How To Make Bavette Steak Tender

Prepare The Barbecue Grill
The cooking surface must be clean and oiled so your steaks will have good contact with the grill without sticking. Prepare the grill while its finishing heating up.
The easiest way to oil the cooking grate is with an oil-soaked paper towel and the metal brush used to clean the grill. Fold a paper towel in half until it is the size of your grill cleaning brush. Soak it with oil that has a high smoke point, like canola or grapeseed oil. Brush this over the cooking grates evenly. It will smoke some, but enough oil will remain on the grates as long as you dont let the grill sit at its highest temperature for too long before grilling.

There are two ways that I use to make a steak tender. Acidic tenderizers are a great way to get a tender steak. I include lemon juice in my marinade to help to soften the steak. it breaks down the tough fibers in the meat. If you are starting out with an already tough cut of meat, I will also break down the fibers by pounding the meat before I cook it.

What Do We Need
- Let’s start with the steak of course. I recommend a good quality thick ribeye or sirloin steak with some fat running through it.
- Ribeye tends to have a chunk of fat in the middle and some smaller veins of fat .
- Sirloin just tends to just have the smaller veins of fat.
- We’re going to concentrate on those cuts, but I’ve also got a note on cooking fillet steak in the notes section of the recipe card.
