How to grill the best New York Strip Steak of your LIFE!

The best way to ensure the most succulent, juicy NY Strip Steak every time is to check the temperature with an instant read probe style thermometer so you dont overcook it. I personally like my steak cooked medium-rare to medium. These temperatures create the juiciest steak because the moisture inside the steak cant escape at these low of temperatures. I dont recommend cooking your Strip Steak above 150 degrees, as it will become tough, dry and chewy.

Use the below temperature chart to gauge your steaks doneness. To check the temperature, insert the probe of an instant read meat thermometer into thickest part of the steak. You want the temperature to register 5°F lower than the desired doneness temperature because the steaks will continue to cook and rise in temperature while resting.

NOTE: The USDA recommends steaks and roasts be cooked to 145°F and then rested for at least 3 minutes for safety.

    • Seasoning: we love the simple combination of herbs and spices in our all-purpose “house seasoning,” but you can substitute with any seasoning blend of your choice.     When grilling a NY strip steak we will follow all the same basic steps as grilling any higher end cut of beef. While using a slightly lower heat and keeping and eye out for flare ups caused by the melting fat from the edge.

    Step 1: Remove the strip steaks from refrigeration at least 1 hour before grilling and season to taste. For almost any steak we will only season with either salt and pepper or Lawreys seasoning salt. In either case use just a light dusting that covers the entire steak. If you feel like you must cover your meat while out of the fridge, set a paper towel over the top. Over this hour not only will the steak be reaching room temperature it will be breaking down and absorbing your seasoning.

    Step 2: Preheat your grill to a medium high heat, when grilling with charcoal have multiple heat zones available. We use a lower heat then normal here to help slow down the cooking process. If using a gas grill you may preheat to high to get better grill marks, just turn down the heat before the steaks hit your grates.

    Step 3: Grill a NY strip steak directly over the flames for 2 to 4 minutes, depending on thickness. Until they no longer stick the grill grates. If you only used dry seasonings they will release on there own when they are ready. If you are cooking a thin cut strip and it takes more then 3 minutes to release from the grates jump to step 5 and check your temperature.

    • Room Temperature Meat: Let the steaks rest on the counter at room temperature for at least 15 minutes before grilling. This will take the chill off of the meat and help the steaks cook evenly.

    Some of the biggest reasons a steak might not be flavorful is the cut or quality of steak itself or the steak might not be seasoned well enough. For this recipe I grilled up a Private Reserve 14oz beef strip loin steak from Omaha Steaks. These are thick, beefy, robust steaks of extraordinary quality.

    Once you have a great cut of beef, you just have to know how to season grilled steak appropriately. More often than not, people tend to under season their beef. If you are just salting a steak, I prefer to use kosher salt. You can see and thus control how much salt lands on your steak prior to or after cooking.

    If you are using a seasoning blend, be quite liberal with how much you put on the steak. Remember, some seasoning will stick to your plate as your carry it to the grill or your stove. Some seasoning will also stick to the grill itself or possibly the pan you cook it in.

    A strip steak is a cut of beef that comes from the short loin of the cow. Youve likely heard of the T-bone steak or the porterhouse steak read my blog about the difference between those two cuts if youre interested.

    In any case, both of those steaks are actually a combination of the filet mignon and the strip steak. The strip steak is slightly less tender than the filet mignon, but it generally has better marbling. Better marbling equates to more flavor, of course.

    One you have the technique down for cooking New York Strip Steaks, you can go rogue and create all sorts of variations. Here are a few to try:

    • Use garlic butter. Swap the harissa butter for 3 tablespoons room temperature butter and 3 smashed garlic cloves. Add them when the recipe calls for harissa butter.
    • Use herb compound butter. Swap the harissa butter for a simple compound butter made with butter, 1 tablespoon herbs such as any combo of chives, parsley, thyme, oregano etc., 1 teaspoon lemon zest and 1 teaspoon Dijon mustard.
    • Add dipping sauce. Instead of the harissa butter, pair the steak with barbecue sauce, horseradish sauce, Béarnaise sauce, mushroom sauce, peppercorn sauce, red wine sauce, balsamic reduction, mustard sauce, blue cheese sauce, chimichurri, salsa verde and of course, good old steak sauce.
    • Use different seasoning. I am obsessed with this spice rub, but you can also experiment with different seasonings like the one I use in mysirloin steak, barbecue brisket and ribs recipe, or Fajita seasonings, or Asian inspired seasonings such as Chinese 5 Spice, ginger and garlic.
    • Use different types of wood. If you have a charcoal grill, you can add different kinds of wood to the fire to contribute smokiness and enhance the overall flavor of the grilled steak.

    For The Compound Butter:

    The harissa compound butter melts over the hot Strip Steak and drenches each bite with buttery, juicy, smoky, spicy goodness. For the butter you will need:

    • Butter: use unsalted butter so you can salt to taste. You dont want to ruin your NY Steak by making it too salty!
    • Harissa paste: is a hot chili paste made from spicy red chilies and often includes garlic, cumin, coriander, and caraway seeds. It is spicy, smoky, a bit tangy and earthy with more deep, complex flavor than just chili paste.

    • Lemon zest: brightens the butter and cuts through the heat.
    • Mint: its not the end of the world if you dont add it, but you will love the subtly sweet taste and cool sensation paired with the earthy cumin.
    • Chives: are meant for steak! They taste like mild onion with a slight garlicky note but they are actually classified as an herb verses an onion. When purchasing chives, look for plump green stems without brown spots or wilting

    How To Buy Strip Steaks

    If you have a choice and can discuss it with the butcher , try to get a steak from the rib end of the tenderloin.

    Buy the best grade of beef you can afford. USDA Prime is the top of the range, with only about 2% of the beef in this country earning that label. This will ensure that your beef has nice fat marbling throughout, which is what gives beef steaks their incredible flavor, not to mention tenderness. USDA Choice comes after that, and within Choice there are different levels, so once again, it will come back to the conversations you have with your butcher as to what is best behind the meat counter that day. The grade Select is below Choice, and will be leaner still.

    A freshly cut steak should be a pretty bright red color, and have no dark spots. It will turn a more brownish red as it ages, which doesnt mean its bad, just that it was not cut as recently, and the exposure to oxygen causes the darkening of color. Steer clear of any streaks with an odor that is slightly sour, or anything but fresh.

    I don’t oil the strip steaks. I can’t detect a difference compared to oiling the grill’s grates.

But remember, salt will pull water out of the meat, and it will take about an hour to be reabsorbed.
