What Is The Best Meat To Grind For Hamburgers

  • Chuck steak. Chuck is the most commonly used cut of beef in burger blends. Marbled throughout and well-balanced in flavor with a decent lean-to-fat ratio, chuck steak is generally the primary cut used in burger blends and is supplemented with one or two other cuts of meat.
  • Sirloin or Tri-Tip. Sirloin is a relatively lean cut of steak, but has a good amount of flavor. You will need to supplement sirloin with another cut of meat that has a higher fat content, such as chuck, brisket, or short rib.
  • Round. Round is extremely lean and very cheap. If you are looking to adjust your protein-to-fat ratio or lean out your burger, round is a great choice.
  • Brisket. With a distinct beefy flavor and high fat content, adding brisket to your burger will yield a beautifully rich burger.
  • Boneless Short Rib. With a high fat content and rich flavor, adding short rib to your burger blend will produce an incredibly moist burger.
  • Plate . A tougher cut of beef with a tart and tangy flavor, this cut is a good choice if you feel like getting a little fancy with your burger.

/20 Ground Chuck Is Best For Burgers

The best ground beef to buy for burgers is 80/20ground chuck 80% lean meat and 20% fat. Ground chuck is ground from the shoulder and has that ideal lean-to-fat ratio of 80/20 for a super flavorful, juicy burger.

Ground round comes from the back of the cow, near the tail, upper leg, and rump. At 85/15 it’s considered an extra lean ground beef and isnt quite as flavorful as chuck, but it’s a solid second choice for hamburgers.

Ground sirloin is cut from the back section of the cow. Its labeled 90/10 and is a more expensive cut of beef than round or chuck. It has a full beefy flavor but is too lean to use for hamburgers at least, if a juicy hamburger is your goal!

PRO TIP: Get the fat of chuck and the flavor of sirloin by mixing the two together for an 83/17 mix!

What Is A Steak Burger

The steak burger is also known as a steakhouse burger, mainly because you can find them easily in steakhouses, often in several different recipes. As the name suggests, this burger is a cross between a beef burger and a steak. Rather than using a beef patty for the burger, chefs use a steak patty for the meat.

Chefs prepare the juicy steak burger in several ways, much like a hamburger. Go old school with ketchup or mustard, lettuce, tomato, onion, and cheese. Or, try some bolder toppings, like jalapenos, bacon, fried onions, and even other meats. The sky is the limit when it comes to this type of burger.

Making The Perfect Burger Starts With Picking The Right Blend Of Beef And That Doesnt Always Mean The One With The Highest Fat Content

Ever since we started cooking outdoors, man has been on the hunt for the perfect burger. In our search, we quickly realized many tricks and tips on forming and cooking beef patties. We also solved most of the common grilling mistakes and that helped even more. But lets be honest, even following all that advice cant help you if you start off on the wrong foot. If youre truly serious about your quest for the elusive Perfect Burger, then we need to have a frank discussion about beef.

Ill be the first to admit there is a lot of conflicting recommendations when it comes to selecting the best beef. Some will tell you to buy the best steaks you can find and grind them up. Others swear by a 70% lean to 30% fat ration. Its enough to make you quit long before you even get started. Some advice I agree with wholeheartedly and some I wish I could scrub from the internet. Im not sure if what I believe is truly the best, but this is what Ive found works the best for me.

The Best Ways To Cook Steakburgers

Whats the best way to cook steak burgers? There are actually a few ways that you can cook these burgers and bring out their best flavors. Make sure you season your patties as needed first, and then try these methods:

  • Oven. Cook your patties on a non-stick baking sheet in a preheated 375-degrees oven. Cook between four to six minutes on each side, depending on your desired level of doneness. Optionally, you can sear your burgers in a pan on the stove before putting them in the oven.
  • Grill. Since steak burgers dont have a lot of fat content, grilling is a safe way to cook them if youre looking for a smokier flavor. Place your burgers on the high-heat part of your grill for two to three minutes for each side. Then, move them to the low-heat part of the grill for an additional two to six minutes to reach your desired level of doneness.
  • Pan. Its usually best to use a cast iron skillet if youre cooking your patties on the stove. Brush your patties with a small amount of oil and allow to cook over medium-high heat for about three minutes on each side, or a bit more for extra doneness.

In my opinion, best burgers are at Bingo or Alfies. Love Pizza Bobs. I love the steak at LG Smith Steakhouse. Not sure about your other questions. Have fun!

Best Burger is at The local Store, try the Chabata burger. For Pizza we go to Casa Tua. El Goucho has been doing steak on the island for a long time and they have always done a good job.

