Also Great: Opinel No 125 Bon Appetit Set

Wusthof Classic vs Wusthof Ikon Steak Knife.

Several testers diverged from the pack on steak knife aesthetics, preferring something with cleaner, modern lines instead of the traditional look. If that also describes you, the Opinel No. 125 Bon Appetit Set, which used to be called the South Spirit, is our recommendation. The Opinel blades are noticeably less sharp than the Messermeister and Wüsthof, but they still cut our tough test-steaks neatly and efficiently. The beautiful handles are made of olivewood, which, in addition to being pretty, is naturally water-resistant .

The Opinels underperform noticeably in one category: weight. At just 35 gramsbarely more than an ouncethey feel insubstantial in the hand. They also come in a simple cardboard case that wont last long in your silverware drawer youd want to store it somewhere less trafficked like a high shelf. But on looks and performance, theyre winners at the price. Lastly, if youre looking for something to brighten your table, Opinel makes a version of this knife set thats fitted with colored hornbeam-wood handles. You can also buy the knives open stock if you want to build your own set in different colors.

The originalwith a traditional triple-riveted polypropylene handle and a full bolster. Well-balanced and not too heavy. Holding it in your hand, you feel like a pro.

BOLSTERIn a traditional forged knife, the bolster is that narrow wedge of steel that separates the handle from the blade. Wusthof Epicure Chef Knife

Wusthof Classic Knife Block Set with Forged Steak Knives ...

BUY NOW $130190 The Epicure was custom-designed for Sur La Table in partnership with Epicurean . Thus, the recycled-wood-fiber handle thats made of the same material as Epicureans Richlite boards. The Wusthof engineers went back to basics and retooled everything, not just the handle. Notice the subtle, continuous arc of the spine, the shape of the blade , and the full-sized bolster . Its even got a ceramic coating for protection and to help prevent food from sticking.

The blade is a touch wider than both the Classic and Ikon which means it will offer more knuckle clearance. The handle is roomy as well. So, if you have large hands and are always feeling cramped, the Epicure is worth checking out.

For me, I have reservations: 1) My hand tends to swim in the handle, and 2) the balance tips forward too much. Some folks may not mind this, or even like itI prefer a knife more evenly balanced. Bottom linealthough I love the look of the Epicure, I still favor the Ikon series or the Classic. Small collection: 8 knives total including 6-, 8-, and 9-inch chef knives and a 7-inch santoku which I lovebecause the handle feels better and it balances perfectly. What Is The Best Knife For Cutting Fruit

Kyocera 3-inch Ceramic Pairing Knife

This knife may be as fragile as fine china but it is the indispensable small, sharp knife in my kitchen. Ceramic knives are made with a thin and almost razor sharp ceramic blade. This means that if you drop one, it will shatter. These pairing knives can also get nicked but with careful handling, theyll last for decades and keep retain their edge without sharpening.

Ive had one Kyocera ceramic knife for over 15 years. It shows little wear other than some staining on the blade from cutting tomatoes. And speaking of tomatoes, thats exactly why I love this knife. It is the perfect tool for cutting soft fruits like strawberries and tomatoes, even mangoes, with a clean edge, no bruising or crushing.

Upgrade Pick: Wsthof Classic Ikon Set

*At the time of publishing, the price was $300.

Our testers all favored the Ikon’s classic understated elegance.

The Wüsthof Classic Ikon steak knives arent cheap, but they are the cheapest of the three high-end sets that we tested. With little to distinguish between the high-end sets on performancewhich was universally exceptionalaesthetics played the largest role in this pick, and our testers all favored the Ikon’s classic, understated elegance. Their razor-sharp blades have the ideal upswept shape. The unique double-concave curves of their satiny black POM handles fit the hand wonderfully both our smallest and our largest tester found them the most comfortable to hold of all the knives we tested. Their full-tang construction adds strength and, at 77 grams/2.6 ounces, pleasing heft. Lastly, their construction is flawlessas it should be for the price. Because in truth, its the flawless fit-and-finish, more than anything else, that separates an exceptional luxury steak knife from a really great mid-priced oneand that you pay for.

One criticism: the Ikons come in a simple, clear plastic box. Its sturdy enough to use for knife storage but left us wishing for something more distinguished-looking, particularly if the knives are intended to be a gift. For about $100 more, the blackwood-handled Ikon steak knives come in a walnut case its unfortunate that this is not an option for the standard model.

Wusthof Chef And Paring Knife Sets

Wusthof Classic Steak Knife Set & Reviews

This is my favorite type of knife set to recommend because you get two out of the three core knives every kitchen should havea chef and a paring knife. Pure muscle, no fat.

The sets below feature an 8-inch chef and a 3 1/2-paring knife. An 8-inch chef knife is the standard for home kitchens and theres a reason whyits big, but not too big. These sets run from around $120 to $200. There are cheaper chef-paring knife sets that feature 6-inch chef knives. But unless you know for sure you want a shorter chefs, I dont recommend them.

    Wusthof Classic 2-Piece

As Ive already mentioned, santoku knives can stand-in for traditional chef knives. The size I recommend is a 7-inch blade. And thats the size that comes with the sets below.

    What Are Forged Knives

If you are ready to invest in quality, you should understand the difference between stamped and forged knives. These knives are made from a single bar of metal that is heated and pounded into shape. Forged knives are not only known for being the most durable, they tend to hold a sharp edge very well.

The process to make forged knives is more time consuming than the process of making stamped knives. But as a result, a good forged knife tends to have great balance and better durability, not to mention a higher price tag, than a stamped knife. That being said, you can find high quality stamped knives and badly made forged knives, so dont let this be your only factor in choosing a knife to buy.

Classic Vs Ikon: What Are Their Similarities

As I mentioned in the beginning, Wusthof Classic and Wusthof Ikon knives are more similar than they are different.

They are both manufactured the same way using the same material for their blades. They are sharpened to the same degree, and the metal of their blades have the same hardness. Lastly, they come with the same limited lifetime warranty that is standard across all Wusthof forged knives.

In the following sections, I provide more detail on these similarities so you can learn even more about Wusthof knives before investing in a set.

Our Pick: Messermeister Avanta Pakkawood Set

The Messermeister Avanta Pakkawood steak knife set was our clear winner. No other knives came close to matching their combination of performance, price, and quality of construction. Their blade-edges are well-formed, smooth, and extremely sharp they cut even the toughest steaks as well as knives we tested that cost five times as much, which cant be said for most others in their price range. Their handles are finished with pakkawood, a durable resin-impregnated natural wood usually only found on more expensive knives. And unlike any other knives we found at the price, they feature full-tang construction: A single piece of steel forms the blade, bolsters, and handle. This adds strength , balance, and heft. The latter is an aesthetic concern, but an important one: 2015’s test revealed that a knife weight of around 80 grams feels just right in the hand. The Messermeisters weigh 89 gramspleasantly robust, and significantly nicer to hold than the lightweight knives typical at this price.

No other knives came close to matching their combination of performance, price, and quality of construction.

Also unique to the Messermeisters price range, their handles are finished with pakkawoodan industry term for resin-impregnated natural woodinstead of the more-common cheap plastic or unfinished wood. Pakkawood is strong, durable, and stablebasically, it doesnt absorb water or dry out and expand or shrink accordinglybut retains the rich and variegated look of natural wood.
