Filet mignon is the gold standard in steaks, but when you consider the small amount that can be produced per cow, you realize that the short supply of this tender meat creates a greater demand, and thus a higher price. Tender cuts of steak, which include the filet mignon, make-up just 8 percent of the meat on a cow.

Is A Tomahawk Steak Worth The Money

From a financial standpoint the Tomahawk is the biggest waste of money in the world of steak. This is a tricky cut to find and you will pay a premium when you find it.

The steak I cooked for this Reverse Seared Tomahawk Steak recipe weighed 3.5 pounds and, at a price of $16 per pound, cost me almost $60.

When you do the obvious math it gets even worse.

The bone in my 3.5 pound steak weighed about a pound which meant that I only got about 2.5 pounds of meat on the Tomahawk. This means that I was paying closer to $22 per pound of meat which is almost twice the cost of a regular ribeye.

The absolute only reason you should ever grill a Tomahawk steak is if you want to put on an awesome display. If you are just looking for a great steak to feed your family and friends then stick with regular ribeyes.

You can cook a tomahawk steak just like a normal one, the most important factor is to make sure its well tempered so youre getting the inside up to temp fast enough before the outside burns. Its much better to get the inside right up to medium rare so you can sear without worrying. There are a bunch of ways of doing that, here are my favorites.

A Tomahawk Steak is really just a bone-in Ribeye, taken from the rib section of the steer.

Hybrid Grilling Your Tomahawk Steak

Another good option is to follow the steps above for the low and slow section, and then finish the steak off in a hot pan.

This is a good option if youre grill or smoker is set up for low and slow and you dont want to reconfigure it for searing.

  • Set up your grill, as above, using the two-zone grilling method.
  • Once the steak reaches a temperature that is about 15-20 degrees away from your desired level of doneness, remove it from the heat and set it to one side.
  • Heat up a cast-iron skillet until it is smoking hot. If your grill has a side burner, its best to do this outside, so you dont set off all the smoke alarms.
  • Put your steak direct into the pan to get that all-important Maillard reaction and turn them regularly to avoid scorching the surface.
  • Once your steak is about 5 degrees away from done, remove it from the grill and set it aside to on a wire rack with a plate underneath to rest for around 5-10 minutes.
  • Just before serving, heat up the juices in the pan with those on the plate until smoking hot and then drizzle over the steaks for the extra burst of flavor.

    • Season the steak liberally with salt and pepper
    • Allow to steak to rest, covered, at room temperature for one hour.
    • Prepare your grill for low, indirect heat
    • Place the steak on the cool, indirect side of the grill and cook for one hour.
    • Flip the steak and cook for another 30 minutes or until an internal temperature of 125F is reached.
    • Remove the steak from the grill and raise the temperature of the grill to High.
    • Sear the steak for 2 minutes per side over direct high heat until an internal temperature of 130-135F is reached.
    • Remove the steak from the grill, slice and then baste with melted butter.

    The tomahawk is an impressively large bone in ribeye steak, big enough to feed two or three people. The tomahawk chop is kept on the rib bone and usually weighs between 30 – 45 ounces.

    These steaks come from the outside muscles of the steers rib cage and are essentially ribeye beef steak.

    The difference being, the tomahawk ribeye is specifically cut with 5 inches of bone left intact .

    Using the frenching technique, which shapes the bone, connective tissue, and fat to resemble a handle, this extra-long bone uses the same culinary techniques that shape a rack of lamb.

    Since this juicy steak cut is similar to a ribeye cap, the meat usually has good marbling and is tender.

    Youll have to do a little research on places near you where you can purchase this bad boy. Your local butcher may have them in stock, or it may be possible for you to put in an order for one.

    On a quality steak, youll be looking to pay around $100. If you want to be real about it, $50 $80 of that will be going on the considerably long bone handle.
