Costco Vs Sams Club Brisket Which Is Better
Most people prefer the brisket at Costco, although both are very similar and high quality. Costcos brisket is perceived to have slightly better flavor and texture.
As weve seen in previous sections, meat is graded, and most good stores offer good quality meat.
To decide which club has the better brisket, wed have to get started knowing two things: whats termed brisket and how to tell which one is better. Brisket is the Holy Grail of meat.
The name brisket derives from old Norse, and it means cartilage. Its cut from the breast or lower chest of veal or beef. Its the pectoral muscle and weighs between 12-20 pounds. You can see that it can be large.
This is why its usually cut into two pieces: the flat and the deckle point.
The first is leaner and cuts easily, while the second is marbled. The flat is carried by most grocery stores. Both are called packer briskets and offer you greater value if you can afford it.
Go for Select grade if youre on a budget.
But Prime is ideal. Go for one whose flat is at least 1 inch thick at the end. Flat or point? You always want meat thats marbled.
But, if you dont want a lot of fat, flat is better. Costco or Sams club? Taste is subjective. But, many experts give it to Costco. Here is an example of a test.

What Steak Is Best For This Appetizer
Most cuts of steak will work for this recipe. Its easiest to work with a boneless cut, but you can also use a bone-in cut like a T-bone . Some great options are:

Just make sure you cut the steak into even, bite-sized cubes for even cooking. Dont cut the cubes too big, this is a one bite appetizer.

We suggest cooking Members Mark steak within 1 2 days after purchase. To create Country Fried Steaks, season with salt, pepper and garlic powder on both sides. Cook in a skillet over medium heat with melted butter and sliced onions. Brown steaks on each side. Once steaks are brown on each side, add 1 cup of water. Place lid on skillet and simmer steaks for 30 minutes. Serve with sides like mashed potatoes, vegetables,and a dinner roll. Cube steaks can also be breaded by coating the steaks with flour or cornmeal.

Where To Buy Meat
Big box stores tend to have the best prices when it comes to meat for beef jerky. These include the main two, Sam’s Club and Costco. If you like purchasing local, great! Local butchers have great cuts of meat, they just tend to be more expensive. However, you are supporting local businesses.
Unfortunately, I do not have any good butchers locally and so I shop at Sam’s Club. Moisture must first evaporate before the browning can happen, so you want to get rid of as much as possible from the start by dabbing your meat with a paper towel. Also, dont season your steaks with salt until right before you cook them. You want the moisture inside your steak, not outside.
Chef Matthew Pro-Tip: Too much moisture on the outside of your steak translates to spotty browning and caramelization.
Add the steaks to the pan, making sure that you hear a loud, satisfying sizzling noise when you do. If you dont hear a loud sear, you done messed up. The pan is not hot enough. No steak for you. Try again.

Is Boneless Or Bone In Ribeye Better
Conventional wisdom says bone in meat is generally better however, I find that there are pros and cons to each. While a bone in steak will often be juicier and arguably slightly more flavorful, a de-boned piece of meat will be easier to cook evenly.
I know it is contrary to what most experts recommend, but for this reason I usually purchase boneless rib eye steak.

Smoke Em If You Got Em
Although it is non-traditional, you can absolutely smoke a tri-tip, and it is delicious. Season the beef, make your fire out of oak wood, and cook it at about 225 degrees for around 3 hours or when the beef reaches an internal temperature of 135 for medium-rare. Once the meat is at temp, allow it to rest, then slice and serve. The pink smoke ring will be somewhere around ½-inch because tri-tip is a low-fat cut, so the smoke penetrates it perfectly.

How Do I Cook A T
No matter which cooking method you choose for Angus beef steaks, they all require high heat and short cooking times. Flavoring the steaks can be as simple as sprinkling sea salt and pepper over both sides or using your favorite spice rub. For many, the natural juices and flavors are the best, and the salt and pepper brings those out even more.
Pan searing Angus steak requires a cast iron or other heavy skillet preheated until its smoking hot. Add some oil and butter to help prevent sticking. Cook the steak for three or four minutes on one side, flip and do the same for the other side. The internal temperature should be at least 135°F for medium rare or 125°F for rare. For grilling, make sure the coals are white hot with a red center if using charcoal, or preheated to moderate-high for gas. Cook the steak on each side for three to six minutes depending on your desired doneness. For broiling, let your oven preheat to broil and cook for three to four minutes per side.
