The Wusthof engineers went back to basics and retooled everything, not just the handle. Notice the subtle, continuous arc of the spine, the shape of the blade , and the full-sized bolster . With little to distinguish between the high-end sets on performancewhich was universally exceptionalaesthetics played the largest role in this pick, and our testers all favored the Ikon’s classic, understated elegance. Their razor-sharp blades have the ideal upswept shape. The unique double-concave curves of their satiny black POM handles fit the hand wonderfully both our smallest and our largest tester found them the most comfortable to hold of all the knives we tested. Their full-tang construction adds strength and, at 77 grams/2.6 ounces, pleasing heft. Lastly, their construction is flawlessas it should be for the price. Because in truth, its the flawless fit-and-finish, more than anything else, that separates an exceptional luxury steak knife from a really great mid-priced oneand that you pay for.

    This is my favorite type of knife set to recommend because you get two out of the three core knives every kitchen should havea chef and a paring knife. Pure muscle, no fat.

    The sets below feature an 8-inch chef and a 3 1/2-paring knife. An 8-inch chef knife is the standard for home kitchens and theres a reason whyits big, but not too big. These sets run from around $120 to $200. There are cheaper chef-paring knife sets that feature 6-inch chef knives. But unless you know for sure you want a shorter chefs, I dont recommend them.

    If you are ready to invest in quality, you should understand the difference between stamped and forged knives. These knives are made from a single bar of metal that is heated and pounded into shape. Forged knives are not only known for being the most durable, they tend to hold a sharp edge very well.

    The process to make forged knives is more time consuming than the process of making stamped knives. But as a result, a good forged knife tends to have great balance and better durability, not to mention a higher price tag, than a stamped knife.
