Seasoning Your Steaks In Advance

The Best Steak Marinade

If you’re ok with starting early and want to give this method a try, here’s how: Pat the meat dry with paper towels and sprinkle both sides of the steaks generously with Kosher salt. Be sure to get the salt on the edges of the steaks as well. That’s 1½ inches of surface you definitely want to cover. Press the salt crystals into the meat with your hands.

Transfer the steaks to cooling racks with a sheet pan or cookie sheet underneath, cover the whole tray with plastic wrap and stick them in the fridge, for up to 24 hours. Take them out about 30 minutes before cooking, pat them dry again with paper towels , season with freshly ground black pepper , and then grill as you normally would. The reason to pat them is that a dry steak will form a browner crust when it’s cooked.

What Steaks Are Best For Grilling

  • Ribeyes
  • T-bones
  • Porterhouse

The list can go on and on. Reaching for a quality steak will give you that tender and flavorful steak you want.

We generally reach for KC strips or Ribeyes when we do steaks on the grill. But feel free to use your favorite cut of meat.

Depending on where you live will also play into what is available in your area. Pair your steak with this summer berry salad!

What Are Some Of The Best Spices For Steak

Many people will say that the less seasoning you use on a steak, the more enjoyable it will be. The reality is that even a good cut of meat will need some seasoning if you want to maximize your enjoyment and the nutritional benefit that you get from it. You want simple seasoning so that you enhance the flavor of the meat rather than hide it. To get a truly flavorful steak, consider seasoning it with the following spices.

What Makes A Great Steak Seasoning

A good quality steak really only needs salt and pepper, but the addition of a few other herbs and spices can bring out the best flavors of your steak!

The best steak seasoning always has salt and pepper as the core ingredients. I suggest coarse ground pepper and either kosher salt or Himalayan salt depending on what you have on hand .

The other herbs are used in just the right amount, so as to not overpower or take away from that wonderful steak flavor! Onion powder and garlic powder just go with steak.

If you like to pan sear your steaks with fresh garlic cloves, you can omit the garlic powder or drastically reduce the quantity.

The additional dried herbs, rosemary and thyme, are also herbs that are a classic pairing with steak. Either fresh or dried, both herbs highlight the steak flavors and add a lightness that works well with all of the savory elements in the seasoning.

Paprika is another one of the savory elements you want to add to the spice blend. Not only does paprika add flavor, but it also helps the steak to caramelize for a superbly colored steak.

I use smoked paprika. It’s a spice rack essential for me, and has become readily available at most grocery stores in recent years. If you don’t have smoked paprika, see my notes below on paprika vs smoked paprika and smoked paprika substitution.

Price And How Your Budget Relates To It

While most store-bought steak seasonings arent going to be especially expensive, that doesnt mean that they all come cheap either.

Sometimes you might want something simple that costs very little, while other times you might want to spend a bit more for a premium spice blend. A huge part of this comes down to your budget and how seriously you take steak seasonings.

If your budget is minimal, you may want to choose a less expensive seasoning or a smaller container or a high-quality one.

Those with higher budgets may want to try something new and more expensive or just get more of a favorite family seasoning.

Seasoning For Grilled Steak

Come summertime, barbecuing is probably the most popular family event of the season. This might involve these great BBQ appetizers, ice cold beers , and grilling a few steaks.

Steakhouse flavor is not to everyones liking. Flame-grilled, peppery steak can be a little overwhelming and smoky. Thats not to say that you cant grill a steak without it tasting like it came from a steakhouse.

Instead of brushing the steak with barbecue sauce, brush it with some groundnut oil. It has a mild flavor and can withstand high temperatures. Olive oil will heat too quickly over a flame and potentially ruin your steak. Always make sure your meats are cooked to safe temperatures by using a good meat thermometer!

The Organic Depot produces excellent cold-pressed groundnut oil, which is perfect for grilling steak. Its mild taste wont overwhelm the steaks natural flavor. If you like, you can add to it your own blend of ground pepper, kosher salt, and your choice of spices. As a tip, paprika always goes well on a grilled steak, as does chilli powder if you want a spicy kick!

To make a marinade from your steak seasoning, simply add olive oil to your dry rub and add to your meat and let it rest before cooking. Making the dry rub into a marinade ensures even distribution of the spice blend. I like to brush my steak with olive oil and sprinkle my dry rub on it but when grilling, my husband prefers to use the seasoning as a marinade.

