Well, this is a very circumstantial matter and also personal. Although the general amount of dry rub usage is one tablespoon per one pound of meat, you actually do not have to work it that way.

This amount can evidently change if you plan to go on a second coating round. Thus, if you are new to dry rubbing grilled steak, you can simply start with one tablespoon for one pound and then change it according to your taste.

Id like to introduce you to your new favorite Steak Rub.

Ive grilled up my fair share of steaks this summer and while a great piece of steak really does not require more than a little salt and pepper, its always nice to impart a different flavor once in a while.

The combination of spices in this rub is spot on! And there is a secret ingredient that totally takes it to another level. Wanna know what it is?

A dry rub does not penetrate the meat. Instead it will form a beautiful tasty crust on the steak. That comes from the caramelization of the sugar in the dry rub. This locks in the juices of the steak as it sears.

Paprika Vs Smoked Paprika Seasoning

There are actually ALOT of paprika varieties! Spanish paprika has three types, Hungarian paprika has eight types, and then there’s sweet, hot and smoked paprika varieties that are found in most retail grocery stores.

The standard paprika is made up from peppers of the capsicum family, usually tomato peppers which are a bell pepper or sweet pepper variety. Hot paprika is made with the same pepper varieties, but with a hot pepper variety like chili peppers or cayenne peppers mixed in.

Smoked paprika is made from chili peppers that are oak smoked first. The smoked chilies are then crushed to make smoked paprika.

The flavor profile that smoked paprika brings is almost like being able to add liquid smoke to your seasoning mix. Smoked paprika is a wonderful addition to nearly any hearty, savory dish!

The flavor is distinctly different than regular paprika, although paprika will work in this steak seasoning mix in the same quantity.

How Long Before Cooking Should You Season A Steak

If I have the time, I like to rub seasoning onto my steak a few hours before I cook it, so that the flavors have time to penetrate the meat. If you dont have the time to wait, its also fine to season the steak right before you cook it. I recommend massaging the seasoning into the steak so that the spices really stick to the meat. If you choose to season your steak in advance, you can let it sit in the refrigerator for up to 8 hours before you plan to cook it.

I always have this steak seasoning on hand its the perfect versatile spice blend to add flavor to almost any type of meat!

What Spices Go Well With Steak

The most common flavoring agents for steak are salt and pepper. While theres nothing wrong with this simple preparation, I find that a blend of herbs and spices really complements the natural flavor of the meat. I recommend using a mix that includes any of the following seasonings.

  • Garlic Powder
  • Cumin

Choosing Your Cut Of Steak

My favorite cut is either a ribeye or a strip steak. The ribeye is fattier, the strip is a bit leaner.

Before we proceed, a word about the steak. Fat is FLAVOR. Most people would agree that for this purpose, the ribeye rules. It is nicely marbled, meaning there are little lines of fat running throughout the meat. This will ensure a juicy steak, provided you dont overcook it.

Now that weve covered the basics, lets get on with it. It is best to start with room temperature meat. It will cook more evenly, so take the steaks out of the refrigerator about 30 minutes before you plan to cook them.

Start with bone-in steaks, approximately 1 to 1 1/2 in. thick. Pat steaks dry with paper towel, rub on both sides with steak seasoning. Cook over medium-high heat until desired doneness.

For me, that is 7 8 minutes per side if the steak is 1 1/2 in. thick which is medium-rare. Do not stick it with a fork and please dont slice into it while its on the flame.

Use a thermometer to be sure that your steak is cooked to perfection. This meat thermometer is the exact one that I own. It works like a charm and you dont have to babysit the grill.

Once it is cooked, take the steak off of the heat and let steak rest for a few minutes before serving. This is so important, that Ill say it again. Let the steak rest before cutting into it.

What Is The Difference Between Dry Rub And Seasoning

A steak rub is like a seasoning, but with larger pieces of dried herbs and spices. Rubs are usually coarser than seasonings and are applied much more liberally. For best results, brush the steak with cooking oil before adding the rub and spread the rub on a clean plate and place the steak on the plate.

