Homemade Montreal Steak Spice Less Expensive Plus You Control The Salt Level A Recipe For One Of The Most Popular Seasoning Blends In Canada That You Can Easily Make At Home
Homemade Montreal Steak Spice. Far less expensive and you control the salt level.
Originally published May 2017.
Montreal Steak Spice is an iconic seasoning here in Canada and has been used on backyard grilled steaks across the country for decades. Its origin comes from its namesake French Canadian city.
It is said the first versions were blends of the actual spice blend used on Montreal smoked meat. The citys ancient delis are renowned for this specialty..
Wikipediacredits the original follows: The Montreal deli Schwartzs is credited with the creation of Montreal steak seasoning. The story of its creation is that, during the 1940s and 1950s, a Schwartzs broilerman by the name of Morris The Shadow Sherman began adding the delis smoked meat pickling spices to his own rib and liver steaks.
Soon the customers began asking for the same. Due to its popularity, it eventually became a norm in Montreal delis and steakhouses, such as the nearby Moishes Steakhouse and the Main Deli Steak House, to spice their steaks similarly.

- Dried dill
- Crushed red pepper flakes
It takes just minutes to make and sealed well, it will last for months in your pantry!

How Long To Season Steak
This answer depends on when you plan on cooking your steak, and also the method, but essentially you have two options:
- Cook the steak right after seasoning OR
- Let the seasoning sit on the steaks for at least 40 minutes, up to 24 hours
If youd like to read up more on the science behind this, check out this article, but the quick version is that between 3-40 minutes, the salt from the seasoning draws out moisture from the steak, then starts breaking down the fibers, before it is eventually reabsorbed after around 40 minutes. The in-between phase is what you want to avoid, so that you dont end up with tough or dry steaks.
The method you use to cook the steak actually has an impact on when to season steak, too:
- If you are using the reverse sear steak method, youll want to season the steak and let it dry brine in the fridge at least overnight, to allow the outside to dry out, so that it gets that perfect browned crust when you sear it.
- If you are making simple sirloin steak in the oven , this matters less, and cooking steak right after seasoning is just fine.
- If you are making a tougher cut of meat, like flank steak, I find that a steak marinade works best.
Montreal Steak Spice The Case For Making Your Own
Montreal Steak Spice spread across the country, and is widely available on store shelves from several national brands. As with many bottled seasonings, the cost increases dramatically once the ingredients are blended and packaged.
It is a far more economical practice to make your own and, I think, far more flavourful too.
Another issue with seasonings like Montreal Steak Spice is the amount of salt used in the blend. Because salt is a cheap filler ingredient, I think the default action of brands is to use rather a lot.

Look at the composition of Montreal Steak spice in one of the small bottles in the spice aisle at your supermarket and you can see that the coarse salt granules are very prevalent in the mix.
In some blends Ive seen, it looks to me that it could comprise as much as half. For me that is far too much. I also prefer a smaller grained salt in my blend.
After doing some research and looking at the composition of other recipes online plus a little experimenting, I came up with my own blend that I think works very well.
For me the salt in this blend is adequate to season a steak well and adds a lot more flavour than the standard off-the-shelf brands.

Why Homemade Seasonings
While marinating has its place in cooking beef, many of the tender-cut steaks do not require it. Although rubs and seasonings do not tenderize meat, you can accomplish a great combination of different flavors with them. Grocery stores usually dedicate entire sections to steak seasoning.
Homemade seasonings, like anything else crafted in your own kitchen, are often superior to what you will find at the grocer. Made with fresh spices, they lend pizazz to steaks as well as pork, fish, and chicken. Even if you marinade a chuck steak, you can coat a homemade seasoning on top to create an herbal crust or simply add dimension to the taste.
There are several advantages to making your own steak seasoning.
- Amount of ingredients – You can vary amounts of certain spices based on taste and health concerns, for example, you can lower the amount of salt.
- What is in it? – You can substitute spices.
- Awareness – If you make your own seasoning, you know exactly what you are consuming. You know there are no MSGs, artificial ingredients, or preservatives.
- Tastes are more potent – You have control over freshness and knowledge of how long a seasoning has been on your shelf.

Additional Effects Of High Sodium Intake
The body is naturally so very impressive, for when it notices an imbalance, it tries to correct it on its own unfortunately, that can lead to other conditions if it spends a long time trying to fix the imbalance. This is the case with chronic kidney disease and osteoporosis.
The first response the body has is the excrete out the excess sodium, but that puts a lot of pressure on the kidneys as they have to filter the blood which is coming in very fast and at a very high pressure.
This extra strain on the kidney may cause fatigue and damage to the kidneys which cand eventually lead to chronic kidney disease.
When the body maintains high levels of salt, one of the responses to try to correct this is by releasing calcium from the bones. Since most of our bodies stop storing calcium after we turn 23, the constant loss without replacement leads to weak and brittle bones.
If this continues over a long period of time, it can develop into a condition called osteoporosis where even just a small fall can result in several broken or fractured bones.
So you see, even if you havent been given a specific guideline or diagnosis to reduce sodium, its good for everyone to be aware of their intake and choose lower sodium options such as our super simple seasoning!
This is not only great on steaks but any kind of meat item you may be preparing as well as roasted veggies.

Combine the peppercorns with all the other seasonings listed above. Mix well in a bowl. Then, using a funnel pour into a mason jar. Label the jar, and store in a dark dry place for up to 3 months. Use as directed in recipes or pat onto steaks before grilling.
How Much Seasoning Do I Put On Steak
Season your steak with about ¾ 1 teaspoon of salt per pound, applying on both sides. Since you obviously cannot salt to taste, its sometimes hard to know how much salt is enough. Many chefs recommend this benchmark as a good guide for pre-seasoning meat. Salt your steak at least 40 minutes before you cook it.

When Should I Season My Steak
Moral of the story: If youve got the time, salt your meat for at least 40 minutes and up to overnight before cooking. If you havent got 40 minutes, its better to season immediately before cooking. Cooking the steak anywhere between three and 40 minutes after salting is the worst way to do it.

This Is Whats Wrong With Commercial Montreal Steak Seasoning
You may have seen it on grocery store shelves. There are many varieties of Montreal steak seasoning available. Small hand-crafted versions as well as mass produced spice blends vie for shelf space.
After my introduction to the seasoning, I began stocking it in my pantry and using it on many meat dishes. However, over time, I couldnt keep overlooking a major problem. It was far too salty.
In my experience, all the commercially produced Montreal steak seasonings are too salty. And I like salt. But McCormicks Montreal steak seasoning recipe adds too much salt. And McCormicks was the brand I used the most.
I also suspected that it was so salty to hide the taste of old spices that had become bland.
My version of the Montreal steak seasoning recipe attempted to eliminate the problem of bland spices combined with too much salt.

Montreal Steak Seasoning: Tips & Tricks
Heres a few extra tricks to make your seasoning just a little more special.
- Yield: Recipe makes roughly 1 cup.
- Strong Smell: Beware that once you toast and blend the peppercorns its going to give an intense smell of pepper. Try to keep your face away from the blender when you initially open the lid. Trust me, youll be sneezing for a minute straight!
- Label & Storage: I find that I like to store my seasoning in a glass jar. I also use paper washi tape to write on using a permanent marker, and stick on the mason jar. It is a removable tape that wont be forever stuck on your jar making it ideal for spice mixes that are store in glass jars.
- Additions: Theres no one true Montreal steak seasoning recipe. Everyone puts their own twist on it, it seems! If youre looking for inspiration, try adding
- Cayenne: For a true spicy kick.
