The Ultimate Steak And Kidney Pie Recipe

Steak and Kidney Pie is one of the most classic British dishes around. Buttery pastry stuffed with beef, kidney, onion and gravy, it’s a comfort food staple.

For the ultimate pie you need a good beef stock, flavoured with Worcestershire sauce, and some plain flour to thicken it up. Some people use stout or ale, but we’ve omitted this as we think it tastes great without.

We’ve also opted for puff pastry rather than shortcrust. And as for the meat, our rule is always go for the best-quality meat that you can afford.

braising steak, cut into 2cm cubes

ox kidney, cut into 1cm cubes

Large handful fresh parsley, roughly chopped

x 320g packs ready-rolled puff pastry sheets, chilled

  • Heat oil in a hot pan. Pat steak dry with kitchen paper and brown in batches. Set aside.
  • In the same pan, brown the kidneys. Set aside in a sieve to drain off the bitter juices.
  • Lower the heat and cook the onion for 5 mins. Add the mushrooms and cook for a further 10 mins until soft and brown.
  • Return the steak and kidneys to the pan, along with the parsley and the flour, stirring well to coat. Cook for 1 min.
  • Add the stock and Worcestershire sauce scraping any residue from the bottom of the pan. Season with salt and pepper then bring to the boil. Lower the heat and simmer for 2 hours, stirring occasionally, until beef is tender and gravy is thick and syrupy. Set aside to cool completely.
  • How To Store Steak And Kidney Pie

    • Cover and refrigerate leftover steak and kidney pie within 2 hours and eat within 3 days.
    • To reheat, place the pie on a baking sheet and heat in a preheated 350 F oven for about 15 to 25 minutes, or until it reaches 165 F, the minimum safe temperature for leftovers.
    • The filling may be made a day in advance and refrigerated. Remove it from the refrigerator about 1 hour before you plan to make the pastry and bake the pie.

    • If there is a membrane surrounding the beef kidney, remove it.
    • Cut the kidney in half lengthwise.
    • Remove and discard as much of the visible fat as possible before cutting the kidney into small cubes.
    • Put the cubes of kidney in a bowl and cover with cold water.
    • Add 1 tablespoon of lemon juice or vinegar and a dash of salt.
    • Cover and refrigerate for 1 to 2 hours.

    Ive been travelling overseas for the last five days. I really wanted to cook something for dinner, however, just before I took off for a meeting in Geneva, Id received an e-mail from a friend and she described an experience with tinned steak and kidney pie.

    This friend is a dear person who Ive known for about eight years through social media. Weve not met in person, but she is a wonderful human who is dedicated to her children, partner, and her work.

    The tinned steak and kidney pie is a Fray Bentos® pie and can be found in the supermarket aisles with other tinned meats like Spam and corned beef.

    In my local Coles, its in aisle 7!

    I figured a steak and kidney pie would be best eaten with some mashed potato. Given the convenience of the tinned pie, I went with ready and cook mashed potato.

    To complete the triumvirate of convenience, I added some frozen vegetables which I quickly cooked in some boiling water.

    As it turns out, my tiredness from jet lag was quite bad so a meal of convenience turned out to be a good choice.

    I feel a little cheeky adding a recipe card for this meal, but hey, what the heck, why not?

    Surprised to hear on one of the Royal Documentaries that HM The Queens staff have these pies on standby in case all else fails. I have always loved them the pastry is fabulous, crispy and tasty. The filling can be variable. But, what is there not to like about a pie in a tin?