Do You Marinate The Steak Overnight

On average, I would recommend marinating the steaks for no more than two hours.

The reason is that the marinade does not get past the upper layers of the meat.

So marinating the steaks overnight is unnecessary, especially if you are using ribeye steaks or other relatively more tender cuts.

Marinating steaks overnight can be applicable if you use tougher cuts such as skirt steaks.

What Is The Best Way To Tenderize A Ribeye Steak

Ribeye steaks are not usually too tough, but there are instances where it can get too hard that the rub does not get into the meat. There is a simple solution to this problem.

You can use a meat tenderizer to make the ribeye softer but the safest way to do this, in my opinion, is to simply rub a tablespoon of kosher salt on each side of the steak.

Use your hands to press the salt into the meat to break down the meats connective tissues and fibers. This will help the ribeye steak become more tender when cooking.

How To Use It

Speaking of using up all the seasoning mix, here are 9 of my favorite ways to use it at home!

  • As a steak rub. This one is pretty obvious, but it really is the best way to season a steak! Simply use it as a dry rub by rubbing it on the outside of a steak before grilling, pan-searing or oven-roasting it.

Whats The Benefit Of Steak Seasoning

McCormick Perfect Pinch Steak Seasoning, 7 oz

Steak seasoning refers to any herbs, spices, or spice blend mixtures you use on your steak to boost its flavor profile. Although many people season their steaks before cooking them, they may not know the benefits behind steak seasoning.

One of the obvious benefits is that steak seasoning gives steak a flavor boost that enhances its natural flavors. Sure, you love the flavor of steak on its own. But when you add some sea salt and ground black pepper to your steak before cooking it, you bring out even more of that savory flavor you love.

Seasoning a steak has another not-so-obvious benefit: it can tenderize the meat. Any good steak recipe will call for salt, and thats because salt draws out moisture in the steak. This process, known as dry brining, creates a brine that, when the steak cooks, gets reabsorbed back into the meat to tenderize it. Theres a lot of science that goes on behind the scenes to make your filet mignon or sirloin steak delicious!

    Cooking The Steak After Seasoning

Done with seasoning? If so, then it is time to prepare the steak properly and maintaining it because after working so long, it is inevitable that you do not want to waste your steak. There are several ways to cook steak thus, some of them are below.

    Frying in the Pan

Frying over pan is the quickest method to put the steak in your stomach. You need to take the seasoned steak out of your refrigerator and put it into the pan and fry it. However, it is not the healthiest process to do because it is always better to eat freshly fried steak.

    Grilling the Steak

Grilling can give you the best taste if you can do it properly. Besides, you may prefer using charcoal rather than gas because it gives you a great smoky flavor. And also, keep the fuel and the food in different sections.

Broiling the Steak in the Oven

You can also cook your steak by broiling it in the oven. But it might be a quite risky method as in high temperatures, it can get burned. However, by maintaining the heat properly, you can cook the steak well.

    How To Make It

Combine all of the ingredients together in a small bowl or jar.

Store in a mason jar or airtight container, in the pantry, for up to 6 months. While the seasoning mix will stay good in the pantry for much longer than 6 months, after 6 months, the spices will begin to lose their flavor.

Thats why I recommend labeling the steak seasoning with a date and trying to use up the seasoning mix within 6 months. In my house, we double this recipe and its easily gone in a month, so I dont think youll have a problem using it all up!

When To Season Steak Heavily And When To Cut It Back

You might notice that most steak recipes have one thing in common: they tell you to season steak generously. But you might wonder just how generous you need to be to avoid overseasoning your steak. Its a common conundrum, but were here to help.

Generally, the amount of steak seasoning you need depends on how thick your steak is. The seasoning sits only on the outer side of the steak, so the middle of the steak doesnt get seasoned. Therefore, thicker steaks require more seasoning to ensure that you get a flavorful bite, whereas thinner steaks dont need as much because you wont be eating as large of an unseasoned portion in each bite.

So, strip steak, filet mignon, ribeye, and other thick steaks typically call for a generous amount of seasoning. But flank steak and flat iron popular thinner steaks may not need as much to achieve the same taste result.
