How To Prepare Steak For Grilling

Preparing steak for grilling is easy and only takes a few minutes. Follow these steps:

  • Season the meat. For thick steaks, season each side of the steak with ½ teaspoon kosher salt or ¼ teaspoon table salt per pound of steak, then refrigerate it for 1-2 hours. The salt acts as a brine to help tenderize the meat and keep it juicy while it cooks. You can also use a spice rub, but a high-quality cut of steak has enough flavor on its own and often doesnt need a spice rub. For thin steaks, you can use a marinade instead.
  • GRILL SPOT TIP:

  • Remove the steaks from the fridge about 30 minutes before you plan to grill. This gives them time to lose the chill from the fridge, which helps you get a better sear and ensures your steak will cook evenly.
  • Pat each steak dry with a paper towel for the best browning and flavordry steaks will sear more effectively. Re-season with salt and freshly ground pepper and your steaks are ready to grill.
  • How To Grill Filet Mignon

Widely considered the most tender piece of steak, filet mignon has a fine-grained texture that melts in your mouth when cooked. Filet mignon doesn’t have much fat, so it’s important not to overcook it. Chef Frothingham likes cooking a filet in a cast iron skillet on the grill. A simple sauce of butter, rosemary, and garlic is a perfect pairing.

  • Preheat the grill .
  • Season the steak generously with salt and pepper before grilling.
  • Add a little high-heat cooking oil to the skillet.
  • Cook the filet mignon for about four to five minutes on each side, or until it reaches your desired doneness. Chef Frothingham prefers an internal temperature of 120 degrees.
  • Let the steak rest before slicing and serving.

    Thicker Steaks Should Slide Over

Most steaks grill beautifully over direct high heat alone. The only time you might need to move them is if/when they cause flare-ups. However, some steaks are so thick that if you left them over direct heat alone, they would burn on the outside before they reached the internal doneness you like.

If your steaks are much thicker than an inch, consider the sear and slide approach. After you have seared both sides nicely over direct high heat, slide the steaks to a part of the grill that is not so hot, perhaps over indirect heat, and finish cooking them safely there.

There is a technique called sous vide cooking where you immerse steak in warm water to cook it to a desired temperature, then finish cooking it on the grill. But the water temperature is kept closer to 130 degrees Fahrenheit, never as high as the boiling point of 212 degrees.

Grilling steak on a charcoal grill is a great way to get a delicious, juicy steak. Depending on the size and thickness of the steak, the cooking time can vary. Generally, if you are grilling a steak that is 1 to 1.5 inches thick, you should plan on grilling it for 8-10 minutes per side. If the steak is thicker than 1.5 inches, you may need to increase the grilling time to 12-15 minutes per side. Remember to always check the internal temperature of your steak with a meat thermometer to make sure it is cooked to the desired doneness.

The rule states that one inch thick steaks should be measured. Most grocery stores sell steaks smaller than one-half inch in diameter. The temperature of the grill is the most important variable to measure. If the grill temperature is too low, the time should be increased. As a result of the amount of time that has passed before you remove your hand from the grill, you will be able to calculate its temperature. If you only hold your hand there for a few seconds or less, you may become too hot. The best natural gas grills can also be used with this method, but charcoal grills are best suited to this method.

    Choose Your Grade Of Meat

    Char

Lets start with the grades of meat. There is Select, Choice, and Prime.

    • Select is usually the grade of sale-priced, or advertised meat. Its considered basic level meat by the USDA, there is not a lot of marbling.
    • Choice grade, will have a Choice sticker on it signifying the grade, is just above Select. It has moderate marbling and considered great meat by most, if youre on a budget Id recommend starting there so you still get good meat.
    • Prime grade. The last and best grade of meat in my opinion is Prime. It is the highest quality meat by the USDA and has abundant marbling. Trust me, it will always be worth it to pay the extra money per pound for the Prime grade.

Dont Use Lighter Fluid Or Charcoal Briquettes If You Can Avoid It

According to Prentiss, Always avoid lighter fluid if possible, and while convenient, charcoal briquettes can add an unpleasant kerosene flavor to grilled meats and should be avoided. If a wood/natural lump charcoal fire is unavailable or too inconvenient, propane grills will ultimately yield a better steak than charcoal briquettes and lighter fluid.”

The best way to go, however, is hardwood or hardwood lump charcoal. “Natural solid fuels add the most flavor to steaks, complementing their natural flavors instead of overpowering them,” says Prentiss. “At P+P we seasoned oak logs and a hardwood lump charcoal made from mesquite. This yields a consistent fire with minimal smoke that burns around 800 degrees Fahrenheit.”

What’s The Best Cut For Grilling

While personal preference is certainly a big factor when choosing the right cut, steaks with significant fat marbling are always going to be preferable for grilling because when it comes to steak, fat equals flavor.

You’ll also want to pay attention to the thickness of the steak. Thicker steaks about 1 ½ to 2 inches are the best choice for beginners because they’re harder to overcook. Thick, well-marbled cuts recommended for grilling include ribeye, strip , and filet mignon .

Cheaper cuts like skirt and hanger steaks are also good for grilling, but there’s more room for error with these, as they are thinner cuts. For best results, marinate overnight and use a meat tenderizer to break down the muscle fibers.

    Prepare The Barbecue Grill

How to Grill the Perfect Steak

The cooking surface must be clean and oiled so your steaks will have good contact with the grill without sticking. Prepare the grill while its finishing heating up.

The easiest way to oil the cooking grate is with an oil-soaked paper towel and the metal brush used to clean the grill. Fold a paper towel in half until it is the size of your grill cleaning brush. Soak it with oil that has a high smoke point, like canola or grapeseed oil. Brush this over the cooking grates evenly. It will smoke some, but enough oil will remain on the grates as long as you dont let the grill sit at its highest temperature for too long before grilling.
