How Long To Grill A Steak On A Charcoal Grill

For a long time Ive preached theRule of Threesfor explaining how long to grill a steak on a charcoal grill. The method is basically 3-3-3-3. That means:

  • grill steak side 1 over direct heat for 3 minutes
  • grill steak side 2 over direct heat for 3 minutes
  • Flip steak and grill on side 1 over indirect heat for 3 minutes
  • Finally turn steak and grill on side 2 over indirect heat for 3 minutes
  • Ive gotten a lot of positive comments about the method but Ive also caused a bit of confusion. Lets re-examine the method.

    Tips For Grilling With Gas

Setting up a two-zone system is easy to do with a gas grill. When weâre cooking steaks on a standard four-burner grill we turn the two middle burners on medium to medium-high and leave the two outside burners off or on low if weâre grilling veggies or other items as sides.

A couple of other tips that work no matter what type of grill youâre using:

    • Take the steaks out of the fridge and let them come up to room temperature. This usually takes 30 to 40 minutes.
    • Get a good pair of long-handled tongs to handle the steaks and avoid burning yourself.
    • Let the grill come up to temperature and clean off the grate before putting the steaks on.
    • Use the steaks internal temprature to determine doneness.

What’s The Best Cut For Grilling

    Best Charcoal Grill for Steaks

While personal preference is certainly a big factor when choosing the right cut, steaks with significant fat marbling are always going to be preferable for grilling because when it comes to steak, fat equals flavor.

You’ll also want to pay attention to the thickness of the steak. Thicker steaks about 1 ½ to 2 inches are the best choice for beginners because they’re harder to overcook. Thick, well-marbled cuts recommended for grilling include ribeye, strip , and filet mignon .

Cheaper cuts like skirt and hanger steaks are also good for grilling, but there’s more room for error with these, as they are thinner cuts. For best results, marinate overnight and use a meat tenderizer to break down the muscle fibers.

    How To Prepare Battered Fish

The battered fish is prepared following these steps:

  • Pass the fish through the freshwater jet.
  • Season it with salt better if it is fine, leaving it about 10/15 minutes to take it well.
  • At will, but generally, with perfect results, squeeze a little lemon on it. With it, the fish reaffirms its consistency, and its meat acquires an excellent white color.
  • Dry it lightly with a cloth before wiping it with flour, as the floured fish must be dehydrated and with a thin layer of powder well adhered to the meat. You can go to the frying pan if you do not want to batter. If you opt for the batter, you will then go through beaten egg, to which you can add a splash of water or, better still, milk.
  • The oil should be very hot before it starts to smoke, and the oil should be abundant and the frying pan rather deep, so that the fish will be swimming while frying. Do not overfill the frying pan with fish portions, as this will lower the frying temperature more than necessary so that the fish will end up cooking and absorbing more oil than it should. In this way, a frying crust is formed on both sides that act as a barrier, preventing the muscular water of the fish from evaporating and, consequently, from drying out.
  • Ideally, once the portion of the frying pan has been removed, place it on a grid or absorbent paper, so that you will lose the excess oil. Serve hot.
  • The best way to fry is with smaller cuts or portions of fish, such as fillets, ventresca or thin slices.

How To Use A Charcoal Grill Vents To Control Temperature

Oxygen and how you manage it is at the very heart of taming the flame and controlling temperatures on your charcoal grill. Together, oxygen and fire are your two fuels on charcoal grills, and controlling both is the goal of every successful griller.

The more oxygen your lit coals have access to, the hotter the fire will burn. If you limit how much oxygen gets into your grill, the lower the fire will burn. This is the very essence of how to control the temperature of your grill.

The way to control how much oxygen is feeding your flames is to manage the vents. And I mean micro-manage the vents.

Your fire is a living thing and changing every minute. Without your vigilance, temperature and cooking conditions can change fast.

So while youve got one hand on your beer, always also keep one eye on your vents.

There are always at least two vents on a charcoal grill that work together as your grills temperature control. Heres how you should use them:

    Grill Temp For Steak:

For the best results, preheat your grill to 500 degrees F if you use a gas grill. If youre using a charcoal grill, be sure the coals are much lighter in color before you start grilling.

The best way of achieving the perfect cook on a steak is to use a meat thermometer.

Because we grill at such a high temperature, it is best to use a Wireless Meat Thermometer once the steak has a nice sear on both sides.

This way, you dont ruin a thermometer , and you have an accurate read on your steak without having to constantly check it or lift up the grill lid.

    Final Temperatures for Cooking Steak:

    • Rare: 115-120 degrees F
    • Medium Rare: 125-130 degrees F
    • Medium: 135-140 degrees F
    • Medium Well: 145-150 degrees F
    • Well Done: 150-155 degrees F

    Season Early And Intentionally

Charcoal grilling – How to grill a porterhouse steak

If you season properly, you wont taste the salt. Salt is a flavor enhancer it brings out the flavor of whatever it touches. When you salt the beef correctly, you taste more beef, not more salt.

Bring the steak home and salt it 24 to 48 hours before you cook it. There is considerable disagreement on this, but I prefer to salt early. This steak is inbound for dinner tomorrow, so season the night before, at the latest.

Not all salts are the same: Each type of salt has different amounts of sodium per volume because of the grain size. If you are using a different type of salt than the recipe specifies, then your results will be off. Something might be over- or under-seasoned. See conversions below.