Enjoy!

For steak we enjoy El Gaucho, Yemanja and Tango Argentine Grill.

Can’t help on the others but I’m sure plenty of other posters will chime in.

We love the Bingo burgers, too, and had *ss-kicking filet mignon there on Saturday night. Great price, too.

I agree with Andrea on the Local Store for burgers, try the wings too. Also agree with Casa Tua for pizza. I have only had steak at Tango, mostly because I get a lot of fresh fish when I am down there.

As for the Bloodys, try Scotts Brats. They have a Bloody Mary bar.

Burgers- The Divi Burger at the Divi Bar located at the Ritz. Best pizza- I would say Casa Tua gets my vote. As far as the best steak- BLT Steak. That said, the burger at the local store was probably almost half the price and solid…the burger at Salt N Pepper is also excellent.

I am rarely a steak eater.

But when I do it is the Gianni Versacci at Madame Janettes

Worst: Large Chili Cheese Fries

Making the best burgers at home

Although the genuine chili is a better-for-you menu item, it becomes less so when layered with French fries and cheese. The large chili cheese fries have greater amounts of calories, saturated fat, and sodium than the steakburgers.

“The amount of sodium at 2,990 milligrams is appalling!” Pine said. “That’s the equivalent of eating 17 servings of Lay’s, or about 255 potato chips!”

What Beef To Use For Your Burger Patties

Stanbroke 2 years ago

When barbecue season comes knocking it is no surprise that you are suddenly craving a good burger. While you can opt to eat out, or buy pre-made patties, why not up your burger game by making your own?

You have two options when it comes to making your own burger patties. The most simple way involves heading to your local butcher and buying some high quality ground meat, or alternatively you can buy your cuts of choice and mince your own beef.

Grinding your own beef will allow for full control when it comes to balancing out your burger. Youll know where your beef is coming from and youll be able to control the fat content and beef cuts used.

However, buying pre-ground meat from your local butcher will take the pressure off, and will leave your feed stress free.

Whether youre choosing to grind your own or you go for pre-ground meat, the objectives remain the same when it comes to a good burger patty: you want superior texture, flavour and just the right amount of fat.

Steakburger With Herb Butter

Herb butter compliments regular steak so well that you cant not try it on a steakburger! A recipe like this is also open to interpretation, so feel free to add your favorite herbs to the butter, which youll spread onto both sides of the bun. You can also spread a little on the tops of the buns and bake them for a few minutes to crisp them before adding the patty.

Quick And Easy Meat Grinding And Pattie Making Tips

  • Freeze your chosen cut of meat for at least 15 minutes before you cut them into small cubes. Meat is easier to cut when cold.
  • Freeze the meat grinding attachment, blade and plate for 30 minutes before use. Meat grinding is easier when meat grinding equipment is cold.
  • Before grinding, break your meat down into small, uniform chunks, about 1 to 2 inches.
  • Grind your meat twice for best results.
  • Season the meat during the grinding process for a more heightened flavour.
  • Once the meat is grounded, gently shape patties without too much mixing and kneading. Shape patties on a platter immediately after they are grounded.
  • Add salt after the patties are formed. Salt is added last as it dissolves muscle proteins, which keep burgers moist and tender.
  • Refrigerate meat patties until cooking time.

4 Tips for Building the Best Burger

Beef tends to be the most common choice of meat for burger patties, but dont feel you should feel restricted to it.

Pork, chicken, turkey, and even more exotic meats like venison are all fair game . You can also mix and match meats to make your own signature burger mix.

Rather than concentrate on the type of meat, well be looking at three factors that can be applied to any kind of meat you might want to use, why you should use freshly ground meat, the fat percentage, and how course your grind should be.

Why A Steak Burger Has Better Beef Flavor

Your garden variety ground beef, no matter how lean or fatty it is, is just thatground beef. It could be from any part of the animal, with varying degrees of flavor, juiciness, and overall quality. Even if its labeled ground chuck, ground round, or ground sirloinmeaning only those cuts can be in the grindits not going to be the same quality as, say, a New York, rib eye, or tenderloin steak.

Now, Im not going to tell you to grind up a New York steak. It might make the best burger possibleand some steak houses definitely make their burgers out of great cuts like that. But if Im going to buy a New York steak, Im going to eat it as a New York steak!

But what I do recommend is buying the highest quality ground beef you can, which is sirloin. It will have the most steak-y, beefy flavor.

I also recommend making it a relatively big pattyabout 6 ouncesto further enhance the meatiness.
