It comes from the shoulder area of the cow and is a primal cut. Located under the shoulder blade, it is surprisingly tender for an overworked muscle like the shoulder.

Despite having similar names, these are completely different cuts. The flank steak is cut from the stomach muscles of the cow while the flat iron comes from the shoulder blade. Both are tender and rich in flavor though the flank steak is the leaner of the 2.

WHAT RECIPES WORK WELL WITH THIS CUT?

This is a very versatile cut being both tender in texture but also has a rich, beefy flavor and decent marbling. Broiling, grilling, smoking or cooking in a skillet on a stove top are all acceptable options. Remember that a very hot cooking surface is important when starting to cook. If your meat steaks, it isnt hot enough and give it another minute or 2. Also dont forget to rest your meat for half the cooking time if you want a tender steak. Evenly a perfectly cooked piece of protein will seem tough if not properly rested.

The Flavor Of Flat Iron Steak

Flat iron steak is popular because of its rich, deep beefy flavor. Its a savory steak that tends to have decent marbling, but it remains sufficiently lean. The shoulder that this steak comes from gets decent exercise. So you’re looking at well-exercised steak with just enough marbling to enrich the flavor. That gives it a flavor profile rather different from filet mignon, which tends to have very little marbling.

The texture of a flat iron steak depends on how it is butchered. For the most part, the steak is extremely tender and juicy, but there is a line of sinew that runs through the flat iron steak region. Some butchers leave the sinew intact, and you have to eat around it. Others, using the techniques developed by university researchers, cut out the sinew, producing a steak that is easy to eat and only has the rich, tender meat.

What Is A Good Price

It was definitely surprising to see the cost of a flat iron steak now. They are on par somewhat with top sirloin and Ribeye steaks. Kroger came in with the best price at $8.99 a pound. Trader Joe’s was all the way up to $12.99 a pound. I felt the Trader Joe’s price was too high. For a $1 more a pound you can get a grass fed Flat Iron steak at Whole Foods Market. I would choose the Whole Foods one over the Trader Joe’s steak.

Overall, I would have to give the win to Kroger as they had the best price. The Kroger Flat Iron Steaks comes to the store pre-packaged. Since Flat Iron steak are a little tricky to cut I typically find that they come into the store pre-packaged and not cut on site. So having a flat iron steak freshly cut in store is not something that is usually factored in. But if it was cut on site, you know you got a good butcher to go to.

One other quick thing to note is that I have not seen any flat iron steaks at Costco, so you won’t see them on this list.

How To Grill Flat Iron Steak

  • Be sure your flat iron steak is completely thawed.
  • Bring the meat to room temperature. Remove your steak from the refrigerator 30-40 minutes before grilling.
  • Season your flat iron steak as desired we recommend Kansas City Steak Original Steak Seasoning.
  • To cook on a charcoal grill, place steaks over the hottest part of the grill, and sear both sides for 1-2 minutes. Then move to medium, ash-covered coals and continue to grill for the times listed in the chart below. Turn about 1 minute prior to the halfway point.
  • To cook on a gas grill, preheat on high. Sear both sides for 1-2 minutes, then reduce to medium heat and continue to grill for the times listed in the chart below. Turn about 1 minute prior to the halfway point.
  • For the perfect medium-rare flat iron steak, grill 12-14 minutes for a 1½ inch steak, turning about 1 minute before the halfway point. A meat thermometer should read 130°F.
  • Rest your flat iron steak for 5 minutes before serving, covering lightly with foil. The temperature of the meat will continue to rise about 5°F during this time . The final temperature will read 135°F.
  • Resting steak is also important because the heat of cooking pulls the juices in the meat toward the surface if you slice into it immediately after cooking, those flavorful juices will end up on your plate, not in your steak. Allowing the steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful.

How To Make Herbed Basmati Rice

Kansas City (4) or (8) 6-oz Flat Iron Steaks on QVC

Heat the olive oil in a well-coated skillet over medium-high heat. Saute garlic in the pan, then add in the rice. Cook for 2 minutes or until lightly toasted. Add the broth and salt to the pan. Bring this to a boil, then reduce the heat and cover. Let simmer until the liquid is mostly absorbed, about 18 minutes. Remove from heat and stir in pine nuts, green onions, Parmesan cheese, pepper, thyme, and basil.

Serve with a sprinkle of the leftover green onions on top!

It is best cooked on a hot grill or hob in a sizzling hot pan but take note reader, do not use a griddle.

We want the meat to cook in its own fat from the marbling so that it retains all the flavor. A griddle drains the fat away from the meat, which means flavor and juiciness is compromised, and this is a meat crime no one should commit!

Here is our simple guide to cooking your Flat Iron steak:

  • Pat the steaks dry and bring to room temperature.
  • Heat your grill to maximum heat, anywhere from 450-600f grill dependent.
  • Season with oil and salt and place them onto the grill.

  • Remove from the grill, it will continue to cook for a few minutes after until a final 135F. Add a knob of butter and tent in tin foil to retain heat while resting.

    • Be sure your flat iron steak is completely thawed.

    Flat iron steak was initially part of the topmost section of the blade roast. The tough connective tissue running at the center of the blade roast led to the birth of flat iron steak.

    In brief, this is another one of those steaks whereby the name gives us no clue as to what it is or where it comes from on the steer.

    • Butlers steak, so-called in the UK as it was the cheaper cut of meat that in-house waiting staff, also known as butlers, would get if they were lucky.
    • Oyster Blade steak, as commonly referred to as in Australia and New Zealand. A cross between the standard cut it comes from and a reference to the fact it is found hidden within the shoulder blade and removed.

    If your butcher still isnt quite sure, just use the recognized butchers ID number to get the correct cut: IMPS/NAMP 1114D PSO 1, UPC 1166.