    I dont usually measure this out because every steak is different in size. But, Ive found that to make the best steak recipe, you need to make sure that both sides of the steak have a good coating of the steak rub.

    Ive also learned that if you allow the steak to sit for 30 minutes at room temperature with the homemade steak seasoning on it, you will get a juicy, tender steak that is incredibly flavorful.

    • In a bowl, add brown sugar with garlic, chili powder, thyme, salt, pepper and smoked paprika.

    • Mix with a fork before using. Brown sugar may clump a bit, but a fork will break it up easily.

    How To Season Steak

    The best way to season a steak depends a little bit on the type of steak you are grilling, as well as the level of seasoning you like on your meat. With a thicker cut of steak you can be pretty liberal with this seasoning and thoroughly cover the surface of the meat. That way, the seasoning really carries through each bite. In the video below, I was cooking a fairly thick tri-tip and you can see how much seasoning I used to cover the outside of the meat.

    Remember, you can always add seasoning easier than you can remove it. Start with a light hand and dont sprinkle too heavily at the beginning. I also recommend pressing the seasoning into the meat with the palm of your hand. This helps the seasoning adhere and you dont lose as much when youre moving it around on the grill. Avoid rubbing the seasoning in, as it tends to clump up and youll have strong bites of pepper or herbs instead of it being evenly distributed.

    The application of rubs is very easy.

    Simply mix the ingredients, pat beef dry, and then rub all over your favorite piece of beef. Use two tablespoons of rub for every pound of beef. Then, let the beef soak up the flavors.

    You can either put the beef in a Ziploc bag, or wrap it in plastic and place it in the refrigerator.

    The longer you let the beef soak, the more flavors you will notice when you eat it.

    Were not very scientific on timing it, but usually, we try and put on rubs anywhere from 30 minutes to 3 hours before we cook the beef.

    What Is The Difference Between Steak Seasoning And Steak Rub

    Herbs and spices, large enough for seasoning, are mixed with dried herbs in a steak rub. More salt is applied coarserly during the procedure as compared to seasoned foods. To get the best results, brush steak steaks with cooking oil before adding it and then spread a clean plate with rub. Place steak on the plate and sprinkle the salt and pepper on it with a fork.

    How Long Do You Leave Dry Rub On Steak

    An experiment of flavors will yield most results when left to their own devices. Dry rubs must be left on steak, chicken, turkeys, and hogs for several days. Allow the BBQ rub to rest for between 15 minutes and 2 hours at most prior to cooking, and up to several hours afterward depending on how long you want it to do so.

    Can You Leave A Dry Rub On Steak Overnight

    A dry rub can stay on steak overnight. If you intend to keep it, you will have to cover it appropriately and pop it in the normal section of your refrigerator. This will allow the meat to suck up all the essences from the spices, herbs, and other flavorings used in the rub.

    In addition, if you are too sensitive to robust flavors, we recommend leaving the steak to season for about 40 minutes to 2 hours instead of keeping it a night long. However, you should not keep it for more than 12 hours as you only need your steak to season, not to cure!

    • Start out with a room temperature steak, if possible. I like to allow about 1 hour for my steaks to come to room temperature. But at a minimum try to set your steaks out for at least 30 minutes.
    • The steaks will cook faster and more evenly if you are not having to heat up a cold steak!
    • Don’t season your steak until you’re almost ready to cook it! A steak should be salted and cooked within three minutes of seasoning with salt, and preferably immediately after adding the seasoning .
    • The best way to season steak is to start out with less seasoning, and add more as needed. It’s really hard to remove seasoning if you find that you’ve been a bit heavy handed and overdone it!
    • Sprinkle seasoning over both sides of the steak, and use your fingertips to apply pressure the seasoning so it adheres to the steak surface. You can also place some seasoning on your tray or plate, then coat the sides of the steak. This is a wonderful addition to your fatty sections left on the sides of a steak, too!
    • Once seasoned, transfer to a heated grill or pan and cook to your desired level of doneness.
