd, taking along on country picnics, or while car camping. Not fancy, perfectly functional, and if you lose one, youll shed no tears.

    Why You Should Trust Us

Ive been cooking for myself and for crowds since I left high school between that and various stints in construction and landscaping, Ive come to appreciate well-made, well-designed hand toolsincluding knives. And having wasted money on crummy, expensive knives more than once when I was younger, I have a particular regard for knives that truly justify their price .

For my own needs and as a journalist, Ive researched deeply into knife-making materials, knife design, and knife performance over the years Mark Richmond, owner of Chef Knives to Go, has been particularly helpful on several occasions. Our 2015 guide, researched and written by Wirecutter deputy editor Christine Cyr Clisset, produced a wealth of information also incorporated here. Christine gathered reviews from Americas Test Kitchen , Saveur, and Serious Eats she learned about knife styles and materials from Dexter Ewing of BLADE magazine and Howard Nourieli of Bowery Kitchen Supplies and she spoke to Rick Gresh, then the executive chef at David Burke’s Primehouse in Chicago for practical advice on steak knife performance and care.

Finally, weve now tested 15 different steak knives on 16 pounds of beef in two real-world test sessions, involving a dozen Wirecutter staffers and friends. If theres a question about steak knives, however obscure, weve asked it and found the answer.

Tip : Pay Attention To The Tang

Tang refers to the distance that the blade extends into the handle. If you are purchasing a steak knife that is made of two different types of materials one for the blade and one material for the handle, you need to pay attention to the tang. There are two types of tangs: full tang and partial tang

  • Full Tang: A full tang blade has a blade that runs straight via the end of the handle. The blade is attached to the handle securely using metallic rivets. This is best construction as it ensures that your steak knife will stay in one piece. While a full tang is the best option, it usually comes with a higher price tag.
  • Partial Tang: With a partial tang, the blade only extends half way up the handle. Bonding materials, such as epoxy and fasteners are then used to secure the tang to the blade. The only shortcoming of a partial tang is that it does not last long. This is because, when pressure is applied to the blade, there are higher chances that the blade will bend and separate from the handle and eventually fall apart.

    Most Comfortable: Cutco Steak 4

Wüsthof Classic Ikon Steak Knives, Set of 4

Cutco knives have a loyal following, and for good reason: The company offers a lifetime guarantee on its knives and offers free lifetime sharpening services . When it comes to serrated knives, which can’t be sharpened with most traditional sharpeners, this is a great amenity.

The Cutco steak knives have a high-quality construction, with the resin handles riveted seamlessly onto the full-tang blades, and special, serrated edges that are designed so there’s a cutting surface in every direction, whether the knife is moving forwards, backwards, or straight down.

While they do tear the meat a little more than some of the other blades on this list, they do work well even on gristly pieces of meat, with just a little pressure and effort. These are some of the most comfortable knives we’ve tried: The polished resin handles have a unique shape that fits perfectly in the hand, wider in the middle with indentations at the thumb and pinky. It almost feels like they’ve been molded to fit the grip, and seems like it would be comfortable for both small and large hands.

How Often Should You Sharpen A Wusthof Knife

A sharp knife is a safe knife. The quality and Rockwell hardness will not require you to sharpen the Wustof knife frequently. Also, one should never sharpen a blade frequently as it scrapes off a thin layer of the metal. Instead, hone the edges that will help to keep the blade in shape without actually scrapping any metal off. And many of Wusthof knife set comes with a metal honing steel that lets you hone the blades easily. A well-honed knife will need less sharpening.

You can also use an electric sharpener or handheld sharpener for sharpening of Wusthof blades at home. Make sure to check the sharpening angle matches the angle of your knife for razor-cut sharpness. Depending upon how often the knives are used, they may only need to be sharpened once or twice a year. But if you do not know anything about sharpening then rather then risking the expensive knife send them off to Wusthof. They will take care of your precious knives and will charge near about $4/knife.

    Serrated Edge Steak Knives

Serrated edge steak knives come with a zigzag design to allow them to cut through meat with ease. The main advantage of a serrated edge steak knife is that it does not have to be sharped too often. The serrations come in a wide range of sizes and the larger the serrations, the less often it requires sharpening. Steak knives with smaller serrations usually have small spaces between the teeth, while those with larger serrations have large spaces between the teeth. Note that steak knives with smaller serrations also tend to become very dull quickly.

Although serrated edge steak knives do not have to be sharpened more frequently like the straight edged steak knives, they do not cut through meat as smoothly as the straight edged blades. This means youll have to apply more force while slicing meat using a serrated edged steak knife. It also means you will squeeze the juice out of the meat as you try to cut it, making you lose its real taste.

The Wusthof Classic line does not have a serrated edge version of their Steak knives. But if you intend on finding one, you should check out the Gourmet line which does feature them. One example is featured in the image above.

    Straight Edge Steak Knives

Wusthof Ikon 4.5 Inch Steak Knife Review and Information.

These steak knives come with a straight edge blade. They are commonly used by top restaurants and professional chefs as they tend to cut through meat with easy and they create a clean cut. Since a straight edge knife cuts smoothly, it allows the juice to stay inside the meat. This means you will be able to taste of your meat if you use a straight edged steak knife to slice it.

The only shortcoming of a straight edged steak is that it becomes dull too quickly. This is because as it cuts through the steak it comes into contact with the surface of the plate, making it more susceptible to dulling. That means you will need to sharpen your steak knife more frequently to ensure its optimal performance.
