Cooking New York Steak In An Oven

Cooking steak in an oven is a last resort and we really do not recommend this method. Steaks are meant to be cooked hot and fast. We only recommend using an oven with a New York strip if you have a large, thick cut. Liberally salt your room-temperature steak before putting it in the oven. You can also use a dry rub or a marinade at this point, provided the flavor is not too intense.

Preheat your oven and cast iron pan to 450F. Allow the pan 30 minutes to absorb the heat. Once to temp, place your steak on the pan. After several minutes, flip the steak to gain a crust on both sides. Use a temperature probe to monitor the internal temperature to your liking.

Once at temp, remove and let rest under foil for 5-8 minutes. Serve.

The Beauty Of Compound Butter

Compound butter sounds fussy, but its really just seasoned butter. You can make it in advance, and its a great way to season the steaks after theyve been sliced. Use the recipe below as a framework you should really use your favorite herbs and spices. If youre in a pinch for time, grab some cultured butter and use that instead.

How To Grill The Perfect Ny Strip Steak

Serves: 2 | Prep Time: 15 minutes | Cook Time: 5 Minutes

Ingredients2 tbsp compound butter

Step 1: Place the steaks and compound butter on the counter and allow them to come up to room temperature for about an hour.

Step 2: Light grill and set up for high direct heat. Youll want to get the coals as hot and as close to the cooking grate as possible. If using a gas grill, allow the grill to preheat with the lid closed for at least 15 minutes.

Step 3: Evenly coat strip steaks with olive oil and season them liberally with coarse sea salt. Put two pats of compound butter on each plate and set aside.

*Tip I dont recommend putting pepper on at this point as the extreme heat will burn it, producing a bitter flavor. I also dont recommend using a premixed rub as many of them contain sugar which will also burn. Trust me on this one, just use the salt and let the meat shine through.

Step 4: Place steaks directly over hot coals and flip every 20 seconds. With each flip, place the steaks in a different spot on the grill grate. This allows the best searing to take place through conductive heat. The steaks below have been on the grill for about 2.5 minutes total, and you can already see that nice crust forming.

Step 5: After about five minutes of total cook time, use a reliable quick read meat thermometer to check the internal temperature of the steak. Remove steaks from the grill when the internal temperature reaches 115° F for a medium rare steak.

How To Cook New York Strip Steak

You can always use the Reverse Sear method for New York strip steaks , but that process takes quite a bit of time and effort. Sometimes the best things in life are simple and allow the flavor of the beef itself to shine through. I think the best way to cook a NY strip steak is with salt, pepper, a little butter, and a screaming hot grill.

Heres my method for cooking New York strip steak:

  • Season the steak. When you are 30 minutes out from grilling your steaks, remove them from the fridge, season both sides with kosher or coarse salt, and allow them to come up in temperature.
  • Preheat your grill. Preheat your preferred grill to High heat, aiming for around 900 degrees F on the grates.
  • Prep the butter. Combine all ingredients for the compound butter in a small bowl and spoon butter directly on the serving platter underneath where the steak will be placed.
  • Grill those strip steaks! Place the steaks directly on the grill grates on a diagonal. For med rare: cook 2-3 minutes then rotate 45 degrees and grill another 2-3 minutes. Flip the steaks and repeat on the other side. Grill for more or less time depending on your preferred doneness.
  • Remove from heat and rest. Remove the steaks from the grill and place them on the buttered serving platter. Allow them to rest for 8-10 minutes.
  • Slice and serve. Slice the steaks and sprinkle with black pepper just before serving.