2 teaspoons Diamond Crystal kosher salt = 1 ½ teaspoons Morton kosher salt = 1 teaspoon table salt

Whichever type of salt you use, get familiar with it and stick with it. My preference is Diamond brand kosher, so thats what I use in my recipes.

Amount of salt per pound of meat: 1 teaspoon of Diamond kosher salt per pound of meat.

Sprinkle it on with your fingers from about 6 inches above the steak for even distribution. It might seem like a lot of salt, but its all going to be absorbed into that big steak and not stay on the surface.

Dont marinate a high-quality steak like this. You just want to taste the steak, salt and the grill.

Easy Steps For Grilling Filet Mignon

Filet mignon is a tender, boneless strip of meat and is a popular menu item at steakhouses everywhere. But how can you cook a perfect filet mignon on your home grill? Learning how to grill filet mignon is simple when you have the right tools. Follow the simple recipe below for a perfect, mouth-watering steak.

Dont Cook Your Steaks Straight From The Fridge

Prentiss recommends taking out your steak from the fridge about one hour before youre going to cook it and setting it on a roasting rack.

Sharp prefers to season his steaks a couple of hours in advance, and then agrees about letting them come to room temperature before cooking. Theres an exception, however: If on the thinner side, he says, starting it cold will give a buffer from overcooking the center.

While chefs differ about the amount of room temp time before cooking, chef Dinesh Jayawardena recommends not squeezing the time below a half hour.

    Gas Vs Charcoal Grills

Most people will tell you that charcoal or wood-fire grills are preferable for grilling steaks because they bring that smokey, charred flavor. If you are using a charcoal grill, skip the charcoal briquettes and lighter fluid, as these can add a kerosene flavor to your steak. Instead, opt for wood or natural, hardwood lump charcoal .

But dont fret if you have a gas grill. The heat is ultimately more important than how you get it. You can still achieve great results with a gas grill. And gas grills allow for greater precision and control over the heat, which is definitely a plus for the amateur and the grill-master alike.

Option 3 Pyramid Of Coals And Firelighters

Create a small pyramid of coals on your charcoal grate, with a couple of fire starters in there toward the bottom. Then light the firs starters and wait for the coals to catch.

Kind of old-school, but it still works.

This method will take a little longer because you have to wait for the fire starters to light the coals and get them going on an open grate.

Amp Up The Flavor With Butter Sauce

Charcoal Grilling Basics: Lesson 3 – Steaks

When I first began work on this recipe, I tried dry rubs, oil, and simple salt and pepper. All of these are wonderful things to put on steaks, but I felt like it needed more.

I settled on basting the steak with an herbed butter sauce. First, because butter. Second, because I have an extensive herb garden and it didnt require a trip to the store. I was worried that the butter might burn on the grill, and leave an acrid flavor, but it didnt.

It was pure deliciousness. The herbs added complexity without masking the meatiness of the steak.

Grilling Problems To Look Out For

Lets go through one more hypothetical grilling problem. Lets say Mrs. Grilling 24×7 finds a fantastic sale on porterhouses at the local grocery store but they are ½ inch thick steaks.

She means well and by no means will I force her to return the steaks. Leave the steaks in the fridge right up until they are ready to be grilled.

I would have a high heat and I would grill the steaks for 3-3-0-0. Yup, I would toss out the indirect cooking times.

I most certainly would keep the 3 minutes of direct heat for each side because the nice char would still be necessary.

However, the steak is much thinner so the cooking time will be reduced dramatically.

    Selecting The Right Cut

First, a definition. Steaks are basically any piece of meat that falls under the category of “fast-cooking” cutscuts that are low enough in connective tissue that they don’t require the long cooking times that “slow-cooking” cuts require. The difference between a steak and roast essentially comes down to size. Any good roast can be cut into individual steaks .

How To Grill Steak On A Charcoal Grill

Steak is many people’s favorite choice for cooking over outdoor grill ideas. As the Bar-Be-Quick team explain, hanger steak and skirt need to be cooked over the highest direct heat and won’t take long at all. But, most other types will need to be cooked to preference. A food thermometer makes it easy to get this right aim for around 140°F for rare, 158°F for medium and 167°F for well done.

If you’re going for brisket or ribs, you’re in for a much longer cooking time. Cook them on indirect heat for at least two hours, with the lid of your grill shut.

To make a tasty BBQ marinade for steaks, try combining two tablespoons of Worcestershire sauce with one tablespoon of olive oil, adds the team.

    Top Tips For Barbecued Steak:

    • Preheat the barbecue to the correct temperature before adding the steak. As a general guide, you should be able to hear a sizzle as the steak hits the hot surface. The heat seals the surface, trapping the juices inside.
    • Bring steak to room temperature just before cooking. The meat can become tough if it goes straight from the fridge to the barbecue.
    • Drain any marinade from the steak before placing it on the barbecue to cook. Excess liquid can ignite on the barbecue and cause a flare-up. Plus, if youre cooking steak on a flatplate, the liquid can boil around the meat and make it tough.
    • Limit the number of steaks cooking on the barbecue at any one time. Overcrowding reduces the heat, which can prevent the steaks from cooking evenly and cause them to release juices, making the meat tough.
    • Use tongs to turn your steak. Sharp forks can pierce the surface, which allows the juices to escape.
    • Cover the steak loosely with foil before resting to keep it warm. If you cover it tightly, the meat will sweat and lose its moisture.
    • Clean your barbecue grill or flatplate with a stiff wire brush or scraper while its still warm. This leaves it ready for your next barbie.
